Because they usually contain a type of protein called gluten, which causes problems for people with celiac disease. What Is Gluten? The digestive system is the set of organs that digest food and absorb the important nutrients the body needs to stay healthy and grow. One important part of the digestive system is the small intestine, which is lined with millions of microscopic, finger-like projections called villi (pronounced: vih -lye). Nutrients are absorbed into the body through the villi. People who have celiac (pronounced: see -lee-ak) disease have a disorder that makes their bodies react to gluten. When these people eat gluten, an immune system reaction to the protein gradually damages the villi in the small intestine. When the villi are damaged, the body is unable to absorb the

All wheat, oats, barley, and rye were eliminated from my diet. After 3 months, I woke up feeling like a new person. The problem began in about 1992 when I was 62 years old. Symptoms included gas, incomplete or partially passed stool, and an unpredictable and urgent need to find a bathroom. Over the years the problem became worse until I constantly had to debate whether it was worth the risk to leave the house. I saw many doctors and they all assured me that I did not have IBS. Extractions: The Celiac No Wheat Symbol Celiac disease is a hypersensitivity to gluten which is a protein found in wheat, rye, barley and oats. Although gluten sensitivity is not a food allergy, individuals with celiac disease avoid foods containing wheat, rye, barley and oats in the same way those with food allergies avoid the foods to which they are allergic. For persons with celiac disease the toxic part of the gluten molecule is the prolamin portion: gliadin in wheat, secalin in rye, horedin in barley and evedin in oats. The gluten found in corn and rice does not contain this toxic portion. Food is digested and absorbed in the small intestine. The lining of the small intestine is lined with microscopic finger-like projections called villi designed to provide the maximum area for nutrient absorption. These villa contain digestive enzymes. In celiac disease, gluten ingestion results in damage and destruction of the villi. We can visualize the damage by thinking of shag carpeting changing into linoleum. Here is an image (87K) from the University of Kansas Medical Centre showing normal villi on the left with loss of villi and elongation of crypts on the right. It is easy to see why a flattening of the surface of the small intestine reduces its capacity to digest and absorb nutrients.

For years, people with the chronic immune system disorder were told to avoid oats as well as wheat, rye, and barley. The reason for the food ban: gluten, a form of protein found in some grains. Gluten may cause damage to the lining of the small intestine in celiac disease patients, leading to malnutrition and a host of other chronic medical conditions. Oats fell back into favor when studies suggested they didn't cause the intestinal inflammation and symptoms seen in celiac disease after all. Now, the tide may be turning again. Researchers in Norway studied nine adults with celiac disease who had eaten oats in the past. Four participants had symptoms of abdominal bloating or diarrhea. Three of those four patients had "intestinal inflammation typical of celiac disease at the time of oats exposure," write the researchers.
