The history of corn is unknown, but the plant spread by trade throughout the American continents. The New World peoples depended upon this grain as a staple. But a diet built around corn can cause a severe medical problem, pellagra. Pellagra is a vitamin deficiency disease caused by a lack of nicotinic acid (niacin, Vitamin B3) in the diet. Pellagra affects the skin, the mucous membranes, the gastro-intestinal tract, and the central nervous system. Condition caused by deficiency of the vitamin niacin which is derived both from the diet and the conversion of the amino acid tryptophan. The problem is therefore associated with a lack of one or both in the diet. The vitamin and/or amino acid are found in vegetables, many cereals, milk and its derivatives. Normally, the most common underlying factor is a diet mainly consisting of cooked maize that lacks these dietary elements. However, in developed countries causes include alcohol abuse anorexia nervosa and as a side effect of taking isoniazid. Epidemiology

Unknown. Presentation Onset may be with non-specific symptoms such as loss of appetite , sore mouth and tongue, weight loss , mood changes, i.e. irritability. In more severe form, see the classic 3D triad of:

Broccoli Rabe Polenta Lasagna serves 4 (with some leftovers) I can't take full credit from coming up with this basic idea. It originated with Carol Field, a journalist resident in San Francisco who authored "The Italian Baker" and "Italy in Small Bites". She taught this recipe in cooking class at the Tante Marie Cooking School in San Francisco. But I made several modifications to her basic recipe which makes my version lighter and even more luscious that her original recipe. My modifications include adding nutmeg to the polenta, using a tomato sauce without meat (not a ragu as she uses), and adding mushrooms to the layers between the polenta. The combination of nutmeg in the polenta and hot pepper flakes in the tomato sauce are an uncommonly happy pair. The peppery sweetness of the nutmeg fits nicely against the more aggressive spiciness of the hot pepper flakes. Ditty's version makes such a delicious Sunday Supper, I had to share it with friends of this "Sunday Supper Home Page" even though it is not a "Ditty original".
