What is BSE?
Bovine spongiform encephalopathy (BSE) is a disease condition in cattle which is thought to have originated in Great Britain. It occurs in cattle between two and eight years old and is always fatal. The most plausible cause of the disease is a prion, a "self-replicating" protein, rather than a bacterium or virus. BSE causes a portion of the brain to become sponge-like. Brain, central nervous system tissue, and the distal ileum (portion of the small intestine) can carry the infective agent, and measures have been taken to exclude those parts known to carry the infective agent (primarily brain and central nervous system tissue) from the food and feed supply. BSE is often referred to as "mad cow" disease, because animals infected with the disease are often irritable and can react in a somewhat violent or threatening fashion when approached by humans.

(CNN) Agricultural and health experts believe mad cow disease is not a threat in the United States. "We have checked close to 12,000 brains of the highest risk cattle in the U.S. and found no evidence at all" of bovine spongiform encephalopathy, or BSE, said Dr. Linda Detwiler, a senior staff veterinarian for the U.S. Department of Agriculture.

By Miriam Falco CNN Medical Unit WASHINGTON (CNN) The United States has not seen one case of bovine spongiform encephalopathy (BSE), better known as mad cow disease. But is the government doing enough to keep it that way? That is a question senators will be posing at a hearing Wednesday on mad cow disease and meat safety. Representatives from the U.S. Department of Agriculture, the Food and Drug Administration, the National Institutes of Health, the beef industry and consumer advocates are expected to testify before the Senate Commerce Subcommittee on Consumer Affairs, Foreign Commerce and Tourism. While never having killed cattle on a scale comparable to other dreaded livestock diseases, such as foot and mouth and rinderpest , BSE has attracted wide attention because of its apparent transmissibility and lethality to humans, as well as for the nature of the mental decay it causes.

It is very similar to scrapie, a well-known disease in sheep that has been recorded for more than 100 years. Scrapie is also a spongiform encephalopathy and is nearly always fatal. Why did mad cow disease suddenly appear? Mad cow disease started in Britain after cattle were fed a protein In 1957, D. Carleton Gajdusek (United States National Institutes of Health) and Vincent Zigas (Australian Public Health Service) described a strange disease among the Fore highlanders of Papua New Guinea. Victims of the condition showed a gradual loss of coordination, and then a sort of premature dementia and an early death. Smart scientific detective work showed that the disease, called kuru, was caused by something that was passed on during ritual cannibalism, when the brains of recently deceased people were eaten. This work involved inoculating chimpanzees with material from the brains of people who had died of kuru. (In 1976, Dr Gajdusek and Dr Baruch Blumberg shared the Nobel prize. Gajdusek for his work on kuru, Blumberg for his work on the hepatitis B virus.)

PURPOSE/GOAL : To use resource based learning to research mad cow disease, a complex, current, real world problem. To integrate critical thinking, problem solving, and communication skills into the Food Science curriculum with emphasis on evaluation of information retrieved. The Food Science course meets the four Illinois state science goals for learning.
CONTEXT/SETTING/ENVIRONMENT : Fenton High School is a suburban Chicago high school with 100 faculty members, serving a population of about 1300 very diverse learners. Thirty percent of the students belong to minority groups and 5% have limited English proficiency. Over 13% are identified as below poverty level and receive free lunch services. Nine percent of the students at Fenton are identified as Special Education. The Fenton High School strategic plan acknowledges the need to infuse our curriculum with opportunities for students to learn critical thinking skills, problem solving, and communication skills. This project is part of "Success is on the Menu," a five year project funded by the Illinois State Board of Education and the Illinois State Library.

LOUIS Ron Hayes, who owns six cats and two dogs, said he hasn't changed their diet since learning about the country's first confirmed case of mad cow disease. "It's called mad cow disease, not mad dog disease, right?" he asked, but then checked to see if his pet foods contained beef ingredients. He spotted beef tallow on a bag of dry food. "I'll have to think about it now," he said. Federal regulators and experts say there's still no reason to worry about pets getting sick from pet food and no evidence to suggest any tainted meat has made its way into the pet food supply.
