Digestive Diseases: Food Poisoning
Food poisoning is a common, yet distressing and sometimes life-threatening problem for millions of people in the U.S., and throughout the world. People infected with food borne organisms may be symptom-free or may have symptoms ranging from mild intestinal discomfort to severe dehydration and bloody diarrhea . Depending on the type of infection, people can even die as a result of food poisoning. More than 250 different diseases can cause food poisoning. The most common diseases are infections caused by bacteria, such as campylobacter, salmonella, shigella, E. coli, listeria and botulism What Is Campylobacter Infection? Campylobacter is a bacterium that causes chronic diarrhea. Transmission usually occurs through ingestion of contaminated food, water or unpasteurized milk or through contact with infected infants, pets or wild animals. Symptoms include:
  • Diarrhea (sometimes bloody) Nausea and vomiting Malaise (general uneasiness) Fever that usually starts 24 to 72 hours after ingestion
The illness typically lasts one week.

Washing produce helps prevent food poisoning

With the average American consuming 300 pounds of fresh produce per year, cleanliness is becoming increasingly important. And often, the kitchen sink is the last line of defense in making sure fruits and vegetables are clean and safe to eat. For consumers, it's important to store fruits and vegetables in the refrigerator when you bring them home from the market. If produce is not stored in refrigerated temperatures, any bacteria in these foods can multiply and certainly make you sick. Wash each piece of fruit carefully, especially if you intend to consume it raw. Although this step will not kill bacteria, it will reduce its numbers.
  • Lettuce leaves should be rinsed individually under cool tap water.
  • Root vegetables should be scrubbed, even if you plan on peeling them later. After all, they were grown underground.

Food poisoning is an illness that results when you eat foods contaminated by harmful organisms, such as bacteria, parasites, or viruses. What are the symptoms? The first symptom of food poisoning is usually diarrhea. You may also feel sick to your stomach (nausea), vomit, and have stomach cramps. The time it takes for symptoms to appear, how severe the symptoms are, and how long the symptoms last depend on the infecting organism and your overall health. Most of the time, food poisoning is mild and passes in a few days. However, some types of food poisoning may be more severe.

Foodborne illness can also be caused by adding pesticides or medicines to food, or by accidentally consuming naturally poisonous substances like poisonous mushrooms or reef fish. Contact between food and pests , especially flies rodents and cockroaches , is a further cause of contamination of food. Some common diseases are occasionally foodborne mainly through the water vector , even though they are usually transmitted by other routes. These include infections caused by Shigella Hepatitis A , and the parasites Giardia lamblia and Cryptosporidium parvum The World Health Organization defines it as diseases, usually either infectious or toxic in nature, caused by agents that enter the body through the ingestion of food. Salmonella food poisoning is a bacterial food poisoning caused by the Salmonella bacterium. It results in the swelling of the lining of the stomach and intestines ( gastroenteritis ). While domestic and wild animals, including poultry, pigs, cattle and pets such as turtles, iguanas, chicks, dogs and cats can transmit this illness, most people become infected by ingesting foods contaminated with significant amounts of Salmonella Description
Salmonella food poisoning occurs worldwide, however it is most frequently reported in North America and Europe. Only a small proportion of infected people are tested and diagnosed, and as few as 1% of cases are actually reported. While the infection reate may seem relatively low, even an attack rate of less than 0.5% in such a large number of exposures results in many infected individuals. The poisoning typically occurs in small, localized outbreaks in the general population or in large outbreaks in hospitals, restaurants, or institutions for children or the elderly. In the United States, Salmonella is responsible for about 15% of all cases of food poisoning.

College football players sick with food poisoning transmitted the virus to the opposing team on the field in the first documented case of its kind in sports, researchers say. Food poisoning is a general term for health problems arising from eating contaminated food. Food may be contaminated by bacteria, viruses, environmental toxins, or toxins present within the food itself, such as the poisons in some mushrooms. Symptoms of food poisoning usually involve the prompt onset of vomiting and diarrhea . Some toxins also affect the nervous system. Description
Classical food poisoning, sometimes incorrectly called ptomaine poisoning, is caused by a variety of different bacteria. The most common are Salmonella Staphylococcus aureus Escherichia coli Shigella , and Clostridium botulinum . Each has a slightly different incubation period and duration, but all except C. botulinum cause inflammation of the intestines and diarrhea. Sometimes food poisoning is called bacterial gastroenteritis or infectious diarrhea. Food and water can also be contaminated by viruses ( cholera ), environmental toxins (heavy metals), and poisons produced within the food itself ( mushroom poisoning or fish and shellfish poisoning Careless food handling creates conditions for the growth of bacteria that make people sick. Food can become contaminated at many different points during its trip from farm to table. Vegetables that are eaten raw, such as lettuce, may be contaminated by bacteria in soil, water, and dust during washing and packing. Home canned and commercially canned food may be improperly processed at too low a temperature or for too short a time to kill the bacteria.

Even the healthiest foods can become unhealthy if improperly handled, cooked or stored. In the United States approximately 10,000 people die each year from food poisoning, and many more become ill and require medical attention. What is food poisoning? "Food poisoning can be caused by several different bacteria, such as salmonella or botulism," says Dr. Helene Connolly, an emergency physician in Chicago. "Although certain types of food poisoning can be fatal, most cases run their course in a couple of days." According to Dr. Connolly, food poisoning symptoms usually begin from two hours to two days after eating the tainted food. The symptoms are similar to those of the flu and should be treated the same. They include headache, nausea, diarrhea and/or vomiting. However, fever is more likely to occur with the flu. Is food poisoning serious?

Contents of this page: Definition Staph aureus food poisoning is an illness that results from eating food contaminated by a toxin produced by the Staphlococcus aureus bacteria. Causes, incidence, and risk factors Staphlococcus aureus food poisoning is often caused when a food handler contaminates food products such as desserts, salads, or baked goods (especially custards, mayonnaise, and cream-filled or topped desserts) that are served or stored at room or refrigerator temperature. The bacteria multiplies rapidly in the food, and a large colony of bacteria may be present without evidence of food spoilage. Risk factors include ingestion of food prepared by a person with a skin infection, ingestion of food kept at room temperature, ingestion of improperly prepared food, and symptoms occurring in persons eating the same food. Symptoms usually appear within 4 to 6 hours. The disease is common in the U.S.

    • Salmonella is bacterial infection caused from eating contaminated food or drinking contaminated water. Salmonellae non-spore-forming, gram-negative rods of the family Eterobacteriaceae. S. typhosa cause typhoid fever, and other S. cause diarrhea.
