Birthday cake. Pizza. Chocolate chip cookies. For people with celiac disease, a lifelong disorder of the digestive system, these foods aren't always the treats that most people think they are. Why? Because they usually contain a type of protein called gluten, which causes problems for people with celiac disease. What Is Gluten?
Gluten is the common term for a group of proteins found in wheat (durum, kamut, semolina, or spelt), rye, barley triticale, and farina. Grains are so common in our diet that gluten is second only to sugar as our most commonly consumed ingredient. What Is Celiac Disease and What Causes It?
The digestive system is the set of organs that digest food and absorb the important nutrients the body needs to stay healthy and grow. One important part of the digestive system is the small intestine, which is lined with millions of microscopic, finger-like projections called villi (pronounced: vih -lye). Nutrients are absorbed into the body through the villi. People who have celiac (pronounced: see -lee-ak) disease have a disorder that makes their bodies react to gluten. When these people eat gluten, an immune system reaction to the protein gradually damages the villi in the small intestine. When the villi are damaged, the body is unable to absorb the

Readers' Exchange First appeared in Participate , Summer 2000, Vol. 9 No. 1 From Washington After an 8 year frustrating battle with bowel and gas problems I was finally diagnosed recently with sensitivity to gluten [celiac disease]. All wheat, oats, barley, and rye were eliminated from my diet. After 3 months, I woke up feeling like a new person. The problem began in about 1992 when I was 62 years old. Symptoms included gas, incomplete or partially passed stool, and an unpredictable and urgent need to find a bathroom. Over the years the problem became worse until I constantly had to debate whether it was worth the risk to leave the house. I saw many doctors and they all assured me that I did not have IBS. However, for 8 years none ever said anything about gluten.

Our assumption is that if you look at symptomatic populations with gastrointestinal symptoms or autoimmune disease, then incidence will be much higher. The classic presentation of Celiac Disease is chronic diarrhea, with abdominal bloating, sometimes pain, weight loss, iron deficiency and other evidence of nutrient malabsorption. The disease is immune mediated. Proteins in the cereal grains are responsible for the disease. The suspect group of proteins are called "Gluten"

    The Celiac No Wheat Symbol
    Did You Say Celiac Disease?
Celiac disease is a hypersensitivity to gluten which is a protein found in wheat, rye, barley and oats. Although gluten sensitivity is not a food allergy, individuals with celiac disease avoid foods containing wheat, rye, barley and oats in the same way those with food allergies avoid the foods to which they are allergic. For persons with celiac disease the toxic part of the gluten molecule is the prolamin portion: gliadin in wheat, secalin in rye, horedin in barley and evedin in oats. The gluten found in corn and rice does not contain this toxic portion.
    What Exactly is the Problem?
Food is digested and absorbed in the small intestine. The lining of the small intestine is lined with microscopic finger-like projections called villi designed to provide the maximum area for nutrient absorption. These villa contain digestive enzymes. In celiac disease, gluten ingestion results in damage and destruction of the villi. We can visualize the damage by thinking of shag carpeting changing into linoleum. Here is an image (87K) from the University of Kansas Medical Centre showing normal villi on the left with loss of villi and elongation of crypts on the right. It is easy to see why a flattening of the surface of the small intestine reduces its capacity to digest and absorb nutrients.

Coeliac disease (also called celiac disease non-tropical sprue c(o)eliac sprue and gluten intolerance ) is an autoimmune disorder characterised by permanent damage or flattening to all or part of the villi lining the small intestine , causing scar tissue that cannot be used to absorb nutrients. This damage is caused by exposure to gluten and related proteins found in wheat rye , malt and barley . Damage to the villi reduces the ability of the intestines to absorb nutrients, and it is believed that the resulting nutritional deficiencies likely cause the wide spectrum of symptoms associated with the disorder. Coeliac disease may lead to digestive problems, such as indigestion heartburn and irritable bowel syndrome , unexplained weight loss or other signs of nutritional deficiency due to malabsorption , and a wide range of other problems in different bodily systems, including the nervous system , the heart, and the teeth and bones.

Celiac disease is an immune system disorder that results in damage to the lining of the small intestine when foods with gluten are eaten. Glutens are a form of protein found in some grains—notably wheat, barley, and rye. The damage to the intestine makes it hard for the body to absorb nutrients, especially fat, calcium, iron, and folate . Who We Are About WebMD Site Map sponsored Featured Centers Hold the Oats for Celiac Disease? Some Patients May Not Tolerate Oats, Study Suggests By Miranda Hitti WebMD Medical News Reviewed By Brunilda Nazario, MD on Monday, October 18, 2004 Oct. 18, 2004 The on-again, off-again relationship between people with celiac disease and oats may be off again. For years, people with the chronic immune system disorder were told to avoid oats as well as wheat, rye, and barley. The reason for the food ban: gluten, a form of protein found in some grains. Gluten may cause damage to the lining of the small intestine in celiac disease patients, leading to malnutrition and a host of other chronic medical conditions. Oats fell back into favor when studies suggested they didn't cause the intestinal inflammation and symptoms seen in celiac disease after all. Now, the tide may be turning again. Researchers in Norway studied nine adults with celiac disease who had eaten oats in the past. Four participants had symptoms of abdominal bloating or diarrhea. Three of those four patients had "intestinal inflammation typical of celiac disease at the time of oats exposure," write the researchers.
