Getting to North Wales is about as easy as deciding to go. From the U.S. there are daily flights to Manchester from New York's JFK. From London (Euston Station), one can gently journey up by train in about three hours to Chester. Initiating your trip from wherever, Chester, only about an hour from Manchester on the M56, is a good place to start your North Wales adventure. Chester, A Good Neighbor
Hitting the Road

If you've never driven in North Wales before, you're in for an unexpected treat. The main roads are meticulously maintained year 'round. Signposts clearly mark destinations in English and Welsh. Driving in from England, I guarantee you'll let out a little yelp (all right, I let out a little yelp) when first sighting the white sign with the red dragon and the words Croeso i Cymru Welcome to Wales. A Few Words
Wales is a bilingual country. As a visitor interested in getting to know Wales, you may want to learn a handful of Welsh phrases to enhance your experience. The Welsh speakers you meet will appreciate your effort. Here are a few useful Welsh phrases: bore da (bor-ah dah) good morning; dydd da (did dah) good day; diolch (dee-alch, with the "a" and in hall and the "ch" as in German) thanks; diolch yn fawr ("yn" as in un and "fawr" as in tower if you would say it tow'r) thanks very much; hwyl! Glamorgan Sausages
While normal sausages are made with meat, these are made mainly from grated cheese mixed with breadcrumbs, herbs and chopped leeks or onions. The recipe varies from place to place, and even from day to day, so they are sometimes quite spicy, and sometimes not. Use egg yolk to bind the mixture and roll into small sausages. The "skin" is made by rolling in flour, dipping in egg white and then rolling in breadcrumbs.

Poached Leg with Caper Sauce THE TRADITIONAL ROAST LEG OF MUTTON The way the leg of Welsh Mountain mutton would have been prepared for cooking for George Burrows would probably have been thus: The shank should be removed, broken up and boiled separately, to be used for stock to make gravy. The joint should then be rubbed with ground pepper; then covered with mutton fat and flour For cooking, place in a baking tray into a pre-heated oven at 350 degrees F or gas mark 4, allowing 4O- 45 minutes per lb. An alternative method is to start the joint off in a hotter oven at 500 degrees F (gas mark 10), leaving for 15 minutes or until brown. Then reduce to heat to 350 degrees (mark 4). The time for this method should be 25-30 minutes per lb. TRADITIONAL SPICED MUTTON
Ingredients : Mutton joint (leg or shoulder)
ground black pepper
powdered thyme
ground mace
fine oatmeal
mutton dripping (or other fat)
cabbage
cider Bone the joint, rub it well with black pepper, a little powdered thyme, a pinch of mace and fine oatmeal - do not use salt. Wrap the whole in cabbage leaves, and cover in foil (traditionally the meat would have been thickly covered in mutton fat). Roast very slowly, allowing 20 minutes/lb of meat. Baste well at least twice during cooking and when basted add a cupful of cider to the fat in the pan. It can be eaten either hot or cold.

For the muffins:
1-1/2 cups self-rising flour
1/3 cup rye flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp salt
1 tsp English mustard powder
Generous 1/2 cup sharp Cheddar cheese, grated
6 Tbsp vegetable oil 1/2 cup plus 2 Tbsp plain whole-milk yogurt 1/2 cup whole milk 1 egg 2 Tbsp Worcestershire sauce For the topping: 2 Tbsp sharp Cheddar cheese, grated More Worcestershire sauce for sprinkling Instructions Preheat oven to 400 degrees F. Line 12-cup muffin pan with paper baking cups. Mix the flours, baking powder, baking soda, salt, mustard powder and cheese in a large bowl with a fork. In a large measuring cup, beat together the remaining ingredients. Pour into the dry ingredients, mixing lightly with your fork, remembering that good muffins are made from lumpy batter. Pour into the muffin cups and cook for 20 minutes, then quickly take them out of the oven and put a little cheese and a sprinkling of Worcestershire sauce on each one. Put them back in the oven for another 5 minutes, then put the muffins on a baking sheet to cool. Eat them while they are still warm but not hot.

1 tablespoon coarse-grained mustard
2 eggs, 1 separated
freshly ground black pepper
1/2 cup dried bread crumbs oil, for deep-frying Instructions Mix the fresh bread crumbs with the cheese, leek or onion, parsley, marjoram, mustard, whole egg, one egg yolk and ground black pepper to taste. The mixture may appear dry at first, but knead it lightly with your fingers and it will come together. Make 8 small sausage shapes. Whisk the egg white until lightly frothy and put the dried bread crumbs in a bowl. Dip the sausages first into the egg white, then coat them evenly in bread crumbs, shaking off any excess.
