After a short sabbatical, Chris Chown, chef at Plas Bodegroes in Wales, is back in the kitchen and serving up his modern interpretation of traditional Welsh cooking. Photographs by Lisa Linder. Recipes by Chris Chown. Text by Catey Hillier. People often ask me about my favourite restaurants. But to be absolutely honest, I shrink from giving out this information. The reasons that certain pizzerias, coffee bars, country pubs, bistros and restaurants are special to me often go beyond the quality of the cooking. Why would anyone else want to visit the pie shop in Cardiff where I used to go at lunch time to avoid school dinners? However, I will disclose two of my favourite places in Wales, simply because they are enjoyable places for anyone to visit. For true hospitality, you can't beat Franco and Ann Taruschio's restaurant, the Walnut Tree Inn in Llandewi Skirrid, Monmouth-shire. Hearty dishes are the order of the day, many originating from the Marche region of Italy, Franco's homeland. But if I am in north Wales, I go straight to stay at Plas Bodegroes, the restaurant-with-rooms near Pwllheli on the remote Lleyn peninsula, where chef-patron Chris Chown is at the helm. Windswept beaches, for the most part free of people, run the length of this magical coastline. It's no wonder that the Lleyn peninsula is designated as an area of outstanding natural beauty. Plas Bodegroes is an 18th-century, Grade II-listed building set in five acres, with gardens where bluebells are rife in spring and that burn bright with acers in autumn. Inside, art by local artists combines with stylish, minimalist decor to good effect. You will find no country-house-hotel chintz here.

International art lovers flocking to Venice are being given a taste of Wales as they feast their eyes on the Welsh exhibits. Held every two years, the five-month-long event showcases contemporary art and artists from around the world. The Biennale, first held in 1895, is expected to attract more than 300,000 people to Venice this year before it ends on Nov. 6. Wales is a relative newcomer to the showcase, but is relishing the opportunity to show off its artistic and culinary prowess to a world audience. At the dinner the centre piece was roast Welsh Lamb with spiced Anglesey Sea Salt provided by Hybu Cig Cymru / Meat Promotion Wales. Other dishes and canapés included Welsh cheese and courgette strudel and mini quiches with pancetta and laverbread. To accompany the meal guests had a choice of alcoholic and soft beverages including Ty Nant water and a Welsh Kir made from Black Mountain Liqueur and Prosecco, an Italian sparkling wine.

Holidays can be designed from two night short breaks to ten day riding holidays for parties of two or more. There are a wide variety of routes available in the area with many more under development. Here are some examples :
Hill Forts and Drovers' Roads
Situated in the northern part of the beautiful North Clwydian Range, this route is less than 35 minutes from Chester. Ride past Iron Age hill forts on bridleways which have been ridden and walked since these structures were built two and a half thousand years ago. Enjoy wonderful views of the Clwyd Valley, the coast, and Snowdonia in the distance and explore the oddly named areas of Sodom and Ysceifiog ( Is-cave-iog) This route follows the sides of the Clwydian Range crossing it near Moel Famau before heading north across Halkyn Mountain towards the quiet lanes and drovers’ roads around Caerwys and Babell. It uses small tarmac lanes and off-road bridleways which range from open grassland to stony tracks. At certain times of the year these can become slightly muddy and occasionally rutted but they remain sound and are never boggy. Most of the route is gently hilly with one or two steep ascents. Unsurprisingly in a sheep-farming area, there are several sets of gates but these are often left open, according to the season, and many can be opened and closed without having to dismount. Typically each day’s ride is 15 to 16 miles long with the potential for short cuts and diversions to places of interest. By reducing the daily mileage and extending the holiday to 3 days this route would make an ideal introduction to trail riding. It provides spectacular views but is never very far away from villages and country pubs!

I am often asked why a promising new restaurant that seems popular should suddenly go out of business. Restaurants depend upon regular patronage and ultimately we get the restaurants we deserve. The restaurant business is one of the fastest growing sectors in the British economy. As consumers we have become more confident and our taste increasingly sophisticated. We therefore demand more than just decent food and drink. What restaurants sell is not just sustenance but theatre - we want the experience to be entertaining and relaxing. Each of us has an instinctive feeling of what constitutes value for money - we may feel that a very expensive dinner eaten over several hours in a grand palace of gastronomy in the West End has been worthwhile. Similarly we may decide that a hastily snacked lunch in a pub or cafe at a set price is a rip-off. Those who overcome their prejudice are agreeably surprised. The quality of the food is exciting making use of fine Welsh produce - lamb from the salt marshes, Black Mountain beef, excellent venison and lavabread (a type of seaweed). Les Gallois also offers a great selection of Welsh farmhouse cheeses.

Welsh shearers spend time in some very different valleys
Broadcast: 03/06/2005 Reporter: Patrick Emmett Print Email PATRICK EMMETT: When you come from a country famed for its green valleys and snow covered mountains, the Flinders Ranges were always going to be a bit of a shock for the Welsh national shearing team.
FEMALE: It is very, very barren here, I have never seen anything like it.
MALE: It is just an eye opener that anything could survive here.
ELFED JACKSON (WELSH SHEARING TEAM): We expected going from the airport to the farm would take us a couple of hours but it took us about five and a half hours and we were pretty shocked in that, and after we arrived it is all dry around us and brown, but back home it is nice and green.
PATRICK EMMETT: Just north of Wilpena Pound, Willow Springs Station runs around 4,000 merino sheep, something else most of the Welsh team has never seen before. The Welsh mountain sheep and cross breeds they normally shear are very different. They carry around 2 kilos of wool compared to a merino which can carry up to 6 kilos.
MALE: The one boy had shorn merinos before but the other one had never seen merinos, so he had quite a shock.

Heading directly out of London we travel to Caernarfon, located on the edge of Snowdonia overlooking the Menai straights. This an amazing location inside the ancient city walls of an historical market town. After a full Welsh breakfast take the time to enjoy the wonderful town of Caernarfon. Explore the castle and fascinating local markets. Make sure you take time to buy all your supplies and additional clothing for Sunday's hike. The rest of the morning is yours to do with as you please:

Rejoin the group at 2.30pm and depart Caernarfon for the town with the longest place name in the world and get you passport stamped . Following a visit to Conway Bay, famous for it's mussels, it's back to base for some great food. Dinner is served at 7.30pm and the remainder of the evening is followed by visiting some of the entertaining pubs and bars in the town centre. Day Three - Sunday
After another hearty breakfast, we set off straight away into Snowdonia National Park (the second largest National Park in Great Britain) to enjoy some Welsh fresh air. Our first stop is at Bedgellart, a beautiful Welsh copper mining village where we go in search of Gellert's grave. Sample some of the award-winning, local ice-cream . . . mmm! - with over 30 flavours to choose from, there's sure to be sonething to tempt you.

These trips include transportation and a guide. It's a great way to see London and the surrounding countryside. Most years the London Semester students and faculty visit Prague. This year an excursion to Prague is scheduled for February 25-28, at a cost of $776. An optional European tour (Brussels, Paris, etc.) before classes begin will and costs $775.
