The Welsh are Brythonic Celts, along with the Cornish and Bretons. The Gaelic Celts are the Irish, Scots and Manx. Welsh is not a Gaelic language, as is so often mistakenly thought. Besides the red dragon, other common Welsh symbols are the leek and daffodil and lovespoon. The Welsh celebrate their heritage on March 1, the date of the death of their patron saint, the sixth-century St. David. Wales is beautiful, with mountains, rolling hills, ocean coastlines, old towns and ancient monuments. Welsh food is usually made from local ingredients. 80% of the land surface of Wales is given over to agricultural use. Very little of this is arable land. The vast majority of it is permanent grass or rough grazing. Although both beef and dairy cattle are raised widely, especially in Carmarthenshire and Pembrokeshire, Wales is more well-known for its sheep farming, and thus lamb is the meat traditionally associated with Welsh cooking. Foods in Wales include: Various cheeses are produced in Wales. These include Caerphilly cheese y Fenni cheese Llanboidy cheese Red Devil , and an exceptionally strong variety of cheddar , the "Black Bomber". There are a number of Welsh beers and more than twenty vineyards in the country. Most of the vineyards have been started since the 1970s. By contrast, Brains and Felinfoel companies have been in existence since the late nineteenth century, based on breweries which were yet older.

Category: Wales Date: Printable version In a brand new series on BBC Radio Wales, well-known broadcaster Sara Edwards travels the length and breadth of the country hot on the trail of a Welsh food revolution. The new series, Food Matters , sees Sara covering a whole host of topics to do with food - from rediscovering some age-old Welsh cooking traditions, exploring low budget healthy eating and finding out some very useful food-related tips. Sara's first stop is The Cooking Bus in St Mellons, Cardiff, where she drops in on a class of pupils from Oakfield primary school. "The children not only learn how to cook, they learn how to think of food in a healthy way," says Sara, who is a strong believer in good food. Before going to university she gained a professional cooking diploma at La Petite Cuisine in London. "If I hadn't have followed a career in the broadcasting I would have become a chef - I love feeding people."

Dudley returns to our screens on S4C this Wednesday with a brand new series, which begins with a visit to Carmarthenshire where our favourite chef indulges in some traditional Welsh cooking that is always a welcome treat at Easter.
Here in Wales, there is a passion for scones, pancakes and Welsh cakes that remains undiminished and Easter provides us with the perfect excuse to help ourselves to extra portions of these delights. Add to this the customary bara brith (speckled bread) and a few lamb cutlets for lunch, cooked by Dudley in his own inimitable style, and we have the perfect opening to Dudley’s new eight-part series.
In this first programme of the new series, Dudley travels west to Carmarthenshire where he meets up with the region’s first female Reverend, Beti Wyn. As a Reverend serving three churches in the area, Beti leads a busy life due to working seven days a week but believes it is important for her family to make time to sit together around the table for dinner.
Beti’s chapel-goers appreciate the enthusiasm that she brings to her role and often reward her with a variety of tasty treats. This is very much to Dudley’s satisfaction, as he joins Beti in sampling some homemade personal favourites.

A delightful little gem of a book - a paean to Wales and the author's Welsh home - written by one of the English language's most beloved travel writers. Morris, the progeny of a Welsh father and an English mother, takes us on a picturesque, highly impressionistic journey through Trefan Morys, her home located between the sea and the mountains in the rural northwest corner of Wales. A "house tour" sounds like an awful idea for a book - akin, perhaps, to being forced to watch home movies of your neighbor's trip to South Dakota. But Morris makes the concept work with her finely crafted prose and her brilliant sense of history, and she opens the book with a brief description of Welsh history. Unsurprisingly, Wales has had to struggle mightily to preserve its culture from the hegemony of everything English. The last independent Welsh king, Llywelyn ap Gruffudd, was killed by England's King Edward I in 1282. Wales has been under the yoke of its "overbearing" English neighbor ever since.

Cardiff is packed full of cheerful and welcoming pubs and few students graduate from here without having sampled a pint of the city’s very own beer, Brains SA, brewed in the heart of the city. For those who enjoy less boisterous surroundings, there are several wine bars where you can sit back and enjoy waiter service. Ever since its days as the world’s biggest coal port, Cardiff has been a cosmopolitan city with people from every corner of the globe having chosen to settle here. This heritage is reflected in the variety of restaurants on offer. As well as French, Spanish and Italian cuisine, you’ll find Thai, Japanese, Mexican, Hawaiian and Cajun in Cardiff. Several restaurants specialise in traditional Welsh cooking - do not leave Cardiff after three years without having tasted Welsh lamb and our home-produced cheeses. Cawl, a delicious leek broth and the national Welsh dish, is also a must. For those who want to keep going ‘til dawn, Cardiff can oblige. In most major centres, British and continental food is available. Welsh cooking is, in general, simple with abundant fresh local produce, particularly meat and fish. Near the coast, seafood is also widely available. Local dishes include Welsh rarebit (cheese on toast), leek soup bara brith (a type of tea bread) and laver bread , which is made with seaweed.
Nightlife: In general, it is similar to that of an English town of comparable size, with bars, restaurants and cinemas being common in the cities and large towns.
Special Events: St David’s Day (Mar 1) is dedicated to the patron saint of Wales. Although it is not a public holiday, schoolchildren celebrate and learn about their culture through music, poetry and cookery on this day. Many Welsh villages hold an Eisteddfod once a year – a contest for local poets, singers and musicians. All but the largest ones are generally advertised only inside the town itself but visitors are welcome to attend.
