Staff Reporter of THE WALL STREET JOURNAL Boarding school was a family tradition for Clay Gibson. As a teen, he followed his brother, uncle and great uncle to Baylor School, a 112-year-old private school in Chattanooga, Tenn., whose 670 acres overlook the Tennessee River. Thirty years later and now an Atlanta law-firm partner, Mr. Gibson is a Baylor trustee and easily lists the elite school's many attractions. But when time came to send his three children to high school, Mr. Gibson broke with tradition: He sent his two sons and daughter to a private day school. He loves Baylor, he says, but he and his wife never seriously considered it. "We're very involved in our kids' education and life, and we wanted to stay involved on a day-to-day basis," Mr. Gibson says. "We wanted them to stay in our home and enjoy that opportunity." Mr. Gibson's decision is part of broader shift plaguing schools like Baylor: While enrollment at private day schools is booming, boarding schools are seeing little or no growth. He was born in Cuba in 1950; his family moved to the United States in 1959, shortly after Fidel Castro came to power. He grew up in New Jersey, attended public schools, and worked in restaurants after high school until he registered as a journalism major at Temple University. Writing stories became tedious, he says, "and the cooking thing really appealed to me." Into the woods. He enrolled in the Culinary Institute of America in Hyde Park, N.Y., in 1979 and trained as a chef. After graduating in 1982, he worked for the "Queen of Mean" Leona Helmsley, known for her critical supervision of menus in her hotels and ruthless firings of employees. "I found my way to corporate dining," he says, setting up the food services for a major law firm that expected their catered lunches to compete with the city's finest restaurants. Then he and his wife made an unlikely decision: "We decided to move to Vermont." He first became chef at a Vermont boarding school, then in 1998 began teaching at the New England Culinary Institute. But after 10 years, he says, "I'd done the woods." When New York University nutrition Prof. Marion Nestle spoke at the University of Vermont about the globalization of the food industry and rising rates of obesity and diabetes, Collazo took his students to hear her. "Suddenly, I realized what direction I wanted to go in," he says. A headhunter contacted him about the job as executive chef for the schools. "Everything came together. I've always had a social consciousness, and with this job, you can really make a difference."

Boarding Schools - Military Schools Discipline
There are signs that the military ethos can accomplish things not easily achieved otherwise. Military curricula are even taking hold in some public schools. In Detroit, the Charles Rogers Academy, named for a black army general, offers much the same program as a military prep school. Students of each year have different ranks, discipline is tight, and standards are high. About half the seniors attend collegean extremely impressive rate for an inner-city school. By shifting their focus from training future soldiers to preparing civic leaders, military boarding schools have made a comeback although their ranks have thinned since WWII. Of course, military boarding schools can seem more like another planet to the average teen. At Massanutten, a military boarding school, reveille is at 6 o'clock every weekday morning. Cadets are required to attend formation 45 minutes later dressed in full uniform, complete with polished boots. There, members of Alpha Company that's all the girls are scrutinized for signs of excessive grooming. Sparkle nail polish and heavy makeup are banned. Hair must be tied neatly into military buns or cut above the collar.

Alternative Schools Education
With the quality of most public schools dwindling as a result of increased enrollment and decreased funding, many parents seek alternative schools to educate their children. Effective alternatives include private schools whose focus is a military style of discipline and education. Military schools provide cadets with the traditional college prep curriculum found in public schools, but the quality of teaching often exceeds that found in public school. The King George School was notified late Friday that CEDU, its California-based parent company, had filed for bankruptcy under Chapter 7 of the U.S. Bankruptcy Code earlier that day. Administrators were told Friday to send students home and close the school. Head of School Dr. Karen Fitzhugh refused to do so, however, and has vowed to carry on. "These people need to know it's not all about money," Fitzhugh said Monday. "It's about human beings. We have an obligation to our staff, students, parents and vendors." Fitzhugh said she was told by George Miller, trustee in the bankruptcy case, she would have two weeks to come up with an alternative.

It was the mid-1990s and frustration about property taxes was spreading across Vermont like wildfire. Gaye Symington watched from the political sidelines as the property tax controversy ignited in Jericho, pitting neighbor against neighbor. Professionals with young families focused on schools. Owners of farms and woodlots struggled with the mushrooming tax bills necessary to pay for the stepped-up investment in education. Something had to be done, she decided. "I thought, well, I will run for the School Board," she said. But the Williams College graduate with a master's degree in business administration from Cornell University said she didn't know enough about school finance, so she audited a class on the subject at St. Michael's College.
