People become vegetarians for many reasons. These may include religious reasons (Hindu, Moslem, Buddist, Seventh Day Adventist), health, fad, economic, or moral [against the killing of animals] reasons. Just as people are vegetarians for different reasons, the diets of vegetarians are not all the same. With careful planning, a vegetarian diet can be healthy, no matter which type of vegetarian diet you choose. Let's first define a vegetarian diet. Some people define vegetarianism loosely. They may say they are "almost" vegetarians because they don't eat red meat (but they do eat poultry and fish). However, a true vegetarian is a person who eats no meat. There are two basic kinds:
    1. lacto (milk) - ovo (egg) vegetarians:
    They don't eat any meat, but do eat eggs, milk, and other dairy products such as cheese, butter, and yogurt. Some people are just lacto vegetarians; they eat dairy products, but not eggs. Some are ovo vegetarians; they eat eggs, but no other animal foods. 2. vegan: They do not eat any animal products. In some cases, this includes avoiding honey.

Should I become a Registered Dietitian or a Dietetic Technician? Will I need a master's degree? A doctorate? What career options will I have? Subscribing to a vegetarian or vegan lifestyle can make these options even more confusing. Will my vegetarianism interfere with my ability to get a job? Can I find a job that accommodates my interests in nutrition and vegetarianism? Through The Vegetarian Resource Group, I was able to discuss these questions with a number of dietitians interested in vegetarianism. The common response was that there are many options for a vegetarian in the field of nutrition, but if one wants to combine these interests, it is important to establish a reliable reputation in a specific field. For the dietitians I talked to, this meant anything from completing a doctorate in education to attending culinary school.

  • Semi-vegetarians - rely mainly on plant foods but occasionally eat meat, fish, or poultry. Lacto-ovovegetarians - include milk products and eggs in their diets, but omit meat, fish and poultry. Lactovegetarians - include milk products, but don't eat eggs, meat, poultry or seafood. Vegans - don't eat any animal products. CAUTION: Strict vegetarian (vegan) diets are not recommended for infants and children, pregnant women and nursing mothers.

    For a beginner it is hard to find information on the benefits of a vegetarian lifestyle. Even as a twelve year veteran, it may be difficult to find up-to-date information or recipes to support this lifestyle. This pathfinder will attempt to pull together many different resources including books, encyclopedias, handbooks, periodicals, indexes and internet resources that will aid a user in discovering a healthier animal happy lifestyle. Any teen, adult, parent, teacher, or friend who needs some help and guidance in locating information on becoming and staying vegetarian can use this pathfinder. I believe this pathfinder is an important topic since there are many people looking to limit meat, poultry, and fish from their diet. Many people are becoming more concerned with making healthier choices in order to live a better and longer life. Some people need help finding correct information on why this is a healthy lifestyle and how to go about implementing different aspects of being a vegetarian.
