Incidence of colon cancer has been strongly linked to the consumption of meat (Armstrong, 1975). Willett (1990) carried out a study of over 88 000 women aged 34 to 59 years. This simple nutrition pyramid shows what types of food a vegetarian should eat and roughly in what quantity and proportion. Oils, butter and fats are at the top because we only need relatively small amounts.
    Bread, cereal, rice and pasta are at the bottom because we should eat these foods the most.

For a variety of reasons, (many economic, ecological or health-related), there is considerable renewed interest in vegetarianism. Even the USDA in the fourth edition of Nutrition and Your Health: Dietary Guidelines for Americans now acknowledges that a meatless diet can adequately meet our dietary needs. Plant foods are the mainstay of a vegetarian diet, and with a little thought and attention to detail one can get the same, if not better nutrition, from choosing foods of plant origin. Generally, there are three different types of vegetarians:
  • Vegan - strict vegetarians who eliminate all animal products including leather goods and soaps made with animal fats;
  • Lactovegetarian - a vegetarian who excludes meat, poultry, fish and eggs, but includes dairy products;
  • Lacto-ovovegetarian - a vegetarian who excludes meat, poultry and fish, but does eat eggs and dairy products. The question most often asked is, " Where do I get my protein?" The answer is that protein, generally obtained from animal sources, is also

    Vegetarianism and Health The vegetarian movement has often been driven by health claims. Sylvester Graham promoted vegetarianism in the mid-1800s as a way of controlling aggression and alcoholism. His name is given to Graham crackers and Graham flour. The cold breakfast cereal industry was started by the Kellogg brothers, C.W. Post, and other Seventh-Day Adventists in Battle Creek, Michigan in the late 1800s as a way of not eating meat for breakfast. While it may seem logical that vegetarian diets are more healthful than omnivorous ones, there is scant evidence for this. It is true that vegetarians have lower serum cholesterol levels than people who eat meat. However, vegetarians generally have healthier lifestyles than the rest of us. They are thinner, more physically active, drink less alcohol, smoke cigarettes much less, and so on. Once all these behaviors have been controlled for, the few studies that have compared large populations of vegetarians and omnivores have found little difference that can be attributed to diet alone. If being a vegetarian causes a person to change his or her health behaviors, then this is desirable, but there is no evidence that this is the case. The chronic diseases less common in vegetarians (heart disease, cancer and chronic lung disorders) are heavily related to tobacco, overweight, and inactivity. Recent studies of large groups of British vegetarians found no benefit on heart disease but a decrease in cancer that might be attributed to lower meat consumption.

    Women and Vegetarianism While only about one percent of men become vegetarians, it is estimated that four times this number of women do not eat meat. It is not clear what proportion of these women also avoid dairy products. Nutrition surveys of vegetarian women have shown that they tend to have lower levels of calcium, iron, zinc, and vitamins D and B12. For women who eat some animal products, the levels of each of these nutrients increases. The highest levels of these nutrients are seen in women who do not restrict their diets. Calcium and iron are two of the nutrients most lacking in diets of both vegetarians and omnivores. These results do not mean a vegetarian diet is unhealthy but that it needs better planning than most people give it. It also indicates that women at risk for deficiencies of the nutrients listed above are not getting them from diet or supplements. If you follow a special diet, keeping a diet diary for a week and then analyzing it for the nutrients listed above will give an indication about its nutritional adequacy. (But only an indication since all nutrients should be supplied by the diet.) This type of service is usually available from a Registered Dietitian, but you can do it yourself with a good reference book that contains tables of nutrient content of foods. Dear Ms Pike, Vegan Diets - Fast Track To Ill-Health Among their many nutritional shortcomings, vegetarian diets supply sub-optimal amounts of vitamin and essential long-chain omega-3 fatty acids such as DHA and EPA. B12 is essential for optimal cognitive function, while DHA is a major component of brain tissue. Not surprisingly, analyses of blood samples from vegetarians consistently show lower dietary and lower blood levels of long-chain omega-3 fatty acids. (2-7) These fatty acids can be formed in the body from plant-based omega-3 fats, but numerous studies show that the conversion rate is very low.(8,9) Because of their complete abstinence from animal foods, deficiencies of these and other nutrients are much more pronounced in vegans than in lacto-ovo vegetarians. Below are observations, published in peer-reviewed journals, of the harm that can befall those following these truly unbalanced diets:

      What is a Vegetarian?
      Vegetarians do not eat meat, fish, and poultry. Vegans are vegetarians who abstain from eating or using all animal products, including milk, cheese, other dairy items, eggs, wool, silk, and leather. Among the many reasons for being a vegetarian are health, ecological, and religious concerns, dislike of meat, compassion for animals, belief in non-violence, and economics.     Whether you are eating lunch on an airplane, attending a wedding dinner, or eating in a restaurant establishment, you will notice the growing trend toward vegetarianism. On most menus throughout America, there are vegetarian options noted for those who prefer the vegetarian diet. Vegetarians believe that this diet is much healthier than the average American diet, which includes animal products. So, what is the truth about vegetarianism.is it really a healthy alternative to the typical American diet?
    Before considering the health aspects of the vegetarian diet, it is important to make a distinction between the types of vegetarianism. The least strict vegetarian is the semi-vegetarian (not considered vegetarian by the American Vegetarian Society) who focuses only on the exclusion of red meat from the diet. The lacto-ovo vegetarian excludes meat, fish and fowl, but consumes both dairy and egg products. A lacto-vegetarian will not consume meat, fish, fowl, or eggs, but continues to eat dairy products. The ovo-vegetarian excludes meat, fish, fowl, and dairy, but continues to consume eggs. The most extreme of the four vegetarian groups is the vegan who consumes no meat, fish, fowl, dairy or eggs. The vegans are the individuals attracting the most scrutiny from the general public.

Vegetarians also vary in their attitudes towards supplementation, conventional medicine, and many other matters that may affect their health. After observing that I became mentally and physically weak, timid, susceptible to disease, and depressed, I decided to return to eating meat. Thereafter, I soon felt much better. Somehow, however, I have continued to feel drawn to adopting a vegetarian diet. My reasons for this are for ecological, health, and spiritual concerns. Like so many of my colleagues, I began my journey as a practitioner of Oriental Medicine out of a deep interest in holistic medicine and improving my own health, as well as that of others. Now, after nearly four years of immersion in the intricacies of Traditional Oriental Medicine (TOM), I am realizing my goals. The prevailing view among most of my instructors during this time seems to be that a vegetarian lifestyle will ultimately lead to a deficiency condition; that as people it is necessary to eat meat. My own experience with vegetarianism, led me to unquestionably agree with this view. My dealings with many vegetarian patients, most of whom have had deficiencies, lent further confirmation. At the same time, there has been a growing realization of how little I really know about vegetarianism. I found myself advising patients to eat some meat based on my ignorance of their lifestyle, and my unclear understanding of TOM's stance on vegetarianism.
