St. Vladimir Institute offers Ukrainian cooking classes TORONTO - A series of eight classes in two semesters with Hanya Cirka, designed to show how traditional dishes are prepared using local ingredients and utensils, will be held at St. Vladimir Institute. Several variations will be shown to demonstrate how easy it is to stretch a basic dough or how many different dishes can be made from basic ingredients. Classes include sampling of all prepared dishes as well as handouts with recipes and tips to assist in preparation of traditional dishes. The series, which began on October 27 with a course called varenyky varia-tions, continues with the following classes in the fall to be held Mondays, 6:30-9 p.m.: November 10, holubtsi (cabbage rolls) and kapusta (sauerkraut) variations; November 24, borsch, kutia and fish dishes; and December 8, menu for Sviat Vechir (Christmas Eve). In the spring classes will be held Tuesdays, 6:30-9 p.m.: March 24, Easter breads; April 7, Easter basket foods; April 21, Chicken Kyiv dinner and syrnyk (baked cheesecake); and May 5, roast pork dinner with nalysnyky (crepes). NEW RELEASE "Stocking stuffer" Ukrainian recipes IOWA CITY, Iowa - "Ukrainian Recipes," the latest in a series of "stocking stuffer" cookbooks in the popular recipe-card-file size format pesents Ukrainian cooking as one of the best homestyle cuisines of the world - basic, fresh, wholesome and nutritious. Ukrainian food is not often found in restaurants, for it is a style of cooking best meant for families, for homecomings and for holidays. The majority of recipes in this book come from Ukrainian American homes, where Joanne Asala, who collected the recipes, shared the food and native traditions. The cookbook's 160 pages include recipes for daily fare and festive celebrations. Notes and menus for traditional observances of Christmas, Easter and the wedding feast are included with the recipes. Among these are flummery, or "kutia," one of the most sacred of ritual dishes, Easter bread, or "paska," and honey nut cake. On the cover is a photo of a three-pronged wood-carved candelabra. Examples of exquisite symbolic folk art, especially Easter eggs or pysanky, are found throughout the book with reference to the significance of the various designs. Penfield Press has published 32 "stocking stuffer" titles.

Ukraine Ukraine is a broad, flat land resembling Kansas in the USA. It nestles between the Carpathian Alps to the west, the Black Sea to the south and the Sea of Azov to the east. To the north is Belarus (part of the ancient Kingdom of Lithuania) and Russia proper. A peninsula, the Crimea, juts out into the Black Sea. The broad Dnipro river runs down through the center of the country. To the east of the Dnipro the land is flat and has rich soil ideal for farming. It is no wonder, then, that Ukraine is called "the bread basket of eastern Europe". To the west of the Dnipro, the land is more hilly and rolling, eventually becoming fairly rugged as the western part of Ukraine reaches into the foothills of the Carpathian Alps.
The Ukrainian People
Ukraine has long been a crossroads between Europe, Arabia and the Orient, and the modern Ukrainian Rus have acquired a strong admixture of Asiatic and Arabic blood: giving them an average height, slender build and fair complexion. Strictly speaking, the popular-image beefy Slavic people are found mostly in the western Ukraine (bordering on Poland, Hungary and the Slovak states) and in the north and northeast adjacent to Russia. For over a century, the official language was Russian. Since independence, Ukrainian is being promoted as the state language although Russian is still the most widespread, especially in the major cities. In villages people speak both Russian and Ukrainian. As a rule of thumb, you can manage by speaking Russian, although you may receive a bit of resistance from public officials who are being pressed to use Ukrainian.

Tetiana Hrynova is attending Stanford Univ ersity in Stanford California. She says an experiment the physics department was working on helped her decide to go to school here. “I am from Kharkiv, Ukraine my hometown is the second biggest city in Ukraine and it is located on the East of Ukraine close to Russia border about 50 kilometers from it. I came to the United States because there was an experiment here, which was one of two experiments in the world, which is doing the kind of physics, which I was interested in doing,” she says. “Stanford is particularly interesting because Stanford is running the Stanford Linear Accelerator Center, a sub contractor from Department of Energy. My research is dealing with High Energy Physics, which is basically particle interactions, and it is kind of physics in the long term answers the questions where does the world come from and why we live in a world which consist mostly of matter. So it is this kind of things. It is fundamental problems.”

Quick Facts History Famine ... Humor Ukrainian history began with the rumble of hooves - Scythians dominated the steppes north of the Black Sea from the 7th to the 4th centuries BC, initiating centuries of outside political and cultural domination. Traces of Scythian culture can be found in Kiev's Caves Monastery, where the tombs contain superb goldwork depicting highly detailed animal and human forms. Following the Scythians, a series of invaders, including Ostrogoths, Huns and the Turko-Iranian Khazars, ruled areas of present-day Ukraine. The first people to unify and control the area for a long period were Scandinavians known as the Rus. The Rus took Kiev in 882 AD, and by the late 10th century the city was the centre of a unified state known as Kievan Rus, which stretched from the Volga west to the Danube and south to the Baltic. In 988, the Kievan Rus leader Volodymyr accepted Christianity from Constantinople, beginning a long period of Byzantine influence over Ukrainian politics and culture.By 1520 the Ottomans Empire controlled all of coastal Ukraine. Military devastation and plague had wiped out much of the population of the Ukrainian steppe by the 15th century, when the region became popular with runaway serfs and Orthodox refugees escaping more tightly controlled neighbouring domains. These people came to be known as kazaks (Cossacks), a Turkic word meaning outlaw, adventurer or freebooter. Ukrainian Cossacks eventually formed a state that, although officially under Polish and later Russian rule, was to a significant degree self-ruling, but 20 years later the state was divided between Poland and Russia.
