Just think about this...while in Ukraine you'll be eating delicious food with no preservatives or chemicals.
Yes their food is rich because they love using butter and cream in many of their dishes but if you are so concerned about "fat" then all you have to do is be selective.
I have yet to gain any substantial weight while on my tours but when I come home I do.
I think we should be much more concerned about what's in the food we eat here.

www.tourukraine.com : I'm interested to know what people think of Ukrainian cuisine. I think North Americans have been conditioned to fear fat in food. Slavic cooking is notoriously high in fat. Mmmm sour cream everywhere and lotsa fried food. How have you dealt with that when you travelled there? Did you avoid it or embrace it?
: Webmaster, I do hope that discussing food in Ukraine falls into the travel and culture category and will be allowed!

    Ukrainian Easter Food
Ukrainian Easter food consists of certain ritual foods that are placed in a basket, covered with a rushnyk, and taken to church to be blessed. These are breakfast foods - literally, the foods that will break the fast - typically, hard boiled eggs, kovbasa, baked cheese, paska bread, babka bread, butter, and horseradish and beet relish. For Easter dinner, all of the above blessed foods may be served plus a wide assortment of appetizers, ham or roast pork, vinegared vegetables salads, sweet cheesecake, tortes, and other festive pastries.
    Easter Syrnyk
This non-sweet cheesecake is served as an accompaniment for the main dish. It can also be cut into tiny portions and served as a zakuska dish.
24 ounces dry curd cottage cheese
    2 eggs
    1 tablespoon sugar
    1 tablespoon grated lemon zest
    1 beaten egg yolk
Place cottage cheese in a fine sieve and press out the water. Put cheese and eggs in a blender or food processor and process until very smooth and free of any lumps. Stir in sugar and lemon zest.

Traditional foods. Ukrainian cuisine is varied and rich in taste and nutritional value. Its development was influenced by the same factors as the development of material culture: geography and climatic conditions, plant cultivation and animal domestication, technological change, cultural influences, and economic relations with other countries. Since ancient times Ukrainians have practiced a settled form of life based on farming. Archeological evidence shows that wheat, barley, and millet were grown in Ukraine 3,000 years ago. Rye was introduced about 2,000 years ago, and then buckwheat was imported from Asia in the 11th century AD. Already at that time cattle, sheep, hogs, and poultry were raised. Beekeeping, hunting, and fishing were practiced. The exceptional fertility of Ukraine's soil and its climate were favorable to the development of agriculture, which had a marked influence on the type of food eaten by Ukrainians. It is evident from the chronicles and other sources that even in Kyivan Rus’ food was choice, varied, and plentiful. There were professional cooks at princely courts and monasteries , and in the homes of wealthy families. Also, in the
