by Julie Gale When I was seventeen I visited Turkey with my family. It was an unforgettable experience! Our first sense that we were indeed in a foreign land came at the airport as all the bags from the airplane were unloaded into one enormous mountain of luggage. After extracting our bags, the Turkish customs official decided that everyone on the plane needed a mysterious extra immunization injection. My father slipped the man a $20 bill and we all proceeded into Turkey without that shot. We proceeded quickly into a traffic jam in Istanbul the likes of which I had never seen. People literally walked on top of the cars to get from one side of the street to the other. Aside from all this preposterous behavior, I loved the country; the mosques, the people, the markets, and especially the food. Turks are very fond of saying that they are the originators of the cuisine of the Middle East. I believe that this is very true! The food is especially tasty, fresh, imaginative and luscious. Lamb is a great favorite of the Turks and this recipe shows off their talent with spices and their skill on the grill. This is great for a party on the patio along with a salad (

During the course of two thousand years of life in the Diaspora, Jews have created a rich culinary tradition. Jewish food encompasses a plethora of tastes and flavors reflecting the particular traditions of the many Jewish communities worldwide. Everywhere traditional Jewish food is prepared according to the rules of kashrut (the Jewish dietary laws), such as the prohibition against consuming certain animals, the adherence to specific ways of preparing the meat for consumption, the prohibition against cooking or heating food on the Sabbath, and the prohibition against mixing meat and dairy products.

In all Diaspora communities, traditional Jewish recipes make use of local cooking practices and customs. Jews used locally available products, absorbed various traditions from their non-Jewish neighbors and interpreted them creatively in keeping with the laws of kashrut. Sometimes the term "Jewish food" is mistakenly understood as referring to the cooking traditions of the Eastern and Central European Jews. However, the cuisine of the Ashkenazi Jews of Eastern and Central Europe, itself composed of many regional culinary forms, is only one of several of Jewish cooking styles.

A French Connection
French Food Makes a Comeback by Kathie Smith
The Toledo Blade French food is back. Long thought to be too rich in butter and cream, and too dependent on sauces, the classic cuisine is being updated for healthier eating and even being inspired by the global palate. The result is a new wave of interest in learning the basics of French cuisine and dining on French-inspired dishes. The nuances of regional French food are turning up in cooking schools and catered events. "There is an evolution in French cuisine with lighter cuisine," says Georgeann Brown, who teaches farmhouse French cooking. "Women in France who are entering the work force don't have time for cassoulet and beef bourguignon. Plus, they are trying to use less butter and cream."

Brown takes students on a quick tour of the country via the recipes she has selected. From Flanders comes the recipe for pumpkin soup prepared with butter instead of olive oil, which is likely to be used in the south of France. "Pumpkins can be bland, so I've used apples to enhance the flavor," she says. "I use a handheld immersion blender as a way to thicken the soup without using more butter and cream." She also uses chicken stock to reduce the fat in the soup.

By Times staff writer There is basic information you'll need to know before handling turkey, regardless of how you plan to cook it. Clip and save this handy list of dos and don'ts. Our series "Turkey 4 Ways" begins today and continues in Taste through Nov. 19. The safety suggestions are from the Partnership for Food Safety Education.
Stop bacteria
Wash hands with hot, soapy water before handling the turkey. Wash cutting boards, dishes, utensils and counter tops with hot, soapy water after they come in contact with the bird. Use plastic or other non-porous cutting boards. These boards should be run through the dishwasher or washed in hot, soapy water after use. Consider using paper towels to clean up kitchen surfaces. If you use cloth towels, wash them often in the hot cycle of your clothes washer.

She is due in Ankara on Saturday after talks in Berlin and Warsaw, and after meetings in Ankara she flies to Tel Aviv. Moscow said on Tuesday that Rice would meet with Russian Foreign Minister Sergei Lavrov in Ankara. US officials did not confirm the talks, but the Russian Foreign Ministry said it would prepare for US President George W Bush's talks with his Russian counterpart Vladimir Putin in Bratislava on February 24. Rice will advance Bush's common agenda, in cooperation with European friends and allies, according to US Department of State spokesman Richard Boucher, w! ho said on Monday that this included fighting terrorism, building democracy, fighting diseases such as AIDS, and cooperation around the world.
