Despite the colder weather, this is a time of year to be spent warmly with family and friends. But all too frequently one person in the household gets stuck in the kitchen preparing the traditional feast, after having done all the shopping for it as well. ("Unfair!" cries Kate the KitchenRat."Unfair!") At the eGG, we want to change all that by offering you a "Thanksgiving No-Brainer" for Thanksgiving. Some of you are seasoned chefs who have everything under control. Others may be preparing their first Thanksgiving Dinner on their own, or you may be so busy working you don't have much time to devote to it. Whichever category you fall into, we think this No-Brainer's guide will be both delicious and valuable. When you think about it, Thanksgiving can really be so eeeeeeeeeeasy! The secret is in the planning and staging of the event. And that's what we have created for you here. Except for minor tasks to be done a day or so in advance, this whole meal can be prepared on Thanksgiving Day in just about four hours, even allowing time to mingle with your guests. Starting with the basic principles below, we offer a complete guide to preparing the holiday dinner so that you can spend more time *out* of the kitchen than in it and still have a fantastic traditional meal. Sweet cider Raisins and nuts Black coffee Our bill of fare is a simple one, and of course as many additions can be made to it as desired. The first article to make on either Monday or Tuesday are the pies. Make the paste of one quart of flour, one half-pound of sweet, good butter, the same of lard, and one small cup of cold water. Chop the butter and lard into the flour, until as fine as powder, wet into a stiff dough, knead into a ball, and roll deftly and quickly into a thin sheet, always rolling from you. Fit on the pie plates.

1 whole 12 to 14 lb turkey, 1/2 cup rosemary sprigs(fresh), 1/2 cup sage leaves(fresh), 1 apple(quartered), 1 stalk celery(halved), 1 onion(halved), 1/2 cup butter(melted). Method:
Remove giblets and neck from turkey; reserve for other uses if desired. Rinse turkey with cold water and pat dry.Loosen skin from the turkey breast a bit not totally detaching. Place rosemary and sage under skin then smooth skin over herbs and back into place.Place apple celery and onion into the neck cavity. Place the turkey breast side up on a rack in a shallow roasting pan and brush with melted butter. Cover turkey loosely with a "tent" of aluminum foil.Bake at 325 degrees until meat thermometer registers about 180 degrees. This should take from 3 1/2 to 4 hours but begin checking after 3 hours. Remove turkey and let stand 15 minutes before carving. Serve with gravy. 2.Turkey Breast Braised With Garlic And Rice:

Most of the food served at the first Thanksgiving was probably influenced by Native American cuisine, or there likely wouldn't have been much on the table at all. Here are some contemporary versions:
Mohawk Corn
Saute 2 cups of whole kernel corn in 3 tablespoons of butter. Add 1/2 cup of black walnuts and 1/2 teaspoon black walnut flavoring. Heat and serve. Serves 2.
Chestnut Cakes
Roast 1 pound of chestnuts. Cool, peel, and puree. Add 1/2 small onion, chopped fine, and enough cornmeal and boiling water to hold the mixture together. Make hamburger-sized patties, and fry in hot oil until golden on each side. Drain, salt, and eat. Do not add salt before cooking as it causes cornmeal to crumble.
Maple-Molasses Baked Beans
1 pound dried navy, kidney, baby lima, pinto, or black beans 4 to 6 strips salt pork or thick sliced bacon 1/2 cup maple syrup 1/2 cup molasses 1 teaspoon dry mustard salt (optional) Place beans in a large pot and cover them with water completely. Soak overnight. In the morning, drain and cover with fresh cold water. Cook beans in liquid, over low heat, for 2 to 3 hours until tender, adding more water as needed to keep beans from sticking. Drain water from beans. Place salt pork or bacon on the bottom and sides of a 1-1/2 quart baking dish. In a mixing bowl, combine beans, syrup, molasses, and mustard. If using bacon, you may want to add a little salt. Pour bean mixture into baking dish and bake, covered at 300 degrees F for 2 hours, stirring occasionally. Uncover and bake 30 minutes longer. Serves 6.

How far ahead do I need to order my turkey?
Generally about two weeks in advance. But if you have a special request (a kosher turkey, an organic turkey, etc.), you might want to place an order even earlier.
I have eight people coming for Thanksgiving. How big a turkey should I get?
A 12-pound bird (1 1/2 pounds per person).
I have 10 people coming for dinner and I only have a table for 6.
Consider serving your meal buffet-style. To spruce up the buffet table, use pillar candles, which take up less space than vases of flowers, and arrange items at varying heights (try this restaurant trick: stack cake pans to create "platforms," then cover everything with a tablecloth). Set up the food on the table, along with plates and silverware, and let people serve themselves and take their food to the living room. (You can put out folding chairs and card tables if you need extra seating).
You could also rent extra folding tables and chairs to "extend" your dining room table. Cover it all with a tablecloth, and no one will be able to tell the difference. If you have one of the Playskool kids' tables, put the children there to save space at the adult table. And if you're serving a lot of different dishes, get an extra folding table to use as a sidebar.

In 1621 the Plymouth colonists and the Wampanoag Indians shared an autumn harvest feast which is now known as the first Thanksgiving. While cooking methods and table etiquette have changed as the holiday has evolved, the meal is still consumed today with the same spirit of celebration and overindulgence. What foods topped the table at the first harvest feast? Historians aren't completely certain about the full bounty, but it's safe to say the pilgrims weren't gobbling up pumpkin pie or playing with their mashed potatoes. Following is a list of the foods that were available to the colonists at the time of the 1621 feast. However, the only two items that historians know for sure were on the menu are venison and wild fowl, which are mentioned in primary sources. The most detailed description of the " First Thanksgiving " comes from Edward Winslow. Click here for a list of foods that may or may not have been on the menu.
  • The pilgrims didn't use forks; they ate with spoons, knives, and their fingers. They wiped their hands on large cloth napkins which they also used to pick up hot morsels of food.
  • Salt would have been on the table at the harvest feast, and people would have sprinkled it on their food. Pepper, however, was something that they used for cooking but wasn't available on the table.

A Thanksgiving Feast for Twelve? No Problem.
Follow our planning, shopping, and cooking strategies for a dinner full of traditional favorites all with a delicious twist
by Michael Brisson Thanksgiving dinner is tricky you've got to please everybody with traditional favorites, but you also want the food to be special. And cooking a huge menu midweek translates into a lot of work. That's why, when Fine Cooking approached me to create a Thanksgiving menu that was both elegant and do-able, I decided to tackle the job the way I would at my restaurant on Martha's Vineyard. My kitchen is quite small, and I have to be really organized. I start by making a list of ingredients I'll need, and then I make a worklist for each of the dishes I'll serve. Most important, I prioritize this list according to how far in advance each task can be done. I did the same thing for Fine Cooking' s Thanksgiving dinner. I developed recipes that are full of terrific autumn flavors. I prepared and served this whole menu to a group of family and friends, streamlined my recipes and worklist a bit further, and sent them along to
