Over the years, USDA's Meal and Poultry Hotline home economists say these are the six questions they hear most often.
How long will turkey last in the freezer? Is it safe to use a turkey I've had frozen since last Thanksgiving?
Yes, a whole frozen turkey can be stored in your home freezer at 0o F for up to one year without appreciable loss of quality. To prevent freezer burn, wrap the turkey in heavy freezer paper.
Which tastes better, fresh or frozen turkey? If I choose a fresh turkey, how long will it keep in my refrigerator?
There is no significant difference in quality between a fresh turkey and a frozen one. But you can only keep a fresh turkey refrigerated 1-2 days before cooking.
How should I thaw turkey? How can I quickly thaw a turkey when time has run out?
Thawing your turkey in the refrigerator is the preferred method. Allow one day for each five pounds. In a hurry? Thaw the turkey in a clean sink. Put it in a heavy freezer bag secured with a twist tie. Cover the bird with cold water, changing the water every 30 minutes to keep it cool. Allow 6-9 hours for a 12- to 16-pound turkey, 9-11 hours for a 16- to 20- pound bird.

USDA Offers Tips on Safe And Easy Thanksgiving Cooking
The U.S. Department of Agriculture's Food Safety and Inspection Service (FSIS) has an array of information available to help consumers prepare a safe, easy and delicious Thanksgiving Day meal. New this year is "Let's Talk Turkey, A Consumer Guide to Safely Roasting a Turkey." Every facet of getting a turkey from the grocery store to the dinner table is included – buying fresh vs. frozen, safe thawing methods, stuffing, roasting and even storing and reheating leftovers. The brochure and other information related to turkey preparation can be printed from the FSIS Web site at: http://www.fsis.usda.gov. Hard copies of this guide are available at no charge and can be ordered by sending e-mail to fsis.outreach@usda.gov. Other publications available on the FSIS Web site can answer a myriad of Thanksgiving-related food safety questions. Here are some frequently-asked questions from fact sheets that can be found by clicking on "Fact Sheets" on the FSIS site. You can select either "Poultry Preparation" or "Seasonal Food Safety." "We had a big family argument at Thanksgiving dinner. Aunt Mildred wouldn't eat the turkey because the cooked meat looked pink. Is pink turkey meat safe?"

A look at the logs of my pages shows that several people find my Recipes page by doing a search on Google or Yahoo for pumpkinpie (sic) or pecanpie (sic). They spell it in one word. I don't on my page in the text, but I do have a pumpkin and a pecan pie image file on the page and so it comes up as a result on such misspelled searches. I'll compile a list of spelling mistakes from my study one of these days, it's pretty interesting. 5:35am Put turkey into smoker
I'll check the turkey about every half hour to make sure it's on track. 10:00am Make the pie crust
10:30am Make Parker House rolls; cover and let 'em rise.
12:30pm Punch down the rolls.
1:00pm Peel the chestnuts.
2:00pm Roll out the pie crust; pre-bake 5 minutes
2:30pm Put the pie filling into the shell; bake. 3:30pm Remove pie from oven. 3:45pm Form rolls in muffin tin. Final rising. 4:00pm Clean and trim the Brussels sprouts; put sprouts and chestnuts in oven to braise 4:15pm Prepare dressing 4:45pm Dressing in oven 5:00pm Time for an Old Fashioned 5:30pm Turkey out of smoker; it's perfect! Use a shallow, sturdy, very big roasting pan for the turkey. Avoid those flimsy foil pans-they can buckle under the weight of a large bird and are dangerous. Turkey Tips: When deciding what size turkey to buy, figure 1 pound per person up to a 15-pound bird, or 3/4 pound per person for a larger one. Defrost a frozen turkey in the refrigerator or in a sink filled with ice water. Never defrost a turkey on the kitchen counter. Harmful bacteria can form quickly. Roast turkey slowly at 300 degrees. Have several clean potholders and a wooden spoon handy to use when turning the bird. Secrets for Great Gravy: When making stock, use lots of aromatic vegetables, garlic, white wine, and herbs for a rich, delicious taste. For big flavor, consider reducing some wine in the pan juices before adding stock and thickening. To avoid lumps when thickening the gravy, never add flour to liquid. Instead, gradually beat cold liquid into the flour until you have a smooth slurry then gradually whisk the slurry into the gravy until it reaches desired thickness.
