DIVISION OF HOUSING AND FOOD SERVICE MISCELLANEOUS NOTES: for the week ending: April 8, and April 15, 2005 FLOYD HOELTING (DIRECTOR) US FOODS AUDIT DHFS Accounting staff completed an audit/price verification review with US Foodservice. This audit is part of an ongoing audit mentioned in the agreement with US Foodservice that went into effect September, 2004. The audit confirmed routine price verifications to make sure the percentages quoted and amounts invoiced to UT were in accordance with the terms of the agreement between the University of Texas at Austin and US Foodservice. In auditing the worksheets provided by US Foodservice for the months of November and January, only three discrepancies were found out of the 50 products listed. The amount overcharged UT was $4.90 and US Foodservice has issued a credit memo in that amount. We have scheduled another audit with US Foodservice for August. INSTITUTE OF TEXAN CULTURES The contract between the Institute of Texan Cultures/UTSA and DHFS/UT has been signed and we are looking forward to beginning the project of creating the Texas Cultures Lounge in Jester and the Great Texas Women’s Lounge in Kinsolving RESIDENT DINING HALLS On Friday April 1, 2005 students were amazed and pleasantly surprised when they showed up to eat breakfast at Lunchtime!!!!     Welcome! The Strand Union (SUB) has a main food court which includes the Union Market that serves cafeteria-style fare featuring traditional, Oriental, Mexican and a variety of other foods. Avogadro's Number is a sandwich deli serving a variety of sub sandwiches and wraps. Located in the lower level of the SUB is the Bobcat Food Court. The Bobcat Food Court is home to the Bobcat Grill, which serves short order items and Tomassitos, which serves Italian foods. The SRO (Standing Room Only) Espresso Bar is located at the entrance to the bookstore and serves a variety of coffee drinks, bagels, and biscotti. Also, adjacent to the bookstore entrance is the Sweet Shop serving a variety of cookies, candy, popcorn, and drinks. Freshens, located next to the Sweet Shop, serves yogurt and fruit smoothies. The Plaza Grill serves hot dogs and other short order items during the summer on the Mall in front of the SUB during the summer.     Assistant Iowa State University Extension Snacking has become a way of life for both adults and children. Nearly all children eat at least one snack per day, with many children eating two or three. In a 1993 study, on a typical school day, 40% of the children surveyed did not eat any vegetables; 20% did not eat any fruit; and 36% ate four different types of snack food. The snacks most commonly eaten by all the students were cookies (38%), ice cream (33%), soda (31%), chips (26%), and candy (18%). In a recent conference concerning children and nutrition, reports showed the preferred snacks are salty/crunchy and ice cream. Although fine when served occasionally, many of these foods have high amounts of fat, sugar, and sodium. Choosing them repeatedly as snacks or including them frequently in meals can lead to poor nutritional balance.
    SWEET SNACKS
    The young child's preference for sweets is related to what parents do or do not allow, according to a Cornell University study of the habits of 122 children aged 36 to 64 months. Children whose parents ate sweets frequently were likely to eat sweets more often than those whose parents seldom ate sweets. Sweet eating was also related to the amount of television watched by the child as well as to the parents' attitude toward giving the child sweets.

    What's wrong with sugary snacks, anyway?
    Sugary snacks taste so good-but they aren't so good for your teeth or your body. The candies, cakes, cookies, and other sugary foods that kids love to eat between meals can cause tooth decay. Some sugary foods have a lot of fat in them too. Kids who consume sugary snacks eat many different kinds of sugar every day, including table sugar (sucrose) and corn sweeteners (fructose). Starchy snacks can also break down into sugars once they're in your mouth. Did you know that the average American eats about 147 pounds of sugars a year? That's a big pile of sugar! No wonder the average 17-year-old in this country has more than three decayed teeth!
    How do sugars attack your teeth?
    Invisible germs called bacteria live in your mouth all the time. Some of these bacteria form a sticky material called plaque on the surface of the teeth. When you put sugar in your mouth, the bacteria in the plaque gobble up the sweet stuff and turn it into acids. These acids are powerful enough to dissolve the hard enamel that covers your teeth. That's how cavities get started. If you don't eat much sugar, the bacteria can't produce as much of the acid that eats away enamel.
