The Itchy and Scratchy show is back in town
Yes - I'm back. (Uh-huh, I'm both Itchy AND Scratchy. Like you would NOT believe.) Behold the mountain of medications that have made up a large part of my daily eats on this vacation.. To make a very long story short, the cat bite quickly healed, but I got a serious allergic reaction to the antibiotics. So I've been itching, like crazy. I've had had to see several Spanish doctors, each providing me with more pills, and several cortison injections. (The latest one even subscribed Valium, to help me get some sleep.)And the itch still won't go away! I'm slowly going insane. It's finally a bit better, at least, so I hope to be rid of it - and the meds - shortly.
Ok, enough of this pity party. Obviously I'm not going to call this my greatest vacation ever, no, but its still been great. We've stayed in a small, sleepy beachtown called Torre de la Horadada, where my parents conveniently enough bought a house a couple of years ago. It's been beautifully warm and sunny, and the water has been great for baths. (And yes, salt water was a bit soothing, thankfully.)

The Food
The Menu
At Ulrika's, Chef Ulrika Bengtsson and her team present a traditional Swedish cuisine with a careful innovative touch. In today's globalized and "fusionized" culinary world, traditional Swedish cooking has entered into somewhat of a danger zone and, in order to have the traditional ways live on, Chef Bengtsson stresses the importance of knowing when - and how – to leave a classic alone. The menu features traditional Swedish dishes such as Gravlax, Pickled Herring, Biff Rydberg and Swedish Meatballs. A selection of classic Swedish Open-face sandwiches will also be available. The catering department has an international menu, tailor made for any event.
The Background
The Roman historian Cornelius Tacticus wrote about the Swedes: "Their diet is simple – Wild fruits, freshly shot venision and sour milk. Without culinary art, they still their hunger." Much water has floated under the bridge since then – and with it have come inspiration, from the outside world. The Vikings, for example, brought raw produce, seasonings and spices from their journeys and medieval monks brought knowledge for gardening and fruit-growing. In the 18th century, cooking techniques such as sauteeing and braising were incorporated into the usual Swedish slow-cooking and roasting methods, creating the platform for what today is known as "Husmanskost" - Traditional Swedish Home Cooking.

These cooking methods tend to produce lower saturated fat levels:
  • Bake, broil, microwave, poach, roast: vegetables, skinless chicken, and lean meats (when roasting-place meats on a rack so fat can drip away). Steam Lightly stir-fry or saut in cooking spray, small amounts of vegetable oil, or reduced sodium broth Grill: seafood, chicken or vegetables

Swedish Pecans make great gift
By BETTY ROSBOTTOM Posted: Dec. 21, 2004 These delectable spiced pecans, introduced to me by my good friend Ann Ryan-Small several holiday seasons back, make a perfect gift for a party host. Ann learned to make these nuts from a Swedish cook decades ago, and so she calls them Swedish Pecans. Advertisement
Ann's Swedish Pecans
1 pound (4 cups) pecan halves
3 large egg whites
1 cup sugar
2 teaspoons salt
2 teaspoons vanilla extract
1/2 cup (1 stick) unsalted butter, melted
Arrange rack at center position and preheat oven to 350 degrees. Spread sheet of aluminum foil about 2 feet long on work surface. Spread half of pecans on each of two heavy 15-by-10-inch) rimmed cookie sheets, and place in oven on center shelf (two shelves if your oven is narrow) until browned and crisp, about 8 minutes. Remove and cool pecans slightly on baking sheets. Retain oven temperature.

RECIPE INGREDIENTS
2 cups milk
eggs

1 tablespoon vegetable oil 1 1/2 cups all-purpose flour 3 tablespoons sugar 1/4 teaspoon salt Lingonberries or raspberries Seedless raspberry jam or fruit spread, warmed Whipped topping RECIPE METHOD In a blender, combine the first six ingredients. Cover and process until blended. Heat a lightly greased 8-in. nonstick skillet; pour 1/4 cup batter into center of skillet. Lift and tilt pan to evenly coat bottom. Cook until top appears dry; turn and cook 15-20 seconds longer. Repeat with remaining batter, adding oil to skillet as needed. Stack pancakes with waxed paper or paper towels in between. Reheat in the microwave if desired. Fold pancakes into quarters; serve with berries, raspberry jam and whipped topping. How 'Green' Is Home Cooking?
Janet Raloff Which is better for the environment: a meal cooked from scratch at home or a packaged frozen or freeze-dried meal cooked up in distant industrial kitchens and trucked to supermarkets? Most consumers would guess the former, notes environmental engineer Ulf Sonesson. Even many food scientists would vote for home cooking as the greener option, he says. However, those guesses probably wouldn't be taking into account economies of scale in food companies' mass preparation of meals, says Sonesson.
PhotoDisc Indeed, when he and his team at the Swedish Institute for Food and Biotechnology made calculations including such efficiencies, they found no big difference between the environmental footprints of home-cooked versus ready-to-eat fare. Each means of putting food on the table has environmental advantages and disadvantages that, in the end, "even each other out," the researchers concluded. That's potentially good news for the environment, Sonesson says, since in Sweden, as in the United States, there is growing reliance on meals that are partially cooked or ready-to-eat, needing little more than last-minute heating.

2 cups fresh orange juice
1/4 cup slivered almonds
3/4 cup golden raisins
1/2 cup pitted whole prunes, snipped in half
8 whole cloves
2 inches cinnamon sticks, broken in half
1/2 inch fresh ginger
4 whole cardamom pods, bruised
1 (750 ml) bottle ruby port 3/4 cup brandy 3/4 cup vodka or aquavit Instructions Place orange juice, almonds, raisins, and prunes into a large pan. Tie cloves, cinnamon, ginger and cardamom in cheesecloth and add to the pan. Bring mixture to a boil, then lower heat and simmer 45 minutes. Discard spice bag and add the port to the pan. Heat until just beginning to simmer, but do not boil. Add the brandy and vodka and heat through. Carefully ignite mixture with a match (throw the lit match into the brew, quickly step back several feet and wait for flames to subside) (make sure nothing nearby will be ignited from the flambe), then cover the pan with a lid to extinguish. Remove match from brew. Serve warm.

3 pounds of salmon, preferably the center cut
1/4 cup sugar
1-1/2 cups freshly chopped dill, stems included
1/4 cup kosher salt
1 tsp fresh ground black pepper
Instructions
Remove all the small bones from the salmon with tweezers. Pat the fish dry. Rub the salmon flesh with 1/4 cup kosher salt, 1 teaspoon butcher-grind black pepper, the sugar and the shopped dill. Cover with plastic wrap. Weight down with a brick or other heavy object and refrigerate 48 to 72 hours. Before serving, scrape off the dill and seasonings. Slice on the bias as if it were smoked salmon. Yield: 8 to 10 servings Credits
