Born in Ethiopia, Samuelsson grew up in Gothenburg, Sweden, attending culinary school there before working in restaurants throughout Europe and America. But ask Samuelsson where he really learned to cook, and he credits his Swedish grandmother. He clearly values the flavors of traditional Swedish cooking, but his quest for what is new and original is never-ending. "Lots of food, good food, and food at the right time" - so goes an old Sk¥ne saying. And living by this dictum is certainly not a problem in Malm¶. The city is full of excellent restaurants. Restaurants and bars are situated close to one another around Lilla Torg and in the city district of M¶llev¥ngen.
Lilla Torg is Malm¶'s most picturesque square, surrounded by restaurants, bars and open-air caf©s. This is also where you'll find the indoor market, Saluhallen, offering a pleasant blend of world cuisine, from low-budget falafel to sushi and exquisite fish dishes. M¶llev¥ngen is an ethnic city district in Malm¶, with lots of exotic restaurants and food shops for people on a budget. At M¶llev¥ngstorget, the square, there's a big food market which is open from 8 a.m. to 2 p.m. on weekdays and Saturdays. You can have lunch at very reasonable prices in Sweden. Most restaurants have fixed lunch prices and offer different meals every day. Often a salad and something to drink are included in the price. A decent lunch will cost you about SEK 50-80. Kroppkakor 4-6 portions 12-14 middle-sized boiled cold potatoes
2 eggs
1-1 1/5 cup of flour (depending on how firm the potatos are)
1 teaspoon salt Filling:
1 middle-sized yellow onion white pepper or allspice (I prefer white pepper) For boiling:
Mash the potatoes. Put it on a breadboard and make a small pit in the middle. Put eggs, flour and salt in the pit and work the potato-dough fast together. Too much kneading makes the potato tough.
Chop finely the onion, cut the bacon into small pieces and fry it until it gets coloured. Flavour it with white pepper. Form the potato-dough to a thick roll. Cut it in thick slices and put a pile of bacon mix in a pit in the slice. Put another slice on top of it, press the edges together and roll it to a ball.
Lower the balls in boiling salted water and boil them approx. 10-12 minutes or until they float to the surface. Pick them up with a perforated ladle and put them on a hot serving plate. Don’t boil too many at a time, they will then have some difficulty to float to the surface.
Serve hot with melted butter and red whortleberry jam or cranberry jam.

Though not as sophisticated as its European counterparts, France and Italy, Swedish cooking is homey and satisfying. My relatives come from Smaland, in a little forested village called Abbetorp. Here, little timbered houses sit along grassy fields by pristine lakes. Along the way, you can collect mushrooms or tiny red lingonberries, which are a must served atop Swedish plattar (pancakes) or meatballs. Wild elk, deer and grouse are plentiful, as are playful otters, the provincial animal. Swedish street food is wildly popular with the country's youth. Some of the most popular stands are korvkiosks, which serve fried or boiled hot dogs with your choice of French fries, mashed or baked potatoes. Around the same time there was an upsurge in interest in Australian native food, and we became used to the Bush Tucker Man, Major Les Hiddins from the Australian Army, appearing in his own weekly television program explaining how to eat witchetty grubs, wattle seeds and honey ants.
About the author: Robin Alan Bell is an Englishman by birth, but migrated to Australia back in '72. Married and divorced there. Spent the last 3 years living by myself on a remote farm in rural New South Wales with no mains electricity, water etc. All power, heating was from natural resources (solar, wind, wood). "Met" a Swedish girl on the internet, came to Sweden for a holiday, loved the place (and the girl), moved to Sweden permanently Christmas 2001 and married the girl in Easter 2002. On Sundays we train and take lessons at the Aurora Table Tennis Club, and occasionally play at the Boulder Table Tennis Club. When will you be leaving for Sweden, and for how long? We are leaving on July 30th, and returning sometime during summer 2004. Where will you be staying? In Stockholm – the exact living accommodations are not firm. We’ve asked for a 3-bedroom apartment or house somewhere in downtown Stockholm. Why are you going? We’ve been looking for an opportunity to do extended overseas training, and Sweden (because of connections, friends, and easy access to training facilities and partners) seemed the logical choice.
