A St. Patrick's Day Feast by Donna Smith
St. Patrick's Day is the Irish holiday honoring the missionary Saint Patrick, who is credited with converting the Irish to Christianity around 400 AD. Though this is a very important thing, it is not what most people think of when someone mentions St. Patrick's Day. The color green, shamrocks, leprechauns, four-leaf clovers and that lucky pot 'o gold are what most people associate with this day. People all around the world celebrate St. Patrick's Day. On March 17, everyone is Irish! It is a day to wear green, have a good time and, of course, to eat. But what do you eat on this special day? If your idea of celebrating St. Patrick's Day is to squirt some green food coloring in your beer, you don't know what you've been missing. This year, prepare a feast that will make your family look forward to St. Patrick's Day as much as they do to Thanksgiving. Traditional Corned Beef Brisket
Don't let cooking a corned beef brisket scare you. It's very simple and does not require much fuss. Corned beef briskets come already cured and ready to cook. Most even come with their own little plastic bag of seasonings you can add to the cooking water.

St. Patty's Day Salmon

(Photo: CBS/Xaviars.com)
(CBS) Chef Peter Kelly grew up in a large Irish-American household in Yonkers, New York, so The Saturday Early Show thought he would be the perfect person to take the Chef on a Shoestring challenge for this St. Patrick's Day weekend.
Irish food in the past was known for boiled meats and overcooked potatoes. New Irish cuisine uses the ingredients considered the backbone of Irish cuisine but adds a modern touch.
Kelly says salmon holds an esteemed place in Irish cooking and culture. According to Irish legend, the ancient hero Finn McCool gained the gift of knowledge by accidentally tasting a salmon. Since then, salmon is considered a fish of wisdom. Kelly owns four popular restaurants in New York's Hudson Valley region, including Xaviar's at Piermont. His restaurant is the only restaurant north of Manhattan to receive a four star review from The New York Times.
We asked Peter Kelly to create a three-course meal for four with our $30 budget. His menu: an appetizer of Potato and Green Onion Soup; an entrée of Crisp Salmon with Bacon and Cabbage served with a Mustard Sauce; and for dessert, Uncle Mike Kelly's Green Milkshake.

52. Too Many Chefs: St. Patrick's Day Soup?

Main March 18, 2004 St. Patrick's Day Soup? In the Expat-flat we celebrated St. Patrick's Day quietly with an old friend and a new movie ( Lost in Translation ). In honor of the day, I made one of my favourite soups, which happens to be green. Sadly, it was only after the fact that I realized that a green soup made with English cheese was perhaps not the most tactful of tributes. Never mind, we'll pretend I used Cashel Blue instead of Stilton . (As an aside, did you know there are NO cheese shops in Stilton , England? How disappointing is that for a food pilgrim?) Broccoli and Stilton Soup (serves 4-6) 3-4 medium broccoli heads
2 onions
4 cups chicken broth
6-8 sage leaves
2-3 cups cheese (Stilton, Cashel Blue, you can also add some cheddar and it's very nice)
1/2 cup milk
3 Tbs/50g butter
A little grated Parmesan as garnish Roughly chop the onions and set them to soften on a medium heat with the butter in a large saucepan. While the onions are cooking, wash the broccoli heads and cut off the florets. Peel the thich stem by cutting into the end of the stalk and pulling down. I cut off the irritating smaller branches rather than peeling them too, but it depends on how conscientious you want to be. (It helps if you have a wormery like me - what isn't food for us is food for the little wriggling ones.) Chop the peeled stems and add them, with the florets to the saucepan. Add the broth, turn up the heat and cover. (You can substitute the water from cooking other vegetables or wine or even just plain water for the broth if you like. Last night, I used half broth and half water from boiling potatoes.)

Celebrating St. Patrick's Day A full-page ad announcing the arrival of one of the world’s most successful musical productions got me thinking about food. The ad states “take them now, they’ll remember it forever” — and before I get to the food part I have to say that this is an entirely accurate statement. I saw this musical years ago when it first hit the London stage and I have to say I haven’t forgotten a moment of it. Not only was it the most boring time I have spent in a theater but the spectacle of human beings dressed in fur and roller skating up and down the theater aisles is one that stays with me to this day. I still have the occasional nightmare where some heavily made-up man careens towards me precariously balanced on skates, furry paws outstretched, singing one of those Andrew Lloyd Webber tunes that gets in your head and wakes you up at 3 in the morning. Anyway, that said, I started to think of how many food memories I have accumulated (“eat it now, they’ll remember it forever” was the way my mind was working). One of the most basic and enjoyable I recall as a child was corned beef hash, and I’ll always remember the creamy, comforting taste of mashed potatoes mixed with canned corned beef, salt and butter. Corned beef has never been something you would consider a sophisticated food — but in terms of comfort, it’s up there with the best of them.

Corned Beef Cowboys? - A Texas Feast for Saint Patrick's Day
by David Bulla In Texas on Saint Patrick's Day, green is the theme, excessive behavior is the norm, and Corned Beef and Cabbage is a staple for many. Most people would not necessarily think of Irish heritage when they think of Texas, but like just about everywhere else in the country, Irish roots run deep in this state. Texas has a long Irish heritage, dating all the way back to when the first settlers migrated to the Spanish ruled colony. Hugo O'Connor was one of the first Irish settlers in Texas, and became governor ad interim in 1767. Irish settlers were significant contributors to the Texas Revolution. Close to 15 percent of the Texan forces at the battle of San Jacinto were Irish. Eleven Irishmen died at the Alamo. By 1860, the census listed over 3400 Irish-born Texans. It's safe to say that the Irish contributed significantly to the history and heritage of the state.

    A St. Patrick's Day feast
St. Patrick and corned beef aren't from Ireland, but these recipes are By Robert Rich and Andrew Trice III On March 17, millions of Americans will force down a meal of corned beef, boiled cabbage and green beer for the sake of claiming their Irish heritage. Meanwhile in Ireland, the corned beef is conspicuously absent. Corning originally refers to the British practice of salting beef to preserve it for long sea voyages. Irish sailors would have eaten corned beef while conscripted aboard English vessels. And Irish immigrants coming to America would have found it popular upon their arrival. But in Ireland itself, there is little of the stuff. In fact, in the late 1980s a restaurateur in Blarney proudly began importing it from New York to please his American customers. He thought they couldn't go abroad without their coffee and corned beef. And St. Patrick himself apparently wasn't even Irish. Hagiographies tell us that he was a Roman slave who escaped his captors in Gallic Brittany, and wound up in Ireland converting the locals to Christianity. One of the earliest canonized saints, his true history is veiled in legend.
