by Penelope Casas, published by Broadway Books In the past decade, Spanish cooking emerged from obscurity, but what brought the country to the forefront were the daring, experimental dishes created by top Spanish chefs. These were recipes that could only be produced by professionals and were beyond the scope of the home cook. So dazzling were these new foods that no one stopped to examine the Spanish traditions so solidly behind these chefs. In For more than 35 years, Casas has led gastronomic tours through every region of Spain, and the recipes she has collected from both professional and home cooks are lavished on her readers with personal recollections that both charm and educate. The cooks who shared recipes are equally lavish with tips and techniques. There are recipes for a white gazpacho made from almonds, grown so abundantly in Andalucia; there are tapas recipes, including what Casas calls 'instant tapas from the Spanish pantry.' There are one-pot stews, seafood dishes, paella and other rice dishes. And the Spanish love pork, whether in sausage form (chorizo - Spanish sausage with that smoky paprika) or filleted, or as tenderloin and we knew we wanted to try these recipes. These are healthy recipes that lie within the parameters of what is known as the Mediterranean diet, however, to be exciting a recipe must have love and passion behind it. This Webpage is an outgrowth of my curiosity about building pages for the Internet. It will have a personal section for a little about me and perhaps some of my family. I believe I have spent some interesting times and travels. I am sure some folks will be interested in reading about them. It will be up to my family to decide which want to have a page here also. My grand daughter has all ready decided she wants a page. I intend to have a section of cooking conversions and a glossary of spanish cooking terms and Spanish/English and English/Spanish cooking words. I have found these terms are sometimes hard to come-by. There will be a section on Barbecue. It will have a definition, places you can go see various pits, and some Recipes for Brining and Smoke cooking. Additionally I want to have information on Cold Smoking. There will also be a section on Recipes. Some of general interest and others from around the World. The hardest part will be separating them by country. In the future I hope to have a section for Amateur Radio also. But there are many things that have to come together first.

    SPANISH GASTRONOMY Spain enjoys a vastly diffuse and dramatic gastronomic heritage. Traditional Spanish cooking draws on European impressions from the north, Moorish influences from the south and, thanks to early explorers ingredients from the Americas and the Far East. Spanish food is existing and diverse. Contrary to most North Americans beliefs it is also mild and deeply flavoured. Moors bought pomegranates and pesto and North African Jews cooking with nuts. Potatoes and tomatoes were brought first by navigators sailing to the Americas and returning with plants, gold, and new ideas. Coriander came to the Canary Islands via traders. Cocinas (cookery or cuisines) in Spain can be divided into a number of gastronomic regions. These divisions have come about because of the evolution of local traditions, each enriched in various ways in antiquity by Greeks, Carthaginians, Romans and Moors. A good part of the country is along the Mediterranean Sea, the north along the Atlantic Ocean the middle on a high plateau. Some parts are dry throughout the year in others rain falls frequently and on others sunshine tends to be abundant.
