Spanish Home Cooking
The journey to my book of Spanish cuisine began with an invitation to celebrate a wedding in Spain. As my husband and I traveled through the country, I realized how much I loved the culture, the language, the food, the beauty of the countryside, and the openness and generosity of the people.
As it happened, that period coincided with my entry into the Internet. It was on line, during a discussion of recipes, that Nacho from Barcelona suggested we get together and write a Spanish cookbook. It seemed like a perfectly natural idea. Though we had no idea where such a book would lead, neither did we doubt that it would yield an array of delicious discoveries.
In all, I made several long trips to Spain, camera and tape recorder in hand, learning as I went. I was invited to share many home-cooked meals, from whole-family gatherings to dinner for two, always in good company. People generously gave me recipes and helpful explanations as well. And at bars, in restaurants, wherever I was, I asked for more ideas.
One spring day, on my quest for the best gazpacho, a waiter in Córdoba said to me, "You Americans always ask how things are made so you can go home and do the same thing." "Of course," I answered, "that's the idea!"

It seems to us that Spanish cooking is not used in US homes as much as it might be. Many of the techniques are quite simple. And, many of the recipes use ordinary ingredients. We think that only unfamiliarity with the cuisine has prevented a wider use in American homes.
Many others agree. See Our Correspondence to the left.

6. What To Eat (and Drink!) In The "real" Spain
One of the most incongruous things about spanish cooking is the apparent inability to make tasty salads they don t even take the trouble to shake the water

What to Eat (and drink!) in the "real" Spain
By Lawrence Bohme
Here in Montefrío, you are far from the international restaurants and British pubs of the Costa del Sol - the system is andaluz only. Few small Spanish towns have proper restaurants that are up to much anyway - what people do here when they want to eat out is order tapas Tapas are the tasty titbits you are always served free with each drink, one of the nicest things about living here! When you want to have a meal, you simply take a table and order a "ración" (don't worry, this has nothing to do with wartime rations, but simply means a rather large portion or serving - you can also ask for a "media ración" , a half portion) of the various tapas. Usually a few raciones plus a dish of salad and bread will do a hungry couple very nicely. The custom here is for everyone to eat from the same dishes by jabbing what they want Arab style, but if you ask for individual plates - platos - they'll be brought to you.

Spanish cooking can initially be described as a cuisine relying strongly on olive oil and garlic. It is Mediterranean cooking and easily identified by the presence of these two elements in the recipes and flavours. These basic and unmistakable ingredients which Spain shares with other Mediterranean countries are found in a wide variety of dishes.
Spanish cooking has basically popular roots. Although a well-served table is habitual, without, however, making any fuss about it except in the Basque Country and Catalonia any refined palate without prejudices will no doubt live through some unforgettable experiences.
In this country the traveller will also discover that customs and dining habits vary considerably from one region to the next. What a difference there is between the attention, ceremony and eating capacity displayed by a tripasai
In order to describe Spanish cooking, therefore, we have divided the peninsula into six areas with special food characteristics. In accordance with this division, the area of the

Of all the regional cuisines in the Peninsula, Catalan cooking is without doubt the most sophisticated, complete and richest apart from possessing most historical evidence. It is, in short, a privileged cuisine, because it developed at crossroads that have connected it throughout history with many other countries, such as France and Italy.
Its main dishes rely on four basic sauces: sofrito, samfaina, picada and ali-oli , and of the four, special mention must be made of the second, because it is strictly Catalan and used with a wide variety of dishess. It is a half-cooked mixture of tomato, pepper and aubergine. Sofrito , on the other hand, is rather widespread in Spanish cooking. It is a fried sauce made with garlic, onion, tomato and parsley. Picada has the special Catalan touch and is added to the simplest dishes so that they never become monotonous routine. It contains garlic, parsley, toasted almonds and chopped pine seeds. Ali-oli is an admirable dressing which probably dates from the times of the Romans and is made with olive oil and garlic, which are mixed very patiently in a mortar until they turn into a creamy paste which is ideal for meat and fish.
The traveller will discover a variety of rice dishes in Catalonia, as well as meat dishes
