85. Nutrition, Food Safety,&Health
The goal of the nutrition, Food Safety, and health program is to help SouthCarolina citizens make healthy food choices and handle food safety.

** You need the free Adobe Acrobat Reader to access some of the publications listed below.
If you do not have it installed on your computer, you can download it now. Consumers are bombarded with food and nutrition information every day. Translating nutrition concerns into improved dietary decisions is difficult. Who and what to believe are confusing and frustrating decisions. These challenges call for creative educational solutions.
The Facts
  • In South Carolina, deaths from heart disease, cancer, and stroke are above the national average. High blood pressure, diabetes, and obesity affect the health of many adults and youth. All of these conditions can be related to poor dietary habits.
Almost half of the food dollar is spent on food eaten away from home where wise dietary choices are frequently hard to make.
The safety of food is a major concern to consumers. Research confirms that consumers need assistance in handling food at home, as this is often a source of foodborne illness.
Families with limited resources find it difficult to afford an adequate and nutritious diet. Government assisted food programs are changing.

The entry-level component has been accredited by Dietitians of Canada. Graduates are eligible for membership in Dietitians of Canada and provincial regulatory bodies. Course Work Several courses that focus on aspects of community health are taken along with students from other specializations. Many courses are nutrition and food related. Elective courses are taken according to individual interests and learning objectives. Adult education, program evaluation, health promotion, and health communications are examples of elective courses. Students who are members of professional/regulatory bodies may replace selected entry-level courses with electives of their choice. Program is a Partnership of the General Mills Foundation, American Dietetic Association Foundation and President's Challenge Fifty nonprofit community groups across the U.S. received grants totaling $500,000 from the General Mills Foundation to support pioneering programs that help children develop lifelong nutrition and physical fitness habits. This year's grant winners include programs such as Splash! Kids Aquatic Program for low-income African-American families in Philadelphia. Others include the Reading, Running and Celery Sticks program in St. Louis that combines physical activities with a reading program for 3-5-year-olds; Portland's Healthy Start Program-Nutrition and Fitness Services that targets first-time mothers between the ages of 16 and 20; Give Me Five, an after-school program in Paul, Idaho in which healthy snacks will be served, 20 minutes will be devoted to physical activities, and a registered dietitian will present a weekly nutrition activity for students.

... FACULTY / STAFF The Center for Research in Nutrition and Health Disparities, Arnold School of Public Health recently invited applications for research projects focused on understanding the role of nutrition in health disparities. Proposals were due March 15, 2005. The decision is now pending regarding the 2005 Seed Grant recipient. The goal of this Seed Grant Program is to fund the work needed to develop an NIH proposal in an area related to nutrition and health disparities. Up to two projects at up to $20,000 for one year will be funded. We also hope to foster interdisciplinary research in this area, and encourage applications that involve collaborations between researchers from two or more departments within the school, other disciplines in addition to nutrition, and those involving scientists from other schools within USC and at other institutions. Topics of interest may include (but are not limited to) studies of diabetes, cardiovascular disease, cancer, and obesity, and may include basic science, clinical, translational, or community intervention research Program Goals:

  • Provide initial project support for new investigators; allow exploration of possible innovative new directions for established investigators in nutrition sciences or health disparities research that represent a significant departure from ongoing funded research; and stimulate investigators from other areas of endeavor to use their expertise for nutrition and health disparities research.
