Though wedding soup is perhaps the clear soup I get the most requests for it's certainly not alone: there's everything from stracciatella, the Roman equivalent of egg drop soup, to tortellini in broth, without which festive winter meals wouldn't be quite the same in northern Italy.

  • 2 1/2 cups cake flour 1 1/2 teaspoons baking powder 1/2 teaspoon salt 1/2 teaspoon ground ginger 1/2 teaspoon ground nutmeg 1 1/2 teaspoons ground cinnamon 1/2 teaspoon ground cardamom 4 eggs, at room temperature, separated 1/2 teaspoon cream of tartar 1 cup unsalted butter, at room temperature 1 tablespoon Bourbon whiskey or 2 teaspoons vanilla extract 2 cups lightly packed brown sugar 1 cup unsweetened pumpkin puree, canned or fresh Powder sugar for dusting the cake
In a large mixing bowl, sift together the flour, baking powder, salt, ginger, nutmeg, cinnamon, and cardamom. Set aside. Separate eggs. Place yolks in a small bowl and whites in a large mixing bowl. In another large bowl, beat the butter until smooth. Add the brown sugar a half-cup at a time beating well after each addition. Beat in Bourbon whiskey or vanilla and continue beating for about 3 minutes. Beat the yolks with a fork then add to sugar mixture, one-third at a time. Using a rubber spatula, scrape down sides of bowl as you mix.

Russian soup (without meat)/
Ciorba ruseasca fara carne
3 qts/3 l water, 1 small carrot, 1 small parsley root, 1 big onion, 1 handful green beans, 1 small red beet, 1/4 small cabbage, 2 green peppers, 1 tablespoon butter or lard, 1 tablespoon mixed chopped parsley and dill, 1/2 teaspoon flour, salt, 1 cup sour cream
Julienne the carrot, parsely root and onion. Set to boil. After a few boils, add the beans cut into pieces and the julienned beet. Let boil for a half hour, then add the cabbage and julienned peppers, salt and peeled, seeded and chopped tomatoes. Fry the flour in the oil, add vegetable liquid and then mix all this with the soup. When the vegetables are tender, add chopped parsley and dill. When serving, add a tablespoon of sour cream in each person's bowl.

    MATZO BALLS
    Ingredients:
    • 1 box regular matzos
    • 1/2 cup egg substitute (Eggbeaters, etc.)
    • 2+ cups minced onion
    • 1+ cups finely chopped fresh parsley
    • Matzo meal
    • Water or broth
    • Your best veggie broth (put lots of celery in)
    Crush up matzos (the crackers) in bowl and cover with water. Let soak 1/2 hour or so. Then "squish up" through fingers until it is kind of a dough. Dry saute the onions in nonstick large deep pot (or saute them in a greased large deep pot). Remove from heat when edges are brown and liquid has mostly evaporated. Stir in "squished" matzos, then the egg-likes, then the fresh parsley. Add matzo meal or water (or broth) to get to the right consistency.
    MATZO BALLS #2
    Ingredients:
    • 1/2 cup matzo meal
    • 1/2 tsp salt
    • 3/4 tsp powdered instant broth (veggie)
    • 2 Tbsp chopped parsley (optional)
    • dash of onion powder
    • 3 egg whites
    • 3 Tbsp cold club soda
    Stir the dry ingredients together. Stir egg whites, club soda, and parsley slightly with a fork and pour over the dry ingredients. Mix well and refrigerate at least one hour.
