BB's Jazz, Blues and Soups is St. Louis' Premiere Blues house. The 700 South Broadway building which houses BB's was known as Phil's Hotel as late as 1969 and has a colorful past.
Since its original construction in the mid 1800's, in an area then known as "Frenchtown" with a further 3 story addition at the turn of the century, the location has been used as a home, boarding house, reception hall, merchantile, millinery, transient hotel, bar, diner, and a House of Ill Repute with 37 rooms between its 2nd and 3rd floors. Prep: 1 hour Yield: 2 gal Cook: 1 hour Portion Size: 6 fl oz Finish: Num Portions: 42 Shelf: 7 days Tools: Blender, China Cap, French Knife, Stock Pot Quantity Unit Ingredient lb fresh tomatoes ea red bell pepper cup salad oil ea yellow onion , diced ea fennel bulb , diced cup olive oil clove garlic , minced strips orange peel tbl salt tbl dried thyme cup tomato paste qt white wine gal water cup chopped fresh basil to taste salt to taste ground black pepper
Procedure: Rub the tomatoes and peppers with the salad oil and set in a 450øF oven until the skins are black and blistered. Remove the tomatoes first and set aside to cool. When the peppers are ready, put them into a covered pan or a plastic bag. Leave until cool enough to handle. When the tomatoes are cool, peel off the skins and squeeze out the seeds. For the peppers, peel off the chared skin, using water only if necessary. Set aside for later. Saute the onion and fennel in the olive oil 10 minutes, until softened. Add the rest of the ingredients except the basil, as well as the reserved peppers and tomatoes. Bring the soup to a boil and simmer for 30 minutes. When the vegetables are tender, remove pan from the heat. Puree the soup in the blender until very smooth. Return to the stove and stir in the basil. Season to taste with salt and pepper. ****Serve this soup with the parmesan twists that are listed in this database.****

When I have a busy week I'll make a quart or more of it and reheat some each morning for breakfast, lunch, whenever, adding the final ingredients at each reheating.
  • Garlic, chopped, 1 tsp Ginger, chopped, 1 tsp Kombu, cut or broken to less than 1" pieces, about 1/4 cup or to taste Water, 1 pint
For reheating:
  • Soy, tamari or Bragg's Miso (I prefer barley or brown rice miso, but any will do) 1 TBS or to taste.
Bring garlic, ginger and kombu to a boil then immediately lower to steep for about 30 minutes.
Chill. Reheat as needed.
Finish soup with a dash of soy or tamari or Bragg's, and the miso.
Add other ingredients as you like: wakame, vegetables, tofu , etc. New to Kombu?
I use the whole dried weed, not the powder, giving it only a very quick rinse.
Also, I do not strain the stock as I enjoy eating the kombu.
I have used the thick, tough variety as well as a thin, delicate variety.

Prep: 30 minutes Yield: 2 gal Cook: 1 - 1« hours Portion Size: 6 fl oz Finish: 30 minutes Num Portions: 42 Shelf: 2 days Tools: Blender, China Cap, French Knife, Stock Pot Quantity Unit Ingredient ea yellow onion , chopped ea leek clove garlic , minced ea celery , chopped cup butter lb asparagus tbl dried thyme ea bay leaf tbl ground white pepper qt water lb spinach , washed to taste salt
Procedure: Saute the first 4 ingredients in the butter until very soft, about 15 minutes. While this is cooking, wash the asparagus very well, and trim off any dirty ends. Cut the tips about 2" long, and set aside for later. Coarsely chop the rest of the stems and add to the vegetables that are cooking. Add in the thyme, bay leaf, and pepper, and cook another 10 minutes. Add the water and simmer for 30 minutes, until all of the vegetables are very tender. Remove from the heat and allow to cool for 15 minutes. Puree the contents of the pot, adding spinach as you process until all are pureed. Pass the soup through a china cap and return to the heat. Season to taste with salt and pepper and stir in the reserved asparagus tips. Simmer the soup for 5 minutes until they are crisp tender. Serve the soup topped with the hazelnut butter listed in this database. ****The soup may be enriched with chicken stock, though it will no longer be a vegetarian soup.****

  • Get 4 cups of water with one tablespoon of flour in it and soak the beans for 8 hours. Rinse the beans, combine them with 6 cups of chicken stock in a large saucepan and simmer, covered, for around one hour. Add the mushrooms to the cooked beans. Also add the green beans, carrots, olive oil and a couple of pinches of salt and pepper. Add another two cups of water, bring to boil and simmer coverd for approximately 30 minutes. Add pasta, some more pepper and tomatoes, cook for about 10 minutes. It's now ready to eat.
