2. Party Foods - Snacks
Suggestion for healthy and nutritious snacks for children's festivities.

Carmel Corn
  • 6-8 qt. popped corn (no salt) 2 sticks margarine 2 cups brown sugar 1/2 cup white corn syrup 1 tsp. salt (optional)
Makes 20 to 24 one cup servings.
Gorp
  • 1 box unfrosted cereal 1 large box raisins 1 jar dry roasted peanuts 1 large package candy-coated chocolate pieces
Mix in large bowl. Serve. Makes 20 one cup servings.
Yummy Fruit Dip
  • 1 8-oz. pkg. cream cheese, softened 1 jar marshmallow creme
Soften cream cheese. Cream ingredients together. Refrigerate until ready to serve. Serve with fresh fruit. Makes 15 one tablespoon servings.

Pumpkin/Peanut Butter Dip
  • 1/2 tsp. vanilla
Combine all of the ingredients above. Cut apples, bananas and other fruit into bite-sized pieces to serve with the dip. Serve as a snack or with the meal. Makes 20 to 24 one tablespoon servings.
Taco Wings
Whisk together 1/4 cup catsup, 2 tsp. cider vinegar, 2 tsp. brown sugar and 1 package taco seasoning mix. Pour over 3 lbs. of chicken wings (remove tip portion and cut remainder into 2 pieces.) Microwave on high for 12 minutes. Makes 10 two-piece servings.

Healthy Snacks
Snacking has become a way of life for both adults and children. A recent study reported that over 95 percent of the women and children in this country have at least one snack each day. Many common snack foods are high in fat, sugar and sodium. If these foods are used for snacks frequently, they can affect our health. Snacks can be good for us if we make good choices. Children especially may benefit from healthy snacks. They often cannot eat enough at three meals a day to satisfy their hunger and provide all of the nutrients they need. Snacks can provide the additional foods they need. Snack Tips
  • Set aside a "snack spot" in the refrigerator and cupboard; keep it stocked with nutritious ready-to-eat snacks. Offer snacks at regular times, such as midmorning and midafternoon. Don't let children nibble constantly during the day. Avoid high sugar, fatty and salty snacks, such as candy and soda pop. Snacks are a good way to introduce new foods. Include a game or activity to learn about the new food and let the child help fix it. Plan snacks to help meet the suggested number of servings per day from the Food Guide Pyramid: 6 to 11 servings from the breads, cereal, rice and pasta group; 3 to 5 servings from the vegetable group; 2 to 4 servings from the fruit group; 2 to 3 servings from the milk, cheese and yogurt group; and 2 to 3 servings meat, poultry, fish, eggs, nuts and dry beans group.

by Melani Roewe Now that we have our bird friends' tables set, it's time to begin planning what you might like to munch on while hiking or camping outdoors. Even a few hours' walk can be enough to make your tummy grumble! Did you know that even the simplest foods taste extra yummy when eaten outdoors? That's right! Here are some very simple treats you can pack for your next hike, whether it's around the block or up and over the closest hill. Next time, I'll show you some easy, and really tasty, recipes for your camping meals. SUPER EASY: Apple Surprise Using an apple corer or a knife (have an adult help you with the knife) , cut out the inside of an apple. Remove the core and all apple seeds. Fill the apple with peanut butter or a mixture of peanut butter and raisins. MMM-good! Orange Sipper Using a knife or the tip of a potato peeler, poke a hole about one third of the way through an orange. Insert a plastic straw into the hole. When thirsty, suck the orange juice out of the orange. ( You may need to "massage" the orange)
