C o o k ... a - Cooking Seafood M any a Friday in South Louisiana consists of a seafood cookout. We normally pick Friday because during Lent (Catholic religious observance) we won't eat meat. It just kind of carries over. Seafood is a big staple here also and in great abundance so naturally we cook it a lot. Cooking seafood calls for a few general rules....
  • Keep it cool before it goes into the pot. Marinade fish and shrimp at least an hour Don't over cook it. Cook a little more quantity than you think you need!
In general for adults....
  • 1 lb of fish per person 4 lbs of unpeeled crawfish per person 1/2 lb. shrimp (fried) per person 1/3 lb shrimp or crawfish tails (in sauce) per person 3 large to 5 medium whole boiled blue claw crabs per person
Keep in mind that side dishes constitute the make-up of the entire meal so increase or reduce the amount of seafood as needed. For instance if you're frying fish and shrimp and will have a potato salad, white beans and rice and French bread with it consider reducing the seafood portions. Serve fried seafood hot and season it right out of the oil. If you're not eating right away put the oven on 200°F (or as low as it will go) and let it warm up. Cover the seafood with paper towels (not plastic wrap) or loosely with foil, turn the oven off, and put the pan in the oven. If you seal the pan with plastic wrap or foil the seafood will become soggy. If you leave the oven on it will dry out too much. This only works for so long. After a few re-heats the seafood will dry out anyway.

OCEAN'S SEAFOOD AND GINGER STIR FRY
(Recipe copied from an "Ocean's" canned salmon advertisement)
1 Tbs oil
1.5 tsp. fresh ginger, minced
1.5 tsp. fresh garlic, minced
1.5 cups vegetable stock
2 Tbs Soy sauce or tamari sauce
2 Tbs Brown sugar
1/4 tsp Tabasco sauce
1 Tbs Lemon or lime juice
1 Tbs Cornstarch
1 tsp Sesame oil 2 Tbs Rice wine 1/4 cup oil 2 cans Pink Skinless and Boneless Salmon (170g) (I used pink salmon - still had bones and skin, and tasted fine) 1 cu p Imitation crab (optional) 4 cups Asian blend frozen vegetables (thawed, drained) 4 cups cooked rice or noddles Salt and pepper to taste 1. Heat the oil in a small saucepan. Add the ginger and garlic and stir fry for 30 seconds over medium heat to bring out the flavour. Add the stock, soy sauce, brown sugar, Tabasco, sesame oil and lemon juice. Bring to a boil, stirring. 2. Dissolve the corn starch in the rice wine and whisk into the sauce. Heat until sauce thickens and reaches a full boil. Simmer for 30 seconds. Remove from heat and set aside. 3. Have all ingredients ready. Heat the oil in a large skillet over high heat until very hot. Add the vegetables and saute until crisp-tender, about 1-2 minutes. Add the sauce, the salmon and imitation crab (optional) in chunks and season to taste as necessary. Heat through briefly and serve at once over rice or noodles.

Season's Best recipe book for Spring/Summer from Pampered Chef
1 pkg. (15 oz.) refrigerated pie crusts
2 eggs
1 1/2 TBLSP. Asian Seasoning Mix (I don't have this yet, so I used some ground ginger, garlic powder and some teriyaki sauce)
1 pkg. (8 oz.) flake-style imitation crab meat
4 oz. mozzarella cheese, grated
1/4 cup carrott, grated
1/4 cup green onions, thinly sliced
Separate one egg reserving white for later. Take yolk from separated egg plus the other egg and place in bowl. Add seasonings. Add chopped crab meat, grated carrot, sliced green onion, and grated cheese.
Take either your PC deep dish baker, or a deep dish pie plate, and lay one crust in the bottom, pressing up the sides as you go. Brush bottom crust lightly with egg white. Place filling in crust.

2 cups heavy whipping cream
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh thyme
2 teaspoons salt
2 teaspoons ground black pepper
1 1/2 teaspoons crushed red pepper flakes
1 teaspoon ground white pepper
1 cup chopped green onions
1 cup chopped parsley
1/2 pound shrimp, peeled and deveined 1/2 pound scallops 1/2 cup shredded Swiss cheese 1/2 cup grated Parmesan cheese 1 pound fresh fettucine pasta Directions: NOTE: Reduce pepper amounts a bit unless you like this very spicy. As it is written, it is too spicy for most people. Cook pasta in a large pot of boiling salted water until al dente. Meanwhile, pour cream into large skillet. Cook over medium heat, stirring constantly, until just about boiling. Reduce heat, and add herbs, salt, peppers, onions, and parsley. Simmer 7 to 8 minutes, or until thickened. Stir in seafood, cooking until shrimp is no longer transparent. Stir in cheeses, blending well. Drain pasta. Serve sauce over noodles. Makes 5 servings.
