The Best Seafood Money Can Buy
Never Frozen, Shipped Fresh Overnight
The waters surrounding Key West provide some of the best fishing and seafood in the world. Unlike most gourmet food businesses who "flash freeze" their seafood, we don't freeze or store any seafood, but hand select it daily from the best of the day's catch. Plump lobster tails, sweet stone crab claws, jumbo pink shrimp , and a variety of the fishermen's prize catch of the day, boneless and beautifully filleted. We are dedicated to providing the best seafood money can buy, never frozen, shipped fresh overnight. "Your gift certificates are always a big hit! Thanks for providing such a unique and classy gift option."
B.D., Washington, DC
"Dear Mark and Brooks. The Key Lime Pie was fabulous. Thanks so much."
" My dinner party was a huge success thanks to your seafood. My guests gobbled down every last shrimp stone crab claw, and piece of key lime pie . Not only did it taste great, but it was fun to eat and easy to prepare ."

Baking (Roasting)
This method works well for almost any fish. Baked fish dishes can also include veggies, pasta, or cheese-crumb toppings.
  • Brush fish with a small amount of fat (oil, margarine) or a light marinade. Cooking spray works well, too. Place in a single layer in a baking pan, uncovered. Season fish with a sprinkling of herbs; salt and pepper to taste. Bake at 450 degrees until internal temperature reaches 140 degrees.
  • Top of Page
This method works well for fish fillets, steaks and small whole fish.
  • Set oven to BROIL. Carefully place fish on a preheated, oiled broiler pan. Cook 4-6 inches above the source of heat, turning once and brushing with oil or marinade. (Thinner fillets don't need turning.) Allow 10 min of cooking time per inch.

    Foil Cooking
Cooking a foil packet is not only easy, it's a great way to cook without adding fat. Moisture is trapped in the packet and steams the fish. (Not recommended for fish steaks.)
  • Arrange each serving of fish on a separate piece of heavy-duty foil.

seafood cooking. Peru is famous for its seafood. Its reputation has been further enhanced by the diversity and quality of the fish and shellfish to be found
PERUVIAN SEAFOOD he Peruvian coastline has long fascinated even the most renowned foreign explorers who have flocked to Peru over the centuries. Nineteenth-century German scientist Alexander von Humboldt was one of the first to study the Peruvian sea current that would eventually bear his name. Explorers from other nations were to follow suit. American novelist Ernest Hemingway, author of The old man and the sea, spent several seasons fishing for sailfish off Cabo Blanco on Peru's sun-drenched north coast. These days, more visitors come drawn by Peru's cooking, and head first for the cebiche, among other classic dishes from Peru's trove of seafood recipes. Rich in resources Visitors who travel along the Peruvian coastline will discover the diversity of fishing techniques, which range from fishing with bait, hauling in shellfish with harpoons and nets, underwater deep-water fishing to small-scale fishing boats and huge industrial trawlers. These include seacraft from as far afield as Japan, South Korea and Europe, professionals seeking out tuna, giant squid, shark and cod from the deepest waters. For many years, and even recently, Peru has led the world in fishmeal exports. Fish exports for human consumption include canned tuna, Pacific Bonito and sardines, as well as frozen Pacific Hake.

    for seafood cooking demonstration
Chef Frank Terranova has plans for updating these versatile classics. Terranova, Johnson & Wales University culinary instructor and NBC10’s "Cooking with Class" featured chef, will create and share modern dishes using these age-old species in a lecture-demonstration Wednesday, August 13. The demonstration runs from 6-7:30 p.m. in the Culinary Amphitheater of the Harborside Academic Center on the Johnson & Wales campus. The campus is located off Shipyard Street in Providence. Free parking is available.
"Old-time Seafood for Modern Tastes" is Terranova’s fourth presentation for the Community Summer Lecture Series, which each year explores the wonders of Narragansett Bay and nearby waters. This year’s series investigates modern missions for ancient resources, with talks including past-to-present examination of sea-dwelling creatures, from storybook marine mammals to nightmarish deep-sea denizens, and a back-to-the-future exploration of drugs from the sea. The annual series is sponsored by Rhode Island Sea Grant, URI Cooperative Extension, and the URI Nutrition and Food Sciences program. "Old-time Seafood for Modern Tastes" is cosponsored by Johnson & Wales University College of Culinary Arts.
