NO NONSENSE SLOW COOKED SOCKEYE SALMON
Serves 4
4 salmon fillets (6 ounces each)
Salt
Freshly ground black pepper
Preheat oven to 275 F. Sprinkle fillets with salt and pepper to taste. Place on lightly oiled baking sheet and cook until centers are just cooked through (10 to 12 minutes each). Place under preheated broiler for about another minute. Serve with rice, oven-roasted potatoes and corn on the cob or steamed vegetables.
Note: Leaving skin on fish helps keep it moist and intact while grilling.

This method works well for almost any fish. Baked fish dishes can also include veggies, pasta, or cheese-crumb toppings.
  • Brush fish with a small amount of fat (oil, margarine) or a light marinade. Cooking spray works well, too. Place in a single layer in a baking pan, uncovered. Season fish with a sprinkling of herbs; salt and pepper to taste. Bake at 450 degrees until internal temperature reaches 140 degrees.

    This method works well for fish fillets, steaks and small whole fish.
  • Set oven to BROIL. Carefully place fish on a preheated, oiled broiler pan. Cook 4-6 inches above the source of heat, turning once and brushing with oil or marinade. (Thinner fillets don't need turning.) Allow 10 min of cooking time per inch.

    Cooking a foil packet is not only easy, it's a great way to cook without adding fat. Moisture is trapped in the packet and steams the fish. (Not recommended for fish steaks.)

    Crab cakes
    1 egg yolk 1 Tbls. mayonnaise 1/2 Tbls. minced onion 1/2 Tbls. diced celery 1/2 tsp. Dijon mustard 1/2 tsp. Old Bay 1/4 tsp. minced garlic 1 dash salt 1 dash black pepper 1/4 cup dry bread crumbs - divided 1/2 lb. crab meat 1 Tbls. vegetable oil
    Combine all ingredients, except crab meat, bread crumbs, and oil. Gently fold in crab meat and 1/8 cup bread crumbs with your hands. Spread remaining bread crumbs on a plate. Divide crab mixture into 4 equal parts, roll into balls, and press to a 1/2" thickness on the bread crumbs. In a large skillet, fry one side of crab cakes in oil for 3 minutes. Lower the heat, flip crab cakes, and cook an additional 7 minutes.

    Parsnip Leek Mashed Potatoes
    1 1/2 lb leeks (white and pale green parts only), chopped 5 tablespoons unsalted butter 1 lb russet (baking) potatoes 2 lb parsnips, peeled, quartered lengthwise, woody cores discarded, then cut crosswise into 1/2-inch pieces 2 cups water 1 1/2 teaspoons salt 1/4 teaspoon white pepper 1/8 teaspoon freshly grated nutmeg 1 tablespoon finely chopped fresh flat-leaf parsley
    Wash leeks in a bowl of cold water, agitating water to loosen any sand, then lift leeks out and drain in a colander. Pat dry. Cook leeks in 4 tablespoons butter, covered, in a4- to 5-quart heavy pot over moderate heat, stirring occasionally, until slightly softened, 5 to 7 minutes. While leeks are cooking, peel potatoes and cut into 1-inch pieces. Add potatoes, parsnips, water, salt, white pepper, and nutmeg to leeks and bring to a boil, uncovered, stirring occasionally. Reduce heat and simmer, covered, stirring occasionally, until vegetables are very tender and most of liquid is absorbed, about 30 minutes. Coarsely mash, then serve sprinkled with parsley and topped with remaining tablespoon butter.

    Ingredients:
    1 Salmon Filet
    2 tbs mayonaise
    2 tbs sour cream
    1 tbs dill leaves
    1/2 lemon
    Directions:
    Grill Salmon Filet for about 8-10 minutes or until cooked.
    Instead of using a grill, I use a skillet with ridges like a grill and coat the bottom on the skillet with a little bit of olive oil. To make the sauce - In bowl place mayonaise and sour cream. Stir in juice of 1/2 lemon. Slowly stir in dill leaves. Cut the salmon into serving sizes of about 2-3 inches wide. Serve with steamed squash, zuchinni and broccoli. Serves 2.     Chef Terranova updates old-time favorites
    for seafood cooking demonstration
    Chef Frank Terranova has plans for updating these versatile classics. Terranova, Johnson & Wales University culinary instructor and NBC10’s "Cooking with Class" featured chef, will create and share modern dishes using these age-old species in a lecture-demonstration Wednesday, August 13. The demonstration runs from 6-7:30 p.m. in the Culinary Amphitheater of the Harborside Academic Center on the Johnson & Wales campus. The campus is located off Shipyard Street in Providence. Free parking is available.
    "Old-time Seafood for Modern Tastes" is Terranova’s fourth presentation for the Community Summer Lecture Series, which each year explores the wonders of Narragansett Bay and nearby waters. This year’s series investigates modern missions for ancient resources, with talks including past-to-present examination of sea-dwelling creatures, from storybook marine mammals to nightmarish deep-sea denizens, and a back-to-the-future exploration of drugs from the sea. The annual series is sponsored by Rhode Island Sea Grant, URI Cooperative Extension, and the URI Nutrition and Food Sciences program. "Old-time Seafood for Modern Tastes" is cosponsored by Johnson & Wales University College of Culinary Arts.
