Lobster 101
Maine lobster, also known as the American Lobster, is found in the waters between Eastern Canada and North Carolina, with Maine contributing to more than half of all lobsters caught in the United States. Maine lobster is easily distinguished from the "spiny" lobster (commonly called rock lobster) caught along the southern Atlantic coast and the coast of California by its large heavy claws. The spiny lobster has tiny claws and is usually marketed as uncooked frozen tails. Because of its sweet, delicious flavor and tender texture Maine lobster is the world's most prized catch. Live Maine lobster is available year-round, with the bulk of the catch harvested in the summer and fall. In the winter months many lobstermen pull their traps to avoid damage and danger of Nor'easters and other storms. The price of lobster, like most prices, is ruled by supply and demand, as well as, the weather. Lobster prices usually rise at the start of Memorial Day and drop as the season ends with Labor Day weekend. May and September are good times to buy hard-shell lobsters. In June and July, when lobster molting is at its peak, the majority of lobsters sold locally are soft-shell.

    Seafood Cooking Methods Although the majority of seafood cooked in American homes is either baked, broiled or fried, there are many other delicious ways to prepare fish. Note that overcooking is the most prevalent cooking error; in fish that is done, the once-translucent meat is opaque, flakes at the center, and separates easily from the bones. The easiest rule of thumb is the Canadian Cooking Method, which states that finfish require cooking for 10 minutes per inch of thickness, at a temperature of 450 degrees F.
    LOW CALORIE SEAFOOD COOKING Seafoods are inherently low in calories; even the fattiest fish are healthy compared with other protein sources. Lean fish are generally under 100 calories per four-ounce (raw) portion. The primary cause of calorie buildup in seafood dishes is the added ingredients, and/or the cooking method. Poaching and steaming add no calories, while baking or grilling fish wrapped in foil requires few or no added calories. For traditional dry heat cooking methods, seafoods higher in natural oil content require less basting with oil-based sauces than do lean fish. Wine, beer, horseradish, Worcestershire or teriyaki sauce can be substituted for rich sauces, and the many low-cal alternatives to regular salad dressings and other ingredients make it an easy task greatly to reduce the calories involved in cooking delicious seafood dishes.

Doris Hicks, Delaware Sea Grant Seafood Specialist, suggests these tips for holiday cooks: "Keep cooking area, utensils and hands clean. Raw and cooked seafood should be kept away from each other to prevent cross-contamination. Keep seafood as close to 32°F as possible, and use it quickly. Fresh fish should be used within two days of purchase; smoked fish stores no longer than four or five days. The shelf life of shellfish varies, however, from as long as ten days for oysters in the shell to one day for squid". Hicks notes small platters for replenishing (prepared ahead and stored in the refrigerator or kept warm in the oven) are safer than adding to a food platter already on the table. Perkins, Extension Seafood Technologist Stovetop Seafood Cooking A t one time cooking seafood meant pulling the deep-fat fryer out of the bottom kitchen cabinet, filling it with shortening or oil, and frying some variety of breaded seafood. While deep frying has its place, it is just one of several "stovetop" cooking methods available for cooking seafood. Baking, broiling, oven frying, boiling, steaming, poaching, and sauteeing are cooking methods that can be used as alternatives to deep frying. "Stovetop-Suitable" Alabama Seafoods Whether you catch them yourself or purchase them from a seafood retailer, many Alabama fish, crustaceans, and mollusks are ideal for stovetop cooking.
