Cooking Fish
A general rule for baking or broiling fish is 10 minutes per inch of thickness at 400-450 degrees F, turning the fish halfway through the cooking time. This rule does not apply to microwave cooking or frying. Fish less than 1/2-inch thick do not have to be turned. If fish is cooked in a sauce or foil, add 5 additional minutes to the cooking time.

The first recipes in this section are the basics: fish deep-fried, pan-fried, grilled, baked, steamed and poached. The techniques are those used in our restaurants. You can, if you like, simply serve with lemon butter and parsley, or use one of the sauces in the Sauces chapter.
Customers sometimes say: "We cook fish at home but cannot get it to taste the same as when we have it at the restaurant. Why?"
Naturally, we buy large fish for the restaurants and fillet them in thicker portions ready for frying or grilling. This also means the bones are easier to take out. With your small family, you do not need fish of this proportion, and you buy small fillets of fish, and generally just flour it, put a little oil in the pan and fry it too quickly. Because the fish is so delicate, it needs only a few minutes in the oil, and when you do not have any covering on it, it dries even more quickly. You get disappointed with your small fillets of fish and start to get frustrated picking bones out of your mouth. Spend a little extra time in selecting fish, and if you happen to have bones in the fish you have, take out as many as you can first. This goes for grilling, too. And remember the following hints: The fresher the fish, the better the dish.

Somewhere along the way, the rumor started that fish is difficult to cook. Nothing could be further from the truth. Whatever cooking methods you prefer, seafood can be a perfect fit.
How Much Fish to Buy
While we encourage you to talk to our seafood team members about your specific purchase, here is a general guideline:
  • Whole or round fish: 3/4 pound per person Dressed or cleaned fish: 1/2 pound per person Fillets or steaks: 1/3 pound per person
Is It Done Yet?
Cook your seafood according to the "10 minutes per inch" rule, based on the maximum thickness of the fish. For example, a one-inch thick fish fillet should be done after 10 minutes of cooking time. Here are some other tips to help you determine when your seafood is ready to eat.
  • Seafood steaks and thick fillets should be turned over halfway through the cooking time. Fish less than 1/2" thick do not need to be turned. Fillets should be placed skin side down - the skin will remove easily after cooking.

Lobsters are a snap to cook. Steaming and boiling are the two most common ways to cook lobsters. Steaming cooks whole lobsters more slowly than boiling, so it reduces the chance of overcooking. It also makes less of a mess! Never overcook your lobster this makes the meat tough and stringy. For cooking a bunch of lobsters, boiling gives you even fast cooking. Note: If the roe inside a female body is blackish instead of the customary red, it is undercooked. Put the lobster back into the pot until the roe is red. In the winter, lobsters have a harder shell and therefore require more time to cook. In the summer, the lobsters have a softer shell and require less time.

1. Pour about 2 inches water in the bottom of a pot large enough to comfortably hold the lobsters. Add 2 tablespoons of salt for each quart of water. (Feel free to use a steaming rack to place the lobsters on or just add directly to the pot.) Bring water to a rolling boil over high heat. Place lobsters in the pot (head first), cover tightly, return to a boil as quickly as possible and start counting the time.
2. Steam a lobster for 13 minutes per pound, for the first pound. Add 3 minutes per pound for each additional pound thereafter. For example, a 2-pound lobster should steam for 16 minutes and a 1 ½-pound lobster should steam for 14½ minutes.
