Main April 05, 2005 Remain in Light We're moving shortly to a new apartment and as part of the move we've officially eschewed cable tv. I'm having a cable line run, but only for Internet. We'll also run our phone off of it. One of the few things I will miss on cable in the Food Network. But I'm happy to report that the prospect of losing Emeril and Alton (ouch!) and Rachael (meh) has forced me to rediscover Ming and Jacques and those folks at Cook's Illustrated and a new guy, Andreas. Andreas Viestad is the host for the first two seasons of New Scandinavian Cooking . Each week, Andreas takes us to a new location significant to Scandinavian (and especially Norwegian) culture and puts together some dishes that are unlike those being shown anywhere else. I'm a bit biased towards the subject matter because I'm a quarter Norwegian, and have been fascinated by the idea of Scandinavian food ever since I sampled the Christmas boxes of traditional sweet baked goods my Norwegian grandmother sent to us in Chicago each year from her home in Santa Rosa, California. But trying to find Scandinavian and specifically Norwegian recipes can be a challenge. Or it was a challenge until this show arrived.

    Christmas: Same Procedure Every Year
    Andreas Viestad, Norway's most famous food writer, has for the last two years presented Norway and Norwegian food through his PBS series "New Scandinavian Cooking." Armed with a mobile kitchen, an enthusiasm like none other and a spectacular backdrop of Norwegian fjords and mountains, Viestad has shown Americans that Norwegian food is so much more than lutefisk and lefse. His book, "Kitchen of Light", has sold almost 30.000 copies in the U.S.
    Here is an excerpt from "Kitchen of Light", Andreas Viestad's collection of wonderful stories, pictures and recipes, available in a bookstore near you:
    The question was as inevitable as the darkness of winter. November had just laid her cold damp hands on us, and the merchants had already begun to set up their kitschy Christmas decorations. And, just as sure as there would be six weeks of pre-Christmas parites, shopping, and preparations, there would also be the ever-returning question: "So, what are you having for Christmas?" meaning, "What are you and your family eating for Christmas Eve supper?" I have always tried to dodge the subject, for I know I cannot answer to the satisfaction of the questioner.
    In Norway, Christmas dinner is the most important meal of the year. It is the one time when otherwise modern people return to their roots, to what they perceive as an unchangeable trardition. This one time of year, they lay aside their balsamic vinegar, Thai curry, prefabricated pizzas, and whatever else they eat the rest of the year and cook what they grew up with, the way Mother made it. If done any other way, it would not be Christmas.

    Heres another Scandanavian Place I have ordered from that is good Nordic House . Prices are cheap and much of the food is homemade and ships from the west coast (oregon?). The Swedish Meatballs rock.
    Anyone know where to buy salt Cod over the Internet? I think it is illegal to catch Cod now as of the early 1990s after the collapse. But it may still be bought and sold in other countries?
