Andreas Viestad introduces us to his Norway—taking us fishing for cod, halibut, and salmon; gathering chanterelles, porcini, and wild berries; offering recipes that emphasize simple, fresh, and natural ingredients, whose flavors need little embellishment to create elegant and impressive dishes. Modern Scandinavian cooking, at least as represented here, is ideally suited to the way we eat now, with a healthy dose of fish and respect for ingredients that lets their flavors shine. In fact, about half of the book is dedicated to fish dishes. There are two recipes for transforming salmon into the Scandinavian classic Gravlaks and more innovative treatment of seafood in the form of Grilled Mackerel with Sweet Chili Glaze and Charred Sage, and Thyme-and-Garlic Steamed Mussels with a Hint of Cinnamon. An entire chapter on the staples cod and potatoes includes Truffled Cod with Garlic-Veal Glace and rustic Potatoes with Goose Fat and Lemon. Vegetable, meat and poultry dishes are less central than the trove of seafood recipes, but they hardly seem like afterthoughts in recipes such as Lamb Chops with Mushrooms, Zucchini, and Yogurt-Mint Sauce, and Onion Pie with Jarlsberg and Thyme. Desserts are often stunningly simple and fruit-based: Strawberry Snow is a simple berry mousse, while The Devil's Rhubarb consists of raw stalks dipped in sugar and nibbled between sips of vodka.

Andreas Viestad (Photo by Mette Randem, courtesy of Artisan Publishing) In his new book, Kitchen of Light: New Scandinavian Cooking With Andreas Viestad, the Oslo-based food writer says Scandinavian cooks didn't abandon their traditional dishes. Instead, Viestad says they gave it a new flair. Viestad hosts a series of the same name on PBS, is scheduled to appear at various locations around the Twin Cities in the next few days.

Posted by Biggles on November 10, 2004 Alright, I can't keep quiet any longer. I don't usually mention TV Chefs, most of you already have ones you watch for whatever reason. It's so damned easy to find cooking shows these days, I just don't bother saying anything. But Andreas Viestad has me hooked. And besides, the jury isn't out yet on The Hippy Gourmet Take a close look at the image on the right. That's him cooking up on the edge of that darned rock. He was more than a little edgy about being that high up.
I remember an episode that found him on the Norwegian coast somewhere in a little nine million year old fishing village. He was in some old empty warehouse, clearly more than 200 years old. He has his portable kitchen set up in front of an open shipping door that looked directly in to a fierce wintery Viking ocean. Andreas was shaking a bit from the cold (Norway has REAL winters, just in case you were wondering) and said he couldn't do it, he had to close the door. He closed the door and got to work, but I'm thinking, it still must be far below freezing, open door or no. Didn't bother him a bit. Those wacky Norwegians. Andreas Viastad is thoroughly enjoyable to watch, each time. There hasn't been one show I couldn't find something worth considering cooking myself. He's hired himself a crew that blows the competition to bits. His intro music, cinematography/photography and and and well, everything fits together seamlessly. From location to location, from recipe to recipe, perfection.

During the long, dark Scandinavian winter, the meals tend to be hearty and substantial. In Sweden and western Finland, a traditional Thursday lunch consists of a meal of pea soup and pancakes. A typical winter dinner might include Danish crackling roast pork with sugar-browned potatoes topped off with an irresistible ice cream cake. Christmastime gatherings, in particular, are often a chance to celebrate with a cup of hot glögg or Swedish punch. When the winter is finally over, the seemingly endless summer days are savored along with the fresh fruits and vegetables that are hard to find after the short growing season. During the white nights of Sweden and Norway, it is customary to serve a midnight supper after a concert or the theater, while a special occasion such as a baptism or anniversary might call for a feast of dill-stuffed whole salmon followed by kransekake, a beautiful towering ring cake of ground almonds.
