  • Add only enough dressing to cause the salad leaves to glisten. Serve additional dressing at the table for those few diners who wish to douse their salad.
  • To dress a salad, place greens or other (pasta, grain, potatoes, etc.) in a large bowl. Pour the dressing down the side of the bowl until it forms a small puddle on the bottom. With clean hands, tongs, or 2 spoons, scoop the salad up from the bottom to the top, allowing the salad to spill into the vacant space and "get dressed". Repeat this gentle tossing until all the leaves and ingredients glisten. Sprinkle seasonings like salt and pepper, as desired, while you toss the salad. Add more dressing if necessary, keeping in mind that it is always easier to add dressing than to take it away.
  • Add dressings to the salad just before serving to prevent wilted, limp salad without much crunch.

Herbs and spices are the perfect partner to fruits and vegetables for bringing out flavor. Chamomile, cayenne, cinnamon and hops all give different flavors to your carrots, or you can spread horseradish or mint spreads on bread for wildly different effects. Even better, many herbs have doubled through the centuries as healing medications. Today, including certain herbs in your diet can make you feel better. Fresh herbs are best for flavor and for most medicinal purposes (and you can even grow your own in a kitchen or windowsill garden), but dried herbs will do as well. Herbs are primarily made of the whole plant – blossom, root, stem, and seed. Spices are similar, but tend to be stronger, aromatic, and tropical in origin. Spices are also great at preserving food as well as seasoning it. Herbs are mild and used for more delicate flavors, but spices tend to be bold, even overpowering if used to excess. However, the two terms are often used interchangeably.

    “Part of the thrill of using live fire is that you always have a chance of ruining your meal.” A great quote from Chris Schlesinger, owner of the East Coast Grill in Cambridge — and a very true one. Anyone who has ever cooked out on a grill has had the experience of seeing flames overtake the food or of opening the grill cover to see dry overcooked pieces of meat, but at a cook out, who cares? Having fun and enjoying summer are the important things. As with most families, my father was always in charge of the grill. It was a job he relished — even to the point of keeping the charcoal grill set up on the screened porch all winter long. I can still see him standing out there in the snow, spatula in hand, keeping watch over the meat. In his mind the only way to cook steaks or hamburgers is over charcoal. And no marinades or spices — they interfere with the taste of the meat.

Buy fresh foods when you shop because they are usually lower in salt. For example, buy fresh meats, poultry and fish, and fresh or frozen fruits and vegetables.

Melt margarine over medium-high heat in a nonstick skillet that's been coated with cooking spray. Saute corn and bell pepper for eight minutes, or until corn is lightly browned and pepper is tender; stir frequently. Let cool. Combine vegetable mixture, cornmeal mix, flour, sugar and ground red pepper in a large bowl. Add milk and egg whites, stirring until moist. Pour batter into a nine-inch round cake pan that has been coated with cooking spray. Bake at 400 degrees for 30 minutes, or until a wooden pick inserted in center comes out clean.
