Dear Friends, The High Holy Days are relatively late this year which gives all of us a little more time between the beginning of the school season and the planning and preparation for the Holidays.  This year many of us have been pre-occupied with the lives of our fellow Americans devastated by Hurricane Katrina.  Here, in Dallas, we are exposed directly to the emotional and financial toll it has taken on many.  For me, it has been heart-wrenching as well as heart-warming to be able to give a hug to an evacuee, listen to their stories that they repeat hoping that one recounting might make sense to them,  or help them search through the vast piles of food and clothing generously donated by Dallas citizens of all backgrounds.  The rapid response of Dallasites opened many questions about the slow response at the beginning of this tragedy in New Orleans.  But the true meaning of Tikkun Olam –repairing the world- has been exercised here as well as all regions of our country making me very proud to be a Jewish- American. During the holidays when we are surrounded by those we love, let us thank God for all our blessings and pray that this year more people will be written in the book life and spared from tragedy here and abroad.

TIPical Mary Ellen host Mary Ellen Pinkham shares ideas for preparing recipes with various types of salad dressing. Italian Parmesan Chicken Ingredients: 4 boneless chicken breasts
1 cup water
1/2 cup Parmesan cheese 1 packet instant Italian-dressing mix Preparation: Place chicken breasts in a baking pan and add water. Mix Parmesan cheese with Italian dressing mix. Spread over the chicken. Bake in a preheated 400-degree oven for 20 to 25 minutes. Other Ideas
  • Mix one cup of Italian dressing and one cup bread crumbs in with 1-1/2 pounds of hamburger. Form into patties and cook just like you would regular hamburgers.
  • Honey mustard dressing makes a delicious topping for pork chops.
  • Add some hearty flavor to baked potatoes, potato wedges and steak fries with blue cheese dressing. A little blue cheese also goes great on a hamburger.
  • Make a proper Reuben by topping a corned beef sandwich with sauerkraut, Swiss cheese and Thousand Island dressing on a corned beef sandwich. In fact, Thousand Island and other salad dressings make great toppings for all kinds of sandwiches.

Low Fat Hot German Potato Salad Presented by Mary E. Ross on February 25, 2005
Ingredients:

  • 4 to 5 slices lean center cut bacon, chopped into 1/8-inch pieces
  • 2 medium onions, halved and sliced into thin rings
  • 1 cup sliced celery – optional
  • 2 tablespoons flour
  • 1/4 cup sugar
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon celery seed
  • 2/3 cup vinegar
  • 1 cup water
  • 8 to 10 medium potatoes, peeled, boiled and cut into thin slices Method: 1. Cook bacon until crisp and drain on paper towels 2. Remove all but 1 teaspoon of fat from pan and return to medium heat. Add onions to pan and sauté until translucent. 3. Mix flour, sugar, salt and celery seed together in a small bowl. Add flour to skillet, mixing well. Stirring frequently, add vinegar and water to skillet cooking until mixture thickens. Add potatoes and reduce heat to low; continue to cook 10 to 15 minutes until potatoes are heated through. Yield: 10 3/4-cup servings each at approximately 130 calories; 1.8 grams total fat; 0.4 gram saturated fat; 6 milligrams cholesterol; 26.5 grams carbohydrate; 2 grams dietary fiber; 3.5 grams protein; 500 milligrams sodium. Serving Suggestion: For a traditional German meal, serve Hot Potato Salad with low fat turkey bratwurst boiled in beer or grilled.

    "Excellent salad for a snack or light luncheon with friends (makes a great side dish as well!). Recipe is shared by Connie Clements of Sandy, Utah. " Ingredients:

  • 3 cups uncooked bowtie pasta (8 oz.)
  • 2 cups uncooked rainbow Pasta (6 oz.)
  • 1 can (8 oz.) pineapple tidbits, drained
  • 1 can (8 oz.) sliced water chestnuts, drained
  • 3/4 cup chopped celery
  • 3/4 cup cashews
  • 2 cups cooked diced chicken (about 2-3 breasts)
  • 1 can (11 oz.) mandarin oranges, drained
  • 1 cup halved green or red grapes
  • 1 cup dried cranberries (Craisins)
  • Salt and pepper to taste Dressing Ingredients:
  • 3/4 cup milk
  • 1 1/2 cups salad dressing (Miracle Whip style, not mayonnaise)
  • 1/4 teaspoon celery seed (optional)
  • 2 tablespoons sugar Method: Cook pasta according to package directions, rinse with cold water until pasta is chilled; drain well. Add drained pineapple and water chestnuts, celery, cashews, cooked chicken, oranges, halved grapes, and dried cranberries. Pour dressing over salad and toss to coat; salt and pepper to taste. Cover and chill for 4-6 hours to blend flavors. Serve with fruit and a cheese and cracker tray. *Dressing Combine milk, salad dressing, optional celery seed, and sugar; whisk until smooth. Add more or less milk to create desired consistency to dressing.

    Preparing a meal for a family or guests often brings a sense of accomplishment, but making a dinner you'll be eating alone can seem like a big effort with small reward. Consequently, many of us pay little attention to the food we prepare and how we prepare it. That's too bad because it doesn't have to be difficult or time-consuming to cook delicious, healthy meals. And eating well brings its own rewards like enjoyment, good health and reduced risk of such diseases as cancer and heart disease. Food alone cannot make you healthy. Good health also depends on your heredity, your environment and the health care available to you. Your lifestyle is also important to your health how much you exercise, smoke, drink alcoholic beverages or abuse drugs, for example. The USDA has developed the Dietary Guidelines for healthy Americans who are age 2 years and over. The guidelines reflect recommendations of nutrition authorities who agree that enough is known about the effect of diet on health to encourage Americans to follow some specific guidelines. A diet based on these guidelines can help you to keep healthy and may improve your health.

    Author: Phil, date: 2005-08-29 20:02:48 Ingredients: 50 g of ripe Gouda cheese approx. 250 g of cooked broccoli water in which broccoli was cooked 2 stock cubes (chicken or vegetable) 2 boiled potatoes dash of cream pinch of curry pepper and salt nutmeg Directions: Grate the cheese in the foodprocessor with the aid of the fine or medium fine grater. Add water to the water in which broccoli was cookred to make 3/4 litre. Puree the broccoli with a little of the water in which it was cooked and the potatoes, using the metal knife. Add the broccoli puree to the remaining liquid and the stock cube and bring to the boil. Stir the cheese into the soup. Season with curry, salt and pepper, cream and nutmeg. Serve with croutons, if wished. Enjoy Your meal. Coulinary sites
