Alkanet - a group of plants whose roots give off a red dye; used primarily as a coloring agent, but according to some early herbalists, "it helps old ulcers, hot inflammations, and burnings by common fire." Almond Milk - a cloudy liquid prepared by steeping ground almonds in water, broth, or wine; acts as the liquid base and/or thickening agent in a wide variety of medieval dishes. Its medicinal values are praised by Boorde, who claims that "it doth comforte the brest, and it doth mollyfye the bely, and provoketh uryne." Avens - the herb was used in salads and the root to impart a clovelike flavor to ale. Avens was considered "the blessed herb" and according to the Ortus Sanitatus (Garden of Health), printed in 1491, "If a man carries the root [of avens] about him, no venemous beast can harm him." Barm - the foamy yeast that appears on the top of malt liquors as they ferment; ale barm was commonly used as the yeast element in breads and batters. Blaunderelle - a variety of white apple. According to Boorde, apples "doth comforte the stomacke, and doth make good dygestyon, specyally yf they be rostyd or baken."

Following are some simple guidelines to keep in mind before you eat any type of flower: Eat flowers only when you are positive they are edible. If uncertain, consult a good reference book on edible flowers prior to consumption. Just because flowers are served with food does not mean they are edible. It's easy and very attractive to use flowers for garnish on plates or for decoration, but avoid using non-edible flowers this way. Many people believe that anything on the plate can be eaten. They may not know if the flower is edible or not and may be afraid to ask. If pesticides are necessary, use only those products labeled for use on edible crops.

Makes 3 servings 1 can (14 oz) red kidney beans, rinsed and drained 398 g 1 can
(7 oz) corn kernels, drained 198 g small carrot, chopped red pepper, chopped 1/2 cup sliced celery 125 mL green onions, chopped 1 tsp dried parsley 5 mL 1 cup cubed, cooked pork 250 mL Dressing 1/4 cup red wine vinegar 50 mL 1 tbsp canola oil 15 mL clove garlic, minced 1/4 tsp salt 1 mL pinch freshly ground black pepper pinch dash hot pepper sauce dash
In a serving bowl, gently toss salad ingredients together. In a separate small bowl, whisk together dressing ingredients. Pour over salad and toss gently to combine. Chill for thirty to sixty minutes, occasionally stirring lightly. Per serving: Energy: 301 calories/1,260 kilojoules

    The web site reviewed in this article has changed location and name. SOAR is now known as Recipe Source and can be found at http://www.recipesource.com If you're looking for that perfect recipe for strawberry-rhubarb pie or a little-known casserole that's served at your favorite diner, you often need to look no further than SOAR. SOAR stands for "The Searchable Online Archive of Recipes" and is hosted and maintained on a University of California - Berkeley server. The inspiration (and a lot of the work) behind SOAR was supplied by one of UC - Berkeley's students, Jennifer Snider Coopersmith. Many thanks to Jennifer, as what started out as an experiment in bringing recipes on the web to one central location has turned into an archive of almost 70,000 recipes as of March 2000. What makes SOAR such a valuable resource is the plethora of ways that the recipes are organized for visitors. In addition to the search forms which vary from simple keyword searches to more advanced forms that allow a visitor to specify things like case sensitivity and the maximum number of returned recipes recipes are also organized into a large number of different categories. Each category has sub-categories to help direct visitors to the recipes they desire. Once a sub-category has been chosen, the recipes are then split into alphabetized sections containing about 50 recipes each. This is to reduce the download times and improve access. Of course, each visitor also has the option to get a full list of the recipes in a given category. Once a visitor has found a recipe that he or she would like to see, one click on the title reveals the entire recipe. It's that simple.

    Cheese has been an important food for centuries and is still widely used in various parts of the world. Many varieties have been developed, each with its own special flavor. The wide range in price, excellent food value and good keeping quality make it easy to use cheese often in planning nutritious meals.
    Kinds of Cheese
    All cheese is made from milk. Most is made from cow's milk, but some varieties are made from the milk of sheep or goats. Cheese making starts with the coagulation of the milk protein to form the curd. This is then separated from the liquid whey by heating, stirring and pressing. Next it is salted and cured or ripened. The specific method used gives a particular cheese its appearance, consistency, texture and flavor. More than 2,000 varieties of cheese have been defined and classified by several methods.
