Toss freshness with simplicity for tasty meals
By Andy Broder Special for The Republic Making "eye candy" is a big part of mastering the culinary arts. Food should taste good, and it should look fabulous. A cook never can forget that people see food before tasting it. Salads, especially main-course salads, are a great way to practice your food-presentation skills, with successful results almost immediately. The meats, cheeses, fruits and vegetables of the world are your paint, and the plate is your canvas. Don't feel intimidated, just remember a few important points: First, use fresh ingredients. Following this single guideline means that your food will start out looking good, so you've got a head start on the way to picture-perfect food. Second, pay attention to your knife. This is more than a safety tip. Even if you can't make every carrot stick exactly the same size, make them as similar as possible. Practicing your knife skills is always part of cooking well. If you don't have the time or patience to cut perfect little cubes where diced veggies are called for, roughly chop the vegetables so that they are about the same size. Texture can do a lot to make up for precision.

Teens and 20-somethings are contrary enough to want to buck a trend.

Cranberry Apple Salad
1 envelope unflavored gelatin 1/4 cup cold water 1/4 cup lemon juice 2 tablespoons sugar 1/8 tsp. salt 1 cup ginger ale 1/3 cup crushed pineapple 1/3 cup apple, cut in thin slivers 1/2 cup jellied cranberry sauce, cubed Place gelatin in cold water; allow to stand for 2 minutes. Dissolve by placing over hot water Add the lemon juice, sugar, salt and ginger ale. Allow to cool until it begins to thicken; fold in pineapple, apple and cranberry cubes. Pour into a mold. Place in refrigerator until firm. Serves 4-6.
Vine Ripened Tomato Salad
Serves 4 as a first course 1 large, ripe tomato (yellow, orange, red or heirloom) 8 ounces Maytag Blue Cheese Three Vinegar vinaigrette Fresh Basil leaves For the: Balsamic Vinaigrette 1/3 cup sherry vinegar 1/3 cup balsamic vinegar 1/3 cup red wine vinegar 1 tablespoon Dijon mustard 1 tablespoon sugar 1 tablespoon chopped shallots ½ tablespoon garlic 1 tablespoon chopped fresh parsley 1 tablespoon chopped sage 1 tablespoon chopped thyme 2 cups olive oil Mix all ingredients together. To assemble the salad: Slice tomato into 4 slices. Arrange each slice on a plate, drizzle with the vinaigrette. Crumble 2 ounces of the blue cheese onto each serving and garnish with fresh basil leaves.
Vine Ripened Tomato Le Caprese Salad
1 beefsteak tomato 3 oz fresh "buffalo" mozzarella 5 leaves fresh basil Pinch of coarsely ground black pepper 1/4 tsp white wine vinegar 1 tsp extra virgin olive oil Slice the tomato to about 1/4 inch thickness and arrange on plate. Slice the mozzarella about the same width and layer it between the tomatoes. Arrange the basil between the layers of cheese and tomato. Season with pepper. Drizzle with olive oil and vinegar. Serves 1.

    • 1 orange
    • 1 banana
    • 1/2 pound green grapes
    • 1 dozen walnuts
    • Lettuce
    • French Dressing
    • 1 cup watercress
    • 1 cup dandelion greens
    • 6 slices onion
    • French Dressing ( see recipe below)
    Directions: Make sure the dandelions is young and fresh. Wash the watercress and dandelion leaves and drain well. Toss together and place in a bowl or plate. Add sliced onions on top, then drizzle French dressing over all. Tomato Chicken Delight
    • 6 medium tomatoes
    • 3/4 cup diced cucumber
    • 1/2 cup diced cooked chicken
    • 1/4 cup mayonnaise
    • Lettuce
    • Cauliflower pieces
    Directions: Cut tomatoes in halves, carefully scoop out the pulp. In a separate bowl combine the tomato pulp, chicken, cucumber with the mayonaisse. Fill tomato halves with the filling. Arrange on lettuce leaves then top each cup with parsley and cauliflower.
