Without any doubt that no cuisine in the world can claim a variety of soups as large as that known in Russian cooking. The world itself appeared in the Russian vocabulary in the time of Peter the Great. Original and varied, Russian cuisine is famous for exotic soups, u-ha schi borshch , and solyanka , which is made of assorted meats. Russians are great lovers of pelmeni , boiled in broth. Russian table is famous for such delicacies as the smoked back of sturgeon, stellate sturgeon with horse-radish, pickled salmon, red and black caviar and pickled mushrooms. All this not only constitutes a lovely still life together with the crystal-transparent Russian vodka but also is in harmony with gustatory senses. Every housewife of any experience has her own recipes for pies, pickles, and sauerkraut. Even more varied is the choice of recipes for mushrooms, one of the most abundant and nourishing gifts of our woods. They are fried, pickled, salted, boiled and what not. Of our folk soft drinks, kvass is the best-known. Made of brown bread or malted rye flour, it goes down best on a sultry summer day. Elena Molokhovets's A Gift to Young Housewives , first published in 1861, became the Bible of cooking and household management for generations of middle- and upper-class Russian women up until the revolution [End Page 203] in 1917. Even after the collapse of the tsarist autocracy, copies of this book circulated and were at times copied by hand. Then, in 1989 it reemerged in a number of reprinted Russian editions. Joyce Toomre of the Russian Research Center at Harvard and lecturer in culinary history at Radcliffe College has produced a superb translation and edition of this classic work. It is not only great fun to read and practical to use, but also it is immensely revealing both of Russian cultural history and as a comparative foil for understanding American culture. Classic Russian Cooking is an encyclopedic compendium of detailed recipes (Toomre's edition contains more than 1,000 of the original 1,500 recipes). These recipes are still great. The carrot fritters (343), sauerkraut shchii (30), and potato and beet salad (254) recreated a sense of a simple Russian meal for our own family, and were prepared with a minimum of fuss and difficulty. M y name is Olga Zorina. I am twenty-four years old of Ukrainian/Russian origin.
Let me present the introduction and two recipes from my book. This is my first book; it is about Russian cooking. My book includes eighty recipes and more than ten thousands words.
Why do I write about it? I have a university degree in humanities, studying culture and folklore there and I think I can share my knowledge of traditional Russian cooking with English people.
This book has many fresh and interesting ideas. People in this country cook and eat food from around the world, so why not to try something new?
In future I plan to write more books about Eastern European cooking Introduction W orking on this book I tried to gather the most popular recipes of Russian food. First of all, these are traditional Russian recipes that have been cooked thorough ages, and they are still appreciated nowadays. Every country has its own unique cuisine. This is the part of national culture, something country can be proud of. My aim is to introduce Russian cuisine to you. You are already familiar with French and Italian meals, even oriental cooking is popular in Britain. And I must admit that such dishes as "Bliny" and "Borsch" are known to you. But this isn't all.

Weekly Russian Table Russian table is held once or twice a week in Haffner Dining Hall, and is open to anyone who wishes to participate. Russian Table is an excellent opportunity for students of any level to practice their Russian skills, and is also a great way for native and more advanced speakers to enjoy the company of other Russian speakers. Russian Cooking Nights Russian cooking nights take place throughout the semester and offer an excellent opportunity for non-native students to try authentic Russian cuisine. Students and faculty together purchase, prepare, serve, and feast on dishes from all parts of Russia. Russian Game Night Russian game nights are a relatively new addition to the Russian Club activities. Every week the club gets together to play either Scrabble or Monopoly in Russian. We give careful consideration to the required ingredients to insure that they could be found locally, as well as, those foods requiring a minimum of prep time. Simple, basic, delicious....and distinctively Russian in character. Each dish that we have selected comes with its own traditionally Russian story; not only will students in this class be introduced to classic, yet conventional Russian cooking, but to the cultural heritage that accompanies it. If nothing else, we will dispel the prevailing myth that there is little more to Russian food than blini and borscht.

My mother says she believes my interest in food stems from an incident in my youth...right before she gave birth to me, she ate a doughnut, and thus began my interest in food. I am not an excellent cook, nor a particularly inspired cook, but I'm a good cook. Creative and experimental with a touch of native ability handed down from my grandmothers. I collect interesting recipes, so don't hesitate to pass along interesting recipes.
Cookbooks in particular
This page primarily existed to give me a means to carry this list with me everywhere. However with the acquisition of a PalmPilot (later replaced by the TRGPro using the same OS and data) a robust, full-figured, but slender palmtop computer. The Pilot and an excellent database program created for the Palm called JFile , by the excellent John Lehett, I have allowed me to bypass this wide webbish world and carry my library comfortably in my purse. As such, I'm not sure what there is to do with this page. Technically it's no longer needed, but I've gotten so many comments on it and people who were interested in the list of the books and in finding them for me, I will leave it and continue to update it. Note: Not even a week after I put this new information up, I received intelligence that this list was being handed out some sort of authoritative collection. It isn't. In this intelligence was a request to add dates to the information I include. I willingly comply.
