Recipes Pljeskavica Muchkalica "Dragi Bure" Pork Steak in Lambrequin for Two Text and Photos by Kristian Kahrs Lost in a fog of barbecue smoke, this skinny Norwegian journalist finally found his way to the biggest barbecue festival in the Balkans. In one week in September, I was exposed to more meat–strange meatthan I have ever seen in my life. Serbia is one of those nations famous for its love of meat, and the little southern city of Leskovac is considered the meat capital of Serbia. I was there to cover their annual barbecue festival and maybe even win a heifer. Usually, 20,000 visitors come to the festival every day. However, this year the organizers were cursed by pouring rainout of seven days, the weather ruined two of them. Still, even with the number of visitors reduced, forty-eight BBQ chefs competed to win the palates of the visitors. The people of Leskovac believe that they are world champions in the art of barbecue, even if they define it a bit differently than Americans. Are they right? What do I know? But I do know that they are very proud of their meat and their barbecue traditions. Everyone wanted to feed me to prove that they had the best meat, and I had to eat all the time, if I wanted to or not. I almost started missing my mother’s vegetables, but only almost. I am the first to admit that I’m an amateur in the field of barbecue, but I know when I taste something good. The meat was so tender that it seemed to melt on my tongue.

March is always such a strange month... By Cynthia Bowan
March is always such a strange month, weather-wise, around where we live.
One day, the temperature gets down in the 20's and we have snow... a day or so later, and the sun comes out and we are in the low 60's. But there are still far too many gray days to my liking.
The ground is still too frozen, wet and cold to work outside. The weather isn't good enough to allow me to deep clean or paint inside. I just have a weary feeling, fed up with winter, yet spring is not going to make an appearance for a while yet.
My Grandmother Bacon, who passed away last year at 108, would attribute my feelings and attitude to "winter blood". She would have prescribed a dish of cooked rhubarb, guaranteed to "thin the blood that cold winters have caused to thicken". I always hated that annual dosage of stewed rhubarb.

Hey, where y'at. So ... what is all this, anyway?
In short, it's a personal web site that's gotten out way of hand; a huge, labyrinthine and delightfully overgrown compendium of knowledge about New Orleans and Louisiana cuisine and culture, and lots of other fun and fabulous stuff; dedicated to the enjoyment of great food, drink and music; now dedicated to the preservation of New Orleans culture.

Strange But Good Pasta
Ingredients (use vegan versions):
  • 1 cup whole wheat flour
  • 1 cup brown rice flour
  • 2 teaspoon olive oil
  • 1/2 teaspoon salt
  • 1/2 or more cup water
  • 1 grated carrot
  • 2 chopped green onions
  • 3/4 cup finely chopped bok choy
  • 3 Tablespoons **hoisin sauce
  • olive oil for frying (about 2 Tbsp) and hoisin sauce for dipping
Directions: Mix the flours, salt and oil and enough of the water to make a smooth pasta dough. Mix the chopped veggies with the hoisin sauce. Roll out the dough verrrry thin, spoon the veggie mix onto it and fill as if they were a ravioli filling. A ravioli maker is helpful. Put another very thin layer of pasta on top, and cut them into squares, sealing the edges. Boil the squares for 3 minutes .(If you dont get the pasta thin you may have to boil them longer.) In boiling , salted water. Then drain and saute the little veggie things as you would pirogi's...or pirogies, or piroschies, or peerohgheez. O heck , then you just brown 'em up a little in the olive oil,if you want; and when they are cool enough, you eat'em, dipping them in the extra hoisin sauce if you want.

71. Ink Recipes
There is a strange thing in the recipe above, viz. the amount of gum arabic.250 grammes? One tenth of it sounds more reasonable but who am I to fight
http://www.algonet.se/~claesg/inkrecip.htm
Some Ink Recipes
Claes G Lindblad
on May 21, 1998. I became interested in inks more than 20 years ago, when trying to tame a dip steel pen to behave nicely. All inks available locally were intended for fountain pen use, meaning they were too runny and too thin for proper scribal use. The Persian Recipe - my First Ink Attempt Then I came across an old recipe, once upon a time used by Hassan, a Persian Scribe. It told me to find: Ingredients
  • 500 g water 5 g salt 250 g gum arabic (see note below) 30 g gall apples, grilled and powderized 40 g iron sulphate (a.k.a. copperas or vitriol) 30 g honey 20 g soot for stage 3 (see table at right)
  • Directions
  • Mix the six first ingredients. Leave them on a slow fire for two hours and stir now and then. Then add 20 g soot. Heat it for another hour. Filter and pour into bottles.
  • It sounded thrilling as well as an easy task. Since I was a newbie, I did not know where to find all strange ingredients, in fact, it took me three weeks to scout them down. I started, late one evening. Three hours later the moment of truth arrived - but my concoction did not have the slightest resemblance with ink. Well, it was black, all right, but it behaved much more like a heap of butter, just out from the fridge. There was not a chance in the world to 'filter' it through anything, I had to scoop it up with a knife to transport it to a wide-mouthed container with a close-fitting lid. What did I do Wrong?

Here's a collection of strange recipes included are both recipes with exotic ingredients (cow udders, moose noses) and kids' recipes for thinks that look gross (Cheez-Wiz based "Boogers on a stick"). These kinda remind me of PJ O'Rourke's account from Holidays in Hell , of being taken out for glasses of cobra blood in Singapore: "You're probably wondering what cobra blood tastes like. Well, it tastes like chicken blood." LOCUST BISQUE 1 gallon locust shells 2 onions, roughly chopped 1 clove garlic, chopped 1 celery stalk 2 carrots  1/2 tsp. powdered mace salt and pepper to taste 1 cup whipping cream Link Discuss Thanks, Kate!
