WHAT'S IN IT?
1 (14 ounce) bottle ketchup
1 (12 ounce) jar grape jelly
3/4 pound extra lean ground beef
1 egg
1/4 cup bread crumbs
1 teaspoon onion powder
STUFF YOU NEED
Adult’s permission to use the stove
Large saucepan 2 soup spoons Medium-size bowl Dry measuring cups Measuring spoons Plastic gloves (if you want) Potholders Large spoon Cooling rack Nice serving bowl HOW TO PUT IT TOGETHER
  • Into a large saucepan, squirt the ketchup and, with the help of a soup spoon, scoop the jelly. With the same spoon, stir the ketchup and jelly for about 30 seconds. Set the saucepan aside. In a medium-size bowl, dump the beef, crack in the egg (throw away the shell!), toss in the bread crumbs from a measuring cup and sprinkle in the onion powder from a measuring spoon. Wearing plastic gloves or with squeaky-clean hands, mishmash all ingredients in the bowl. Roll the mixture in the palms of your hands into 16 meatballs. Here’s a good tip: The easiest way to make the meatballs is to divide the mixture into 4 equal-size portions. Then roll 4 meatballs from each of the portions! Very gently plop the meatballs into the ketchup-jelly mixture, one at a time. Cover the pan.

Beat well with a wire whisk. Add sugar mixture and beat again to combine. 4. Pour over chips in pie shell and bake in preheated 350-degree oven for 45-50 minutes. Serve chilled with whipped cream.

    1/4 cup apple cider vinegar
    1/2 cup honey
    2 cups granulated sugar
    1 pound fresh or frozen cranberries, cooked (if not available,
    use 2 cans whole cranberry sauce)
    1 cup raisins
    1 tablespoon granulated garlic
    1/2 teaspoon ground cinnamon 1/2 teaspoon allspice 1/2 teaspoon ground ginger 1 teaspoon salt 1/2 teaspoon crushed red pepper flakes 2 cups chopped pecans Roast Brine, optional (recipe follows) 1 (3 pound) pork loin or (boneless) pork butt or 2 (1 1/2 pound) pork tenderloins Spice Rub (recipe follows) Spice Rub 2 teaspoons salt 2 teaspoons granulated garlic 1 teaspoon chili powder 1 teaspoon paprika 2 tablespoons brown sugar Brine 9 cups hot water 1/2 cup granulated sugar 1/2 cup kosher salt 2 tablespoons cracked black peppercorns For Cranberry Chutney: Heat jalapeño jelly with vinegar, honey and sugar in a saucepan. Simmer until sugar has dissolved, then add cooked cranberries. Add raisins, garlic, cinnamon, allspice, ginger, salt, crushed red pepper flakes and pecans; mix thoroughly, then let mixture sit for 1 hour to allow flavors to meld. If desired, chutney can be made several days ahead, refrigerated, and re-warmed to serve.

    Chicken Parmesan Recipe
    When we were kids, my mother used to make a broiled chicken dish which we called Chicken Parmesan. It was so good, we would fight over the drippings. Then my mother gave up wheat for 20 years and the recipe is lost somewhere in the deep storage of her mind, currently unaccessible. (By the way, this is the main reason I put recipes on the web, they don't get lost or forgotten!) We had a hankering for Parmesan chicken the other night so I hit the recipe books and Epicurious and came up with something really quite good. Not as drop-dead delicious as mom's, and the reason why? Mom remembered as we were eating that she used to dip every piece of chicken in melted butter before rolling it in the breadcrumb/Parmesan mixture. Well no wonder we were fighting over the drippings! You can do the same, if you really want a treat. This recipe doesn't do that, but if you want, just substitute the vinegar for melted butter and then add some more butter to the coating liquid. Parmesan chicken is traditionally made with boneless, skinless chicken breasts. We use breasts, but thighs too, if we are starting with a whole chicken.
