Chapter XI.
FISH
THE meat of fish is the animal food next in importance to that of birds and mammals. Fish meat, with but few exceptions, is less stimulating and nourishing than meat of other animals, but is usually easier of digestion. Salmon, mackerel, and eels are exceptions to these rules, and should not be eaten by those of weak digestion. White fish, on account of their easy digestibllity, are especially desirable for those of sedentary habits. Fish is not recommended for brain-workers on account of the large amount of phosphorus (an element abounding largely in nerve tissue) which it contains, but because of its easy digestibility. It is a conceded fact that many fish contain less of this element than meat.

General rules
Many cocktails are based upon some form of basic combination of ingredients. Bartender's who remember these combinations will find it easier to learn and create drinks derived from them. (eg. Brandy Alexander is an Alexander, as below, with Brandy as the liquor)
Alexander
2 oz liquor or liqueur
2 oz white or dark creme de cacao
2 oz light cream
Shake and strain into a highball glass.
examples: Alexander The Great Amaretto Alexander Brandy Alexander
Collins
1 1/2 oz liquor 3 oz sour mix 1 oz club soda Shake, strain into a collins glass, and top with club soda. examples: Brandy Collins Sloe Gin Collins Tequila Collins Cooler 1 1/2 oz liquor fill with ginger ale/carbonated water Serve in highball glass. Garnish with a lemon wedge. examples: Scotch Cooler Gin Cooler Harvard Cooler Fruit Daiquiri 4 parts light rum 1 part white creme de cacao 1 part appropriate fruit liqueur fresh fruit Blend and serve in an exotic glass with a straw. examples: Banana Daiquiri Peach Daiquiri Strawberry Daiquiri Highball 1 1/2 oz liquor fill with ginger ale/carbonated water Serve in a highball glass.

    General Safety Around the Kitchen Probably the two most dangerous things around the kitchen are: Knives and Other Sharp Edges , and Fires and Other Hot Things. Both of these have their own pages. Here we will try to cover the rest of kitchen safety. First Aid There can always be a mistake, and someone in the kitchen, preferably you, should be trained in at least basic first aid. Contact the American Red Cross for a class or two, it is one of the most valuable things you can do for you and your friends. Food Poisoning, Spoilage and Temperature Control Keep foods either hot or cold. The bacteria that cause spoilage and food poisoning grow best when food is luke warm. Be especially careful with raw poultry, seafood and foods with a base of eggs, such as mayonnaise or egg salad, or bread, like stuffings or puddings.
    • Make sure the temperature in your refrigerator is 40 degrees or under. Get a good thermometer for the fridge, keep it in there where you can see it, and check it often.

    Salmon are perhaps the most visually striking of the world's fish. Sleek and silvery, they are aquatic vertebrates of grace and beauty with buttery and succulent flesh. It's no wonder that gastronomes have long considered the fish one of the ocean's great natural delicacies, even when unadorned. In fact, revered chef August Escoffier, in his well-known 1903 tome, Le Guide Culinaire, insists that salmon should be "served as plainly as possible."
    As its name implies, it's neither red-fleshed nor white, making it an exceptionally accommodating wine companion. Depending on the preparation, salmon dishes can be paired with a spectrum of wines, including Champagne, Chardonnay and Pinot Noir. Because of its rich, opulent character, the fish stands up well to spices and herbs, and has enough stage presence to play a seminal role in holiday entertaining. "I have been cooking salmon for 30 years and I must have 200 recipes for it in my head," says Jasper White, executive chef-owner of Summer Shack restaurants in Cambridge, Massachusetts, and Mohegan, Connecticut. He is especially fond of his Pacific Northwest salmon chowder, noting, "The distinctive flavor of salmon combines beautifully with the other chowder ingredients and makes a splendid winter feast."
