Prep. Time: 2/3 cup hot chicken broth
1/3 cup granulated sugar
1/4 cup cornstarch mixed with 2 Tbls. water
1/4 cup soy sauce 1/4 cup sherry 2 Tbls. white vinegar 1 tsp. minced garlic 1 tsp. minced ginger 1/2 tsp. monosodium glutamate - optional, see Notes, below 1 1/2 lbs. boned, skinned chicken thighs - cubed 2 Tbls. soy sauce 1/2 tsp. white pepper 1 egg - beaten 1/2 cup cornstarch 1/2 cup vegetable oil 1 tsp. sesame OR peanut OR vegetable oil 1 cup diced scallions 2-6 sm. dried chili pepper - chopped -Combine broth, sugar, cornstarch/water mixture, 1/4 cup soy sauce, sherry, vinegar, garlic, ginger, and monosodium glutamate; refrigerate until needed. -Mix together chicken, 2 Tbls. soy sauce, white pepper, and egg.

Add garlic, ginger, sugar, 1/2 cup soy sauce, vinegar, wine, chicken broth and MSG (if desired). Stir until sugar dissolves. Refrigerate until needed. In separate bowl, mix chicken, 1/4 cup soy sauce and white pepper. Stir in egg. Add 1 cup cornstarch and mix until chicken pieces are coated evenly.   • 2 tablespoons Shao Hsing wine
  • 1 tablespoon soy sauce
  • 2 teaspoons cornstarch
    Sauce:
  • 2 tablespoons chicken broth
  • 1 tablespoon rice vinegar
  • 1 1/2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 2 teaspoons sugar
  • 2 tablespoons cooking oil
  • 8 whole dried chili peppers
  • 2 teaspoons minced garlic
  • 1 green onion, cut into 1-inch pieces
  • 1/4 teaspoon crushed red pepper
  • 3/4 cup roasted unsalted peanuts
  • 1 teaspoon cornstarch dissolved in 2 teaspoons water BCombine the marinade ingredients in a medium bowl. Add the chicken and stir to coat. Let stand for 30 minutes. Combine the sauce ingredients in a small bowl. Heat a wok over high heat until hot. Add the oil and chilies and stir-fry until the chilies darken to a deep red, about 10 seconds. Add the chicken and stir-fry for 2 minutes. Add the garlic, ginger, green onion, and crushed red pepper; stir-fry for 1 minute. Add the sauce and peanuts and cook, stirring, until the sauce thickens and the chicken is nicely glazed. From:

  • 3 pounds dark deboned chicken meat cut into large chunks
  • 1/4 cup soy sauce
  • 1 tsp white pepper
  • 1 egg
  • 1 cup cornstarch
  • 1 cup salad oil
  • 2 cups scallions, diced
  • 16 small dried hot peppers To make sauce, mix cornstarch and water together. Add garlic, ginger, sugar, soy sauce, vinegar and wine. Then add chicken broth and M.S.G. and stir until sugar dissolves. Refrigerate until needed. In separate bowl, mix chicken, soy sauce and pepper. Stir in egg. Add cornstarch until chicken is coated evenly. Add oil to help separate chicken pieces. Divide chicken into small quantities and deep-fry at 350 degrees until crispy. Drain on a paper towel. Place a small amount of oil in wok and heat until wok is hot. Add scallions and peppers and stir-fry briefly. Stir sauce; add to wok. Place chicken in sauce and cook until sauce thickens. Add either cornstarch or water as needed. Serve with rice. Serves 6 - 8.

One more quick thing before I go... I am sorry for the diminished quality of postings recently. I have been suffering from a cold (well, ignoring it for the most part until it would not let me do that anymore), and just started back on the E-C-E cure (Echinacea, Vitamin C, Espresso), which is working wonders. I should be fully functional in a couple of days, and I really hope the writing improves! TrackBack

    Eggplant with Hot Garlic Sauce
    Sunday, September 25th 2005 General Tso's Chicken 3/4 lb Boneless chicken breast
    2 ts Dark soy sauce
    2 ts Rice wine or dry sherry
    1 t Finely chopped ginger root
    1 t Cornstarch
    1 t Sesame oil
    1/3 c Oil, preferably peanut 2 Dried red chiles - cut in half lengthwise 1 tb Chopped fresh orange peel 1/2 ts Roasted Sichuan peppercorns -(finely ground), optional 2 ts Dark soy sauce 1/4 ts Salt 1 t Sugar 1/2 ts Sesame oil Cut chicken in to thin slices 2 inches long, cutting against the grain. Put it into a bowl together with the soy sauce, rice wine or sherry, ginger, cornstarch and 1 teaspoon sesame oil. Mix well, and then let the mixture marinate for about 20 minutes. Heat the oil in a wok or large skillet until it is very hot. Remove the chicken from the marinade with a slotted spoon. Add it to the pan and stir-fry it for 2 minutes until it browns. Remove it and leave to drain in a colander or sieve. Pour off most of the oil, leaving about 2
