Directions: Combine the sugar and water in a heavy 4-quart saucepan and bring to a boil. Cook without stirring for 5 minutes. Add the cranberries and cook, uncovered, for 4 more minutes. (A popping noise occurs when the berries burst.) Remove from heat and stir in the apricot preserves and the lemon juice. Chill thoroughly. Garnish with almonds before serving. When Judie Glen started Glen Farms at the Guelph Farmer's market in 1984, Her goal was to make some extra money for Christmas. Judie and David Glen The $7 dollars paid for photocopies for the first hand-drawn labels (we still have the receipt!) The imported beer bottles were for the herb vinegars. (stubbies just didn't have the right look.) The old handed down recipe for strawberry jam taught us about the flavour you get by using old fashioned, time honoured cooking methods. In fact the preserves made by Judie and David were quickly recognized as something extra special. These beautifully packaged preserves were bursting with flavour in a way that nothing at the farmer's market could match. It didn't seem very long until a volunteer buyer from the Art Gallery of Ontario asked Judie to supply their gift shop. The elegant country packaging was just what she wanted. Soon Glen Farms products were being sold, and creating loyal customers, in specialty food and fine gift shops all over Ontario.

4 pounds firm, ripe figs
4-1/2 pounds sugar
1/4 cup fresh lemon juice
2 lemons, sliced
A few pieces of whole stick cinnamon or ginger root (optional)
Instructions
Wash and peel figs; set aside. Combine sugar and lemon juice in large nonreactive saucepan; add enough water to dissolve sugar. Add figs and lemon slices; cook about 45 minutes (the cinnamon or ginger may be tied in a cheesecloth bag and cooked with figs for added flavor). Stir frequently to prevent sticking. Pack preserves into clean, hot jars, and seal immediately. Process in boiling water bath 5 minutes for half-pints, 10 minutes for pints. Makes 8 to 10 (6-ounce) jars.

Vinegar which is too strong should be diluted with water. The vinegar should never be boiled but should be poured on the pickles hot as it comes to the first scald. If pickles are put into brine the brine should be strong enough to float an egg. A heaping pint of coarse salt should be used to each gallon of water. Never put pickles into anything that has previously held any kind of grease and never let them freeze. A good way is to put pickles in bottles and seal while hot. As the coffee brews and the bacon sizzles, this French toast bakes peacefully in the oven. Moreover, it can be assembled the night before you plan to serve it. And, you may use any jam or preserves you like. Apricot preserves or marmalade make delicious alternatives to the raspberry preserves.
RECIPE INGREDIENTS
For French Toast:
1 1/4 cups raspberry preserves Ten 4x4x1-inch-thick slices egg bread 1 1/4 cups whole milk 3/4 cup whipping cream 1/2 cup sugar 3 large egg yolk s 3 large egg s For Almond Syrup: 1 1/4 cups light corn syrup 4 teaspoons sugar 3/4 teaspoon almond extract 1/2 cup sliced almonds, toasted Confectioners' sugar RECIPE METHOD FOR FRENCH TOAST: Butter 13x10-inch baking dish. Spread preserves evenly over 1 side of each bread slice. Cut slices diagonally in half, forming triangles. Arrange triangles crosswise in dish, preserves side up and overlapping slightly. Whisk milk and next 4 ingredients in large bowl. Pour custard over bread. Let bread stand 1 hour, basting occasionally, or cover and refrigerate overnight. FOR ALMOND SYRUP: Mix first 3 ingredients in small bowl, stirring until sugar dissolves. Let stand at least 1 hour.

Making Fruit Spreads Preserve It Right
Jams, jellies, marmalades, preserves, and conserves are sweet spreads made from fruit or juice; they differ in firmness, clarity and ingredients.

Jam is made from crushed or ground fruit and usually has a thick consistency.

Jelly is made from fruit juice and contains no visible pieces of fruit. It is clear and firm enough to hold its
shape when turned out of the jar.

Marmalade is a soft gel with pieces of fruit and citrus peel.

    • 250g Castor or Loaf sugar
    • 2 eggs.

    • juice 2 large lemons
    • 100g butter.
    Grate rind carefully, removing just the yellow "zest" but none of the white pith. If using loaf sugar, rub this over the lemons until all the yellow has been removed. Squeeze the juice from the fruit. Put all ingredients - except eggs - into double saucepan or basin over hot water and cook, stirring from time to time, until the margarine and sugar have melted.
    Add the well-beaten eggs and continue cooking until the mixture coats the back of a wooden spoon. Put into jars and seal down.
    This following JELLY recipe was suggested because of the animal content (bones) used in the making of our standard jello powders here. [Agar-agar is non animal in content.]

    Jams, marmalades, preserves, and conserves are fruit products which are preserved by sugar. These products differ in the degree of gel attained, manner of preparation of fruit, and ingredient composition. They are easily made at home.
    • Jams are made from crushed or ground, whole fruit and usually have a thick consistency due to high pectin content.
    • Marmalade is a jelly with pieces of fruit suspended in it. Citrus peel and juice are frequently the basis of marmalade.
    • Conserves are jams made from a mixture of fruits. They usually contain citrus fruit, nuts, and raisins.
    INGREDIENTS
    Fruit gives the product its special flavor and often provides pectin for thickening. Pectin is needed to provide thickening or gel formation. Pectin is formed from a parent compound, protopectin, during the ripening of fruit and during the cooking of underripe fruit. All fruits contain some pectin. Apples, crabapples, gooseberries, some plums, highbush cranberries, and citrus peel contain large amounts of pectin. Other fruits like blueberries, strawberries, cherries, or huckleberries contain little pectin and give thick jams, marmalades, and conserves only if:
  • combined with fruit rich in pectin, or
