http://www.iatp.org/foodandhealth/
IATP's Food and Health team works to make food healthier by advocating for more sustainable food production and a less contaminated food supply while supporting family farmers and rural communities. Food accounts for most of a person's exposure to many toxic pollutants. Our efforts include protecting a child's first food, breast milk, from toxic contamination. Our work extends across the food chain, informing and influencing farmers, food purchasers, health professionals and policymakers. For example, we talk to... Food Producers and Policymakers about specific toxic pollutants in foods, their effects on our health, and how they enter the food chain, from our gardens, our farms and from industrial pollution.
Parents and Other Consumers about how to make healthier food choices to reduce their exposures to toxic pollutants, while maintaining nutritional benefits. Food-related impacts of toxins on fetuses, children and other vulnerable groups are our special concern.
Health Professionals about the impacts of industrialized or "factory-style" agriculture on the nutritive value of food, human health and the health of the broader environment in which we live.

New laws regulate use, disposal of poultry litter
FAYETTEVILLE - Poultry litter, as a source of cheap fertilizer, has helped turn Ozark pastures into lush, productive fields for cattle and hay, but the nutrient content of the litter has become too much of a good thing.
The U.S. poultry industry produces 6.12 million tons of manure per year from broilers, said Glenn Carpenter, agricultural economist for the National Resource Conservation Service. "It would make a row three feet wide by three feet high that would stretch twice across the country," he told poultry producers attending the University of Arkansas Division of Agriculture's Poultry Producer Symposium Sept. 9.
Carpenter said confined animal operations, including poultry farms, have become concentrated into fewer areas, like northwest Arkansas. Excess phosphorus from the litter applied to pastures becomes a pollution source that runs off into streams and other bodies of water.

    A Small-Scale Agriculture Alternative: Poultry
Author: Phillip J. Clauer, Poultry Extension Specialist, Animal and Poultry Sciences Posted March 1997 Written for the United States Department of Agriculture, Cooperative State Research, Education, and Extension Service, Office for Small-Scale Agriculture
The low investment and small area required to raise a flock of domestic poultry makes this an ideal venture for the beginning small or part-time farmer. Domestic poultry can supplement family food supplies, and small specialized poultry producers can sell to several niche markets. For example, producers can consider selling organic meat and eggs, brown eggs, range-reared meat and eggs, live birds for ethnic markets, and birds for hobby, leisure, and purebred exhibition purposes. Most small specialty poultry enterprises raise chickens or waterfowl.
To ensure profitability, the small specialty poultry producer must do careful research on market opportunities. Successful producers for niche markets usually have unique products, good customer loyalty, limited competition, and the ability to maintain a profit margin when in competition with larger businesses.
    Egg Production
    Breed Selection
The best chicken breeds include commercial White Leghorn-type hybrids, which produce white-shelled eggs and are the most economical feed-to-eggs converters. Commercial production Reds (e.g., Rhode Island Reds, New Hampshire) or sex linked hybrids produce large, brown shelled eggs and are usually preferred for small range flocks. These birds have meaty carcasses and produce a good supply of eggs. The hybrids that lay brown eggs tend to be more docile than those that lay white eggs. All poultry breeds lay eggs, but they are not equally efficient.

Profitable Poultry: Raising Birds on Pasture Introduction Photo by Tom Gettings Rodale Institute LIKE MANY FAMILY FARMERS, CHUCK AND MARY SMITH integrate several diverse enterprises to ensure their continued ability to earn a living on 200 acres in north central Kentucky. "We look for things we can do as a family," Chuck said, including his three daughters. "We want something that'll keep us and them here for a long time." To the Smiths, that means diversifying into new enterprises and establishing sustainable practices quite unlike the traditional corn and soybean rotations that had nearly stripped the farm's hillsides of topsoil before they bought it. They want to boost their income and increase, not further diminish, the farm's fertility.

Related Category: Agriculture: Animals poultry, domesticated fowl kept primarily for meat and eggs; including birds of the order Galliformes, e.g., the chicken, turkey guinea fowl pheasant quail , and peacock ; and natatorial (swimming) birds, e.g., the duck and goose . Several poultry birds, including the chicken and the goose, were domesticated over 3,000 years ago. The chief poultry bird is the chicken, which probably originated as a jungle fowl in SW Asia. Until recently, poultry were raised for domestic and commercial use on many farms in the United States. Large-scale producers now virtually monopolize the poultry industry. Specialized hatcheries deliver chicks fresh from the incubator to commercial growers, who mass-produce birds under precisely controlled conditions on diets scientifically calculated to produce rapid growth to market size, for delivery to processors. Many distinct chicken breeds, once appreciated for their particular combinations of characteristics, have been combined through selective breeding into a few relatively standard types that are notably efficient converters of feed into meat or eggs. The dominant meat chicken today is a cross between the fast-growing female White Plymouth Rock chicken, and the deep-breasted male Cornish chicken (see
