(Cheese Pancakes)
3/4 lb. (0.5 kg.) farmer's cheese
4 tablespoons powdered sugar
2 eggs
1/2 teaspoon vanilla extract Dash of salt Some flour Run the farmer's cheese through a meat grinder. Add the powdered sugar, eggs, vanilla and salt to the cheese. Mix well and form into small patties. Roll in flour, pressing flour into patties gently, and fry them in hot oil or butter until golden brown on both sides. Serve with powdered sugar, jam or sour cream. Makes about a dozen pancakes. Mizeria (Cucumber Salad) 2 or 3 cucumbers, peeled Salt Vinegar Pepper 1 teaspoon sugar 1 tablespoon chopped dill (optional) Sour cream Thinly slice the cucumbers into a large bowl, salt them well and let them stand for 30 min. Pour away the liquid that forms. Sprinkle them with vinegar, a little pepper, sugar and dill. Dress them with sour cream just before serving. For a more heart-healthy recipe, omit salting the cucumbers; and substitute well-drained plain nonfat yogurt for the sour cream.

    Search Home Cooking Povitica (Croatian / Polish Filled Sweet Bread) Recipe Ingredients
    Sweet Dough:
    1-1/2 cup lukewarm milk
    1/2 cup sugar
    2 tsp salt
    2 eggs
    1/4 cup soft butter
    2 pkgs Fleischmann's Active Dry Yeast
    1/2 cup warm water
    7-1/2 to 8 cups flour Filling: 1 can evaporated milk 1 heaping cup sugar 2 sticks margarine 1-1/2 pounds pecans (ground fine) 4 eggs Pinch salt 1 tsp cocoa 1 tsp cinnamon Instructions Sweet Dough preparation: Combine warm milk, sugar, salt, softened butter, and beaten eggs. Dissolve yeast in warm water and add to other ingredients. Add half of flour, mix well until smooth. Add flour to handle easily. Knead dough on lightly floured board. Put dough in greased bowl, cover and place in warm, draft free place until doubled in size. Punch down and let double again. Divide dough in three parts. Roll each part until very thin in rectangular shape. Spread filling, roll and twist in circular shape like a snail or cinnamon roll. Place in greased 8-inch or 9-inch cake pans. Cover, put in warm place and let rise. Bake at 350 degrees for 30 to 45 minutes. Filling preparation: In heavy pan, over medium heat, combine sugar, milk and margarine and heat. Add nuts, then beaten eggs and mix well. Boil one minutes stirring constantly. Remove from heat, add pinch of salt, cocoa and cinnamon and mix well. Let cool till just warm enough to spread.

    Chef: Clive Ward Clive Ward is a renowned cooking teacher on the Mid North Coast with many years' experience in the kitchen. As a Head Steward for Qantas, Clive travelled the globe experiencing many exotic sights, sounds and scents! Clive teaches cooking at TAFE and is highly sought after as a caterer from Port Macquarie to the Queensland border. And he's back for another year (which we're all excited about) and every week he'll again cook up a delectable dish in the studio. In honour of Poland's National Day, May 3 (the signing of the Constitution in 1791) this week we've cook up red cabbage, pork and caraway seeds, along with braised beets.

    godzina 08:35 PL Aureli, Kamila, Kleofasa Clear barszcz with meat-filled uszka Rinse meat and mushroom, clean vegetables, peel and chop onion, peel and quarter beets. Cover with 6 c. cold salted water and cook until tender. Strain, add beet sour, garlic crushed with salt, pepper and sugar to taste. Grind meat from soup, add finely chopped and fried onion, add salt and pepper to taste. Sift flour onto a breadboard, add egg, salt and approx.
    1 c. lukewarm water. Knead dough until elastic. Divide into two portions. Roll out one part thin. Keep the second under a bowl so it does not dry. Cut dough sheets into 11/2 -inch squares, put filling in the middle of each, fold in half to form a triangle and pinch the edges together. Then bend them, join the two bottom corners and pinch together to form the uszka ("little ears"). Cook in a big pot of boiling salted water. When they begin to float on the surface, remove with a slotted spoon and douse with a little cold water or add a little fresh butter so they do not stick together. Put a few, still warm, into each bowl of barszcz just before serving.
