Growing this week
Gregg spoke to Shirley Tasker, kitchen gardener at West Dean Gardens in West Sussex about growing beetroot. They discussed Cylindra, a cylindrical variety, another called Detroit which is a North American introduction ideal for later sowings and also a golden beetroot. You can sow beetroot March until June. Earlier sowings can be fitted in if sown in a module, which is a seed tray divided into little sections. The soil temperature needs to be relatively warm for the beetroot to germinate. If it gets below 7 degrees Centigrade, the beetroot will be slower to germinate. Beetroot shouldn't be checked in its growth at any stage as you run the risk of bolting and the beetroot will go to seed. It's recommended that April is the best time to leave sowings outside. Start off not sowing too thickly as it's a large seed. When you sow along a seed drill, space them out at about an inch apart to start with and even then you will have to do some seed thinning. Station sow where you know you are going to grow them rather than thin out to eventual spacings. Pests to protect against slugs and snails when the plants are very young.

Visitor finds few pockets of Polish cooking in the 'Burgh Thursday, October 04, 2001 By Rafal Geremek, Post-Gazette Staff Writer They are among the best-educated waiters in town. Nick Jordanoff, a 37-year-old American with Slovak and Bulgarian roots, earned a degree in math. His business partner, Jerome Jocunskas, 39, who is of Lithuanian and German origin, holds degrees in three majors: English writing, political science and philosophy. Both are big guys and they wear Bulgarian peasant shirts. Their restaurant Old Europe on the South Side is full of souvenirs from Bulgaria. I am a Polish guy who arrived in the United States in July for a press fellowship. Often the first sign of homesickness is missing the food of your homeland, but I'm not a great cook, so I couldn't make any for myself. So I went on the road to find something from my part of the world Central Europe or its close neighbor, Eastern Europe. Unfortunately, it wasn't a happy experience because my food is in short supply here. Then I found Old Europe. Jocunskas likes to quote Friedrich Nietzsche, who said, "If you want to fly, first you have to walk and then to run."

For centuries fish were plentiful. Poor people could not afford meat, but fish, wild mushrooms, or wild berries were always available, and considered as inferior foods. Polish people used to say “Fish and mushrooms, flour and meadow” to describe a rich country farm, where everything was plentiful. Sometimes, when even fishes ware scant, people stated that “A crayfish is also a fish, when there are no other fishes in the lake”. Many other sayings and proverbs use fish as their subject. A rich and influential person is a “fat fish”. Sometimes “we are fishing in murky waters”, making not-too honest deals. Then we complain, that “the first part of a fish that rots, is its head”, meaning that the corruption of the government proceeds the corruption of the society. Sometimes children “go fishing at night” i.e. bed wetting.
But let’s leave the kidneys alone, this is a culinary corner, so focus on the stomach. Nowadays fish cost more than meat. It is difficult to buy quality fish in our area. However, a good cook can create very sophisticated dishes utilizing fish. This is the case of the cook featured today. The editor of this culinary corner is indebted to Margaret, for her willingness to share her secret recipe. It is fully understandable that, as expected, the recipe will be sophisticated. It is unlikely to turn you into a rich person, but it will definitely enrich your culinary palate.
Getting a quality pike is not easy. Margaret gets her pikes at the Lafayette Road store. After cleaning the fish you cut the head and tail off (save these parts!) and divide the rest into 3 in. wide steaks. Then prepare the broth by cooking 4 carrots, 4 parsley roots (you can substitute it with parsnip roots) and 4 small onions in 3 cups of water. Add half teaspoon salt, pepper and a spoon of sugar. When the vegetables are soft, add the fish, including the head and tail, and slowly cook the fish for around 15 minutes.

When we deserve it, we will be blessed with the seven Gifts of the Holy Spirit, namely the wisdom, understandings, counsel, fortitude, knowledge, piety, and fear of the Lord. We should also follow the seven Corporal Works of Mercy - feed the hungry, give drink to the thirsty, clothe the naked, shelter the homeless, visit the sick, visit the imprisoned, and bury the dead. We can also commit seven Capital Sins - pride, covetousness, lust, anger, gluttony, envy and sloth.

During the past 50 years, a thriving Polish community has grown up in the UK. Ian Wisniewski meets the people who are keeping the food traditions of their homeland alive. Photographs by Lisa Linder. The British culinary landscape has become all the richer for its assimilation of foreign cooking traditions. The Indian, Bangladeshi, Chinese, Italian and Thai communities - among others - have influenced the British palate, and redefined the notion of what constitutes our national cuisine. The Polish émigré community has burgeoned since the end of the second world war, and although it may be not quite so renowned for its culinary heritage as its Italian or Chinese counterparts, thanks to a network of cafés, restaurants, delis and social clubs, Polish cooking is alive and well in the UK. My father and grandfather were among the numerous Polish servicemen who arrived here after the war to be demobbed and, subsequently, joined by their families from refugee camps in other countries. This influx included Poles deported to Siberia by the Red Army, around a million of whom were granted an 'amnesty' by Stalin, enabling them to flee to refugee camps in Kenya, before coming to Britain. Polish refugees also arrived here from across Europe, having become 'displaced persons' through the Nazi programme of forced labour.

    godzina 08:34 PL Aureli, Kamila, Kleofasa Clear barszcz with meat-filled uszka Rinse meat and mushroom, clean vegetables, peel and chop onion, peel and quarter beets. Cover with 6 c. cold salted water and cook until tender. Strain, add beet sour, garlic crushed with salt, pepper and sugar to taste. Grind meat from soup, add finely chopped and fried onion, add salt and pepper to taste. Sift flour onto a breadboard, add egg, salt and approx.
    1 c. lukewarm water. Knead dough until elastic. Divide into two portions. Roll out one part thin. Keep the second under a bowl so it does not dry. Cut dough sheets into 11/2 -inch squares, put filling in the middle of each, fold in half to form a triangle and pinch the edges together. Then bend them, join the two bottom corners and pinch together to form the uszka ("little ears"). Cook in a big pot of boiling salted water. When they begin to float on the surface, remove with a slotted spoon and douse with a little cold water or add a little fresh butter so they do not stick together. Put a few, still warm, into each bowl of barszcz just before serving.
