Polish Sauerkraut Soup
2 lbs. Polish Sausage 1 qt. water onion, well browned 1 qt. sauerkraut juice 1/4 cup sugar 1/4 cup cream egg 1 Tbsp. flour 3/4 cup milk Cook sausage in water until well done, if not pre-cooked. Ad onion, sauerkraut juice and sugar. Beat egg, add flour, milk and cream. Add to the soup and bring to a boil. Serve with mashed potatoes or dumplings.
Pierogi Dough
1 lrg. Idaho potato 1 Tbsp. + 1 tsp. salt 1 3/4 cup all purpose flour 1 cup cornstarch or potato starch 1 lrg. egg 3 1/2 Tbsp. creme fraiche or sour cream 5 Tbsp. unsalted butter, melted Place an unpeeled potato in a large saucepan and cover by two inches with cold water. Add 1 tablespoon salt and bring to a boil. Lower hear to medium, and cook until tender, about ten minutes. Drain. While still hot, peel and pass through a potato ricer or food mil into a large bowl. Sift flour, starch and remaining salt into the bowl with the potato. Combine. In a small bowl, whisk together the egg, sour cream and butter. Add to the bowl with the potato mixture. Mix until well combined.
Turn dough out onto a lightly floured surface, and knead for five minutes, until smooth and firm. Let rest, covered for ten minutes. Roll dough out on a lightly floured surface to a thickness of approximately 1/8 inch thick. Cut the dough with a 3 1/2 inch in diameter cookie cutter. Cover with plastic wrap while preparing the filling.

Host Jan McDaniel As a second generation Polish-American growing up in 1950s Detroit, I took for granted ethnic delicacies such as powdered sugar-dredged angel wings (Chrusciki), fresh from the bakery, my mom's homemade stuffed cabbage, and fresh pierogi from the corner meat market. Living in the South, the only time I eat Polish food now is when I either visit Detroit or cook it myself. Good Polish recipes aren't so easy to find, but scouring the Web, I found several sources. SOARSearchable On-line Archive of Recipes This recently updated site, run by volunteers who love cooking (and I assume eating) was a joy to visit and listed a wealth of Polish recipes. To name a few: Easter bread (Babka), sauerkraut soup, meatballs with sour cream (Klopsk W Smietanie), noodles and cabbage, kolaches with cheese filling, honey cake (Medianyk), and baked pork chops in sour cream (Wieprzowina w Smietanie). "Eat, drink and loosen your belt". A POLISH CHRISTMAS I spent my first Christmas in Canada with Peter's family. The festival is celebrated on the evening of 24 December. Known as Wigilia , it is the most important culinary event of the year. The dishes are meatless. I read that at one time, the dinner consisted of twelve courses representing the twelve apostles. Just before dinner, the family will gather at the dinner table and break bread. A piece of a blessed communion host is broken, eaten and passed from one member of the family to the other. The main ingredients base on traditional plants which grow in Poland - rye, wheat, barley, potatoes. During Renaissance, Italian Queen Bona changed Polish habits introducing many vegetables from Italy. Therefore many vegetables have names which originate from Italian - like "tomato" is called "pomidor" in Polish and "pomodoro" in Italian. Polish food is adjusted to cold climate, cheap but time consuming to prepare - like many sorts of dumplings. Many delicious dishes are meatless but Poles also love kielbasa. Very popular is a dish prepared from kielbasa (Polish sausage) and cabbage called bigos, especially in winter. BellaOnline's Polish Culture Editor Poles celebrate the time of a carnival with balls and dances. The culmination of a carnival is a last week before Ash Wednesday. Poles do not organize street parades like people in Brazil or in New Orleans. I guess it is just too cold in winter. But they eat pounchki ( pounczki ). The other sweet food for the last days of carnival include Angel Wings, Chrusciki (Chruschiki) and Poppy seed rolls ( Makowiec )
These Polish doughnuts are very popular in Poland and traditionally eaten on Shrove Thursday and Tuesday and at midnight on St. Silvester's Day (New Year's Eve) . Pounczki are also eaten on parties, during birthdays and in many other special occasions. Strictly speaking Thursday is a Pounchki day and Tuesday is a Sledziowka day.
