Summary: Wonderful Book Comment: This book is amazing. Not only does it have EVERY type of persian dish that I have ever heard of, but it has tons of beautiful pictures, poetry, and descriptions.
I have not had the opportunity to make very much out of the book, but have enjoyed reading it very much.
I highly recommend this book to anyone who has interests in persian culture/foods. Customer Rating:

Comment: I bought this book for my wife 8 years ago. since my wife is not an iranian, she uses this book to cook persian food and i must say that every dish she make using this book is a master piece, because it is very easy to underestand even to someone that is not an iranian. instruction is very easy to underestant and the dishes are not greasy like other cook books (rosa montazami).
The color pictures of all dishes is included so you'll have an idea what is going to look like. we bought it for $45.00 but now you can have it for much cheaper price. there are many persian deserts also included in this book. this is the best persian cooking book i have ever seen or heard in my life.

August To top October 23, 2002 * Naan-e khaameh-ee (cream puff) Ray writes: Please give me the recipe for naan-e khaameh-ee (cream puff). Simin Khanum's reply: My grandmother who passed away last year at the age of 98, loved Naan khaameh-ee. When friends and relatives wanted to impress her, they would get her a box of Naan khaameh-ee. Naan khaameh-ee should be served fresh, don't keep it more than a day. 1/2 cup butter 1 cup boiling water 1 cup all purpose flour 1/4 t.s. salt 4 eggs Drop batter by heaping tea spoon (table spoon if you want them bigger.) 3-4 inches apart into greased pan. Bake at 400 degree about 30 min. or until golden brown. Remove from oven, split almost all the way, remove any soft dough, cool on wire rack. It is easier to fill with ready cool whip or your favorite pudding. You can also use whipping cream, in this case put the cream in a bowl and put the bowl in a bigger bowl of crushed ice and whip the cream only in one direction until it becomes very thick. Of course this filling will make the real Naan khaameh-ee.

INGREDIENTS:
  • 6 cups water 4 cups uncooked long-grain white rice 3 tablespoons vegetable oil 1 bunch fresh dill, chopped 1 bunch fresh parsley, chopped 1 bunch fresh cilantro, chopped 2 cups fava beans ground turmeric to taste ground cinnamon to taste 1 teaspoon salt 1 teaspoon pepper
DIRECTIONS:
  • In a large saucepan bring water to a boil. Rinse rice; stir into boiling water. Reduce heat and simmer for 5 minutes. Stir in dill, parsley, cilantro, fava beans, turmeric, cinnamon, salt and pepper. Cover and simmer on lowest heat for 40 to 45 minutes. Note: It's normal to end up with crispy rice (called Tadig) on the bottom of the pot after cooking; it's delicious.

    Standards of food hygiene are mostly satisfactory in all categories of eating-houses, except for Iranian sausages which can cause stomach problems. In general most Iranian cooking is healthy and nutritious, and you shouldn't have much problem in keeping to a balanced diet. At street stalls it is advisable only to eat hot food that you have watched being cooked. All provinces of Iran have their own dishes and specialties. However, the national dish is rice prepared in several special ways and served in vast helpings with almost every main dish, and very few of the main dishes would be considered complete without it. Iranian rice from the rainy plains of Mzandaran and Guilan is considered by many - not only Iranians - - to be one of the world's best, but much of the rice sold in the country today is imported. Chelo is rice prepared in several stages over 24 hours, boiled and steamed and served separately, while polo is rice cooked with the other ingredients. Rice in general is berenj. The rice is always fluffy and tender, never sticky and soggy. Often the cook will steam chelo rice with yogurt or an egg yolk (or a thin layer of lavish bread) to make a crunchy golden crust (tah dig) at the bottom of the pan, which is broken up and served on to of the rest of the rice. Saffron is very frequently used to flavor and color rice. Soft drinks are sold in bottles. Tea served in see-through glasses (never with milk) is an integral part of hospitality in Iran. Coffee is not widely available and is usually expensive.

    Ingredients
    Pound ground beef Teaspoon cinnamon Teaspoon pepper Teaspoon salt Cups water Cup rice Small chopped onion Tablespoon butter Cup dried prunes Cup dried apricots Cup chopped walnuts Cup chopped parsley Cup chick peas Vinegar Cup sugar
    Spicing
    Tablespoon dried mint Teaspoon cinnamon Teaspoon pepper
    Process
    Put the meat in a bowl. Add grated onions and seasonings and mix well. Make small meatballs the size of walnuts. Put water in a 3 quart pot. Add salt and rice and cook for 15 minutes. Sauté chopped onions in butter and put them aside. Add prunes to the water and rice and let cook for another 15 minutes. Add meat balls, apricots, walnuts, parsley, and sautéed onions and let cook for about 20 minutes on medium heat. Add vinegar and sugar and continue to cook for about 15 more minutes. Rub dried mint in the palm of your hand to make it powdery. Add cinnamon and pepper to the mint. Add this to the soup just before removing it from the stove. If more seasoning is necessary add according to taste.
