W hen you first experience Middle Eastern cuisine at Shiraz you'll wonder why you waited so long to try it. Similar in some ways to familiar fare of the Mediterranean, yet tied to the Far East by the addition of exotic herbs and spices, the Persian cuisine at Shiraz is a juxtaposition of the comforting and the extraordinary. It is also distinctly flavorful, delicately aromatic, and decidedly celiac friendly. Shiraz also serves tuna, shrimp, and vegetable kebobs. The only kabob I can personally vouch for is the lamb, and it is so good I may never try any other kabob or grilled specialty! Then again, I'd miss out on trying items such as lamb chops served with an olive mushroom sauce, salmon with a saffron lemon sauce, or antelope with a roasted pepper sauce. Vegetables, fruits, and spices (such as saffron, mint, and cardamom) figure predominantly in Persian cooking. Each time I've dined at Shiraz the staff has assured me they do not use flour to dust food items, do not marinate with any ingredients off-limits to celiacs, and do not thicken sauces with flour. I've also spoken with the chef and owner, Rashin Mazaheri, who encourages celiacs and others with special dietary needs to dine at her restaurant. She keeps a celiac card in the kitchen to reference what celiacs can and cannot eat. Of course, you should always verify this information for yourself each time. The only grilled item I was told not to order because of the meat tenderizer is Sultani, which is charbroiled sirloin strips. I was also advised not to order Moroccan Crepes, and it should go without saying not to eat the pita bread or tabboli (bulgur wheat).

Thoughts after surgery, Johnny Cash, and a big Thanks
Today is Sunday, almost a full week after my surgery (mastectomy with immediate reconstruction, tissue expander). I could be upset - my breast is gone, and in its place is a jagged incision and some lumpy material under the skin. The lumpy material is the tissue expander - a kind of balloon that will be injected with saline for the next several weeks/months until the skin is stretched out to the size of breast I want (hm...should I go for a C or a DD?). Just kidding: I want it to be the same size as my old breast so they don't have to do anything to the other one. The skin there feels completely numb. And it will continue to feel that way, so I've been told. When they took the breast tissue out, they cut most of the nerves there so I won't ever have much feeling. Like I said, I could be upset. But I'm not. Now that my treatment is over, and the surgery is over, and it feels like I might start to get back to a life without cancer, all I can think of is "what if I hadn't gotten that biopsy back in September?" What if I had spent the past five months in blissful ignorance instead of in chemo? There are no guarantees when it comes to how long we'll live, but it gives me a good shiver when I think that it might have gone on growing in there until it had spread through my body - to think that I could have avoided all of this crap of the past five months, only to find it a year from now, when a serious option would be to start planning my eulogy.

Artichoke Khoresh
lb tablespoons Olive oil md Onions, peel thinly slice teaspoon Salt teaspoon Freshly ground black pepper teaspoon Ground saffron, dissolved in tablespoons Hot water teaspoon Turmeric cups Chopped fresh parsley cup Chopped fresh mint tablespoons Fresh lime juice lb Fresh artichoke hearts STEP #1 - Heat a non-stick saute pan and lightly brown chicken. Add 1
tablespoon oil and the onion. Fry over medium heat, stirring occasionally,
for 20 minutes or until onion becomes translucent. Add salt, pepper,
saffron water, and turmeric. Pour in 1 1/2 cups water. Cover and simmer
over low heat for 30 minutes, stirring occasionally.
STEP #2 - In a non-stick skillet, fry the parsley and mint in 1 tablespoon
oil over medium heat for 10 minutes and add to the chicken.
STEP #3 - Add lime juice and the artichoke hearts to the chicken. Cover and
simmer for 40 to 55 minutes over low heat.
STEP #4 - Check to see if the artichoke hearts are tender. Taste the

Servings: 6 Preparation time: 20 minutes Cooking time: 25 minutes Wrappers 1 package ready-made, large sized egg roll skins, removed from the package and covered with a dish towel to prevent drying filling 4 cups chopped scallions, or garlic-chives (gandana) 1/2 cup chopped fresh parsley 2 tablespoons vegetable oil 2 teaspoons salt 1 teaspoon freshly ground pepper 1 bird or serrano chili, finely chopped yogurt sauce 1 small cucumber, seeded and grated 1 clove garlic, crushed, peeled and chopped 1 cup fresh mint 1 teaspoon mint flakes 1 teaspoon salt 1/2 teaspoon freshly ground pepper 2 cups plain yogurt, beaten Note When using egg roll skins, frying the boulani gives the best results Boulani is a baked or fried, stuffed bread. It is made by filling a square piece of dough with a garlic-chive mixture and folding it diagonally into a triangle. Traditionally it is filled with gandana (similar to garlic-chives) and served with a yogurt sauce. Gandana is available at Middle Eastern markets; scallions, however, make a good substitute. 1. Combine all the ingredients for the filling using a rubber spatula (do not use a food processor as it makes it too liquidy) and set aside.
