This year was no exception since Parvine had taken over my kitchen as I was still convalescing from some unscheduled surgery. Cooking is even more fun for Parvine when there are extra people to enjoy the food. This particular dinner was served to 4th and 6th generation Texans who usually think of party food as barbecue, grilled Texas quail, or catfish. Never have I seen food disappear so fast! Although it was perfect for my diabetic meal plan, I was glad she'd made huge amounts of food as our Texas friends and my husband, all of whom do not have diabetes, were back for seconds. For an appetizer, Parvine arranged a tray of small wedges of pita bread, feta cheese, broken walnut pieces, and fresh herbs such as sprigs of mint, basil, and parsley. Since a dinner party in her home and mine usually ends up with the guests gravitating into the large kitchen to chat while she (or I) are putting the finishing touches on the meal, she merely placed the large tray of appetizer ingredients and an assortment of beverages on a vacant kitchen eating bar for everyone to help themselves while they moved about the kitchen or sat on bar stools to chat while the cooking was finished. This is a familiar appetizer to my husband and me, and often is used by us for a quick lunch. You have to "guesstimate" your exchanges if you're on a diabetic meal plan, counting your carbs and exchanges as given with the recipe.

Ingredients:
(4 servings)
reshteh, 400 grams
(reshteh is similar to spaghetti in shape and should be obtained in Iran or from an Iranian store)
herbs (parsley, spinach, dill, coriander, and spring-onion ends, in equal amounts), 1 kg
chick-peas, 150 grams
black-eye beans, 150 grams
lentils, 150 grams
dried mint, 4 spoons (or 200 grams of fresh mint)
medium onions, 4
kashk, two glasses (kashk is thick whey and should be obtained in Iran or from an Iranian store) flour, 2 spoons cooking oil salt black pepper Directions: Soak chick-peas, black-eye beans, and lentils in warm water for about two hours. Peel and thinly slice onions. Fry in oil until slightly golden. Save half of the fried onions for later use. Add chick-peas, black-eye beans, lentils, salt, and pepper to onions. Add 2-3 glasses of hot water and cook over medium heat for about 30 minutes. If necessary, additional hot water should be added while cooking. Wash and finely chop the herbs. Add to the mix, and continue cooking over medium heat for about 15 minutes. Dissolve flour in a glass of cold water, add in, and mix well. Add reshteh and cook over low heat for 10-15

Baghdad (Iraq) Baghdad, the Great City, was founded in 762 and Jews have resided there from the beginning. The conquest of Baghdad, first by the Mongols in the 13th century, followed by Tamerlane, and then the Ottoman Empire’s struggle with the fanatical Persians, brought about a political seesaw of prosperity and denial for the Jews, always at the whim of the incumbent ruler. Starting with the British administration during World War I and for some years afterward, conditions improved for the Jews. During this mandate the Jewish population swelled to 100,000. Breezy Attitude Wholesome flavors and simple presentation make the fare at Yas a breath of fresh air By Joseph Izzo Jr. I T WAS JUST ABOUT THE TIME that our entrees arrived when the memories hit. We were dining at Yas, a Persian restaurant in San Jose. The aromas coming from the dishes laid at our table triggered memories of the early '70s for me, a time when ethnic food around the South Bay still meant spaghetti and meatballs. Original Joe's was the Taj Mahal. The only Persian restaurant in the area back then was an eatery over by San Jose State called Manssur's. My partners and I were just cutting our teeth on restaurant reviewing and hence found the place so exotic that one step through the beaded entrance brought visions of flying carpets and dragons with ruby scales. But that was a long time ago. Since then, Persian restaurants have proliferated around the South Bay. Many doors are opened now. Some are good, some not so good, some built around the fast-food concept, others with not a clue about why they're in business. Among the best I've sampled so far is Yasshort for jasmine, which means garden.

SOFREH 's cooking classes demonstrate and teach you recipe preparation and making of home-style classic Persian dishes. These classes are taught in English. Each class is approximately 21/2 to 3 hours, during which time a pre-set menu will be prepared. Upon completion of the items on the menu, you will have the opportunity to taste the dishes prepared during class. Most classes are elementary in level and are designed to introduce you to Persian cooking.
For enrollment, please contact us at classes@sofreh.com , or call us at (408) 245-6157. Applicable tuition must be paid at least 72 hours prior to commencement of class. You may cancel up to 72 hours prior to class and transfer your credit to another class. Classes may be cancelled by SOFREH with a 24 hour prior notice if there is insufficient enrollement.
Your suggestions are greatly appreciated, and we encourage you to send us e-mail at suggestions@sofreh.com , stating the Persian dishes you would like to see included on the class menus.
