January 2000 Brrrrrr! Is it cold enough for you? Before you start complaining about the weather, just remember how hot it was in the summer (and fall, for that matter). I hope you all enjoyed your holidays and celebrated the New Year in style. Having struggled through most of December with various strains of colds and flu's, I was not too thrilled with the idea of standing in my ice-cold kitchen cooking elaborate meals while watching my breath freeze and losing all sensation in my fingers and toes! With the temperatures reaching the zero mark, my mission is to get in and out of the kitchen as quickly as possible without surrendering to the conveniences of instant ramen, pizza delivery, or Lawson's oden (OK, I admit it, I lost the battle!!) Ahem.... Anyhow... this month's column is dedicated to PASTA - my favourite of all foods. Here are a few quick pasta dishes to help you get out of your kitchen as soon as possible and back to the warmth of your kotatsu . By the way, don't forget to warm up the plates or your pasta will be cold before you get it to the table! Salute!

The web site reviewed in this article has changed location and name. SOAR is now known as Recipe Source and can be found at http://www.recipesource.com If you're looking for that perfect recipe for strawberry-rhubarb pie or a little-known casserole that's served at your favorite diner, you often need to look no further than SOAR. SOAR stands for "The Searchable Online Archive of Recipes" and is hosted and maintained on a University of California - Berkeley server. The inspiration (and a lot of the work) behind SOAR was supplied by one of UC - Berkeley's students, Jennifer Snider Coopersmith. Many thanks to Jennifer, as what started out as an experiment in bringing recipes on the web to one central location has turned into an archive of almost 70,000 recipes as of March 2000. What makes SOAR such a valuable resource is the plethora of ways that the recipes are organized for visitors. In addition to the search forms which vary from simple keyword searches to more advanced forms that allow a visitor to specify things like case sensitivity and the maximum number of returned recipes recipes are also organized into a large number of different categories. Each category has sub-categories to help direct visitors to the recipes they desire. Once a sub-category has been chosen, the recipes are then split into alphabetized sections containing about 50 recipes each. This is to reduce the download times and improve access. Of course, each visitor also has the option to get a full list of the recipes in a given category. Once a visitor has found a recipe that he or she would like to see, one click on the title reveals the entire recipe. It's that simple.

INGREDIENTS:
  • 8 ounces rotini pasta 1 pound lean ground beef 1 small onion, diced 1 (28 ounce) jar spaghetti sauce 4 ounces sliced pepperoni sausage 2 cups shredded mozzarella cheese
DIRECTIONS:
  • Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. In a medium skillet over medium-high heat, cook beef with onion until beef is brown. Drain. Combine beef mixture with spaghetti sauce, pepperoni and cooked pasta and pour into a 9x13 inch baking dish. Top with mozzarella. Bake in preheated oven for 30 minutes, until cheese is melted and golden.

    INGREDIENTS
    1 lb. fresh asparagus
    3 tbsp. chopped fresh basil
    1/4 cup chopped walnuts (or pecans)
    1/3 cup freshly grated Parmesan cheese ( and we mean VERY fresh; it makes a difference. SEE CHEESE NOTE BELOW)
    1 clove raw minced garlic
    1/4 tsp. salt
    3 tbsp. good quality virgin olive oil
    1 lb. your favorite pasta ( spaghetti or linguini works best)
    DIRECTIONS 1. Wash the asparagus and chop into 1/2 inch pieces. Steam them until bright green in color; set aside. 2. Make the pesto; put 2 tbsps. of the olive oil, with the basil, the nuts, the garlic, salt and the cheese into a blender and chop roughly. 3. Cook the pasta and drain it well; then add the remaining 1 tbsp.oil to the hot pasta. 4. Stir the asparagus and the pesto thoroughly into the pasta and serve immediately. Add more cheese or oil at the table to taste.

    You have to let your own taste buds be your guide here. When you toss this together, add the smaller amounts of vinegar and oil, a little salt and pepper and a dash of Tabasco if you like. Taste and go from there. Ingredients (makes about 8 cups) 6 medium to large California tomatoes, cut into large chunks 1 small garlic clove, minced 1 Tbsp. minced shallot 1/2 medium onion, chopped 3 Tbsp. coarsely chopped fresh basil 3 to 4 Tbsp. balsamic vinegar 6 to 8 Tbsp. olive oil Salt and black pepper to taste Tabasco sauce to taste (optional) Drain off and discard any liquid from the California tomatoes. Mix the California tomatoes with all the remaining ingredients. Let the mixture stand at room temperature for about 20 minutes. Toss with hot pasta and top with grated Romano or Parmesan cheese.

    Cookin' with Pasta Chicken Beef Pork Fish ... Other Pizza Casserole
    Submitted by: Ryan Becenko, Niverville, Manitoba, Canada Serves: 8 Ingredients:
    • 3 cups raw macaroni
    • 1 tsp. salt
    • 1 lb. ground beef
    • 1/2 tsp. pepper
    • 1 medium onion
    • 1 can pizza sauce
    • 1 large can tomato sauce
    • 1 large pepperoni
    • 1 green pepper
    • 1 lb. mozzarella cheese (grated)
    Preparations: Brown onion and ground beef. Cook macaroni. Combine macaroni and ground beef. Add remaining ingredients and mix. Put into 9X13 pan and cover with foil. Bake at 350 for 1 hour. Let stand 10 minutes before serving. Comments: Freezes well. Thaw and then cook as above.
